Foil Pack Potatoes on the Grill or Oven image

Foil pack potatoes cook on the grill or roast in the oven with a buttery herb and garlic dressing. So delicious, everyone will want the recipe!

Number Of Ingredients 8

1.5 lbs. Baby potatoes (chopped into bite size pieces)
1/2 Tbsp. Olive oil
1 Tbsp. Dried rosemary
3 Sprigs fresh thyme or 3 teaspoons of dried
7 Whole garlic cloves or 2 tablespoons of powdered garlic ((no need to peel))
Pinch Sea salt and pepper
2 Tbsp. Butter
4 tsp. Fresh parsley (optional)

Steps:

  • Preheat the grill to medium, or oven to 400°F. Cut 1.5 lbs. baby potatoes into bite sized pieces, then place in a bowl and mix with 1/2 Tbsp. olive oil, 1 Tbsp. dried rosemary, a pinch of sea salt and pepper, and 7 whole garlic cloves or powdered garlic.
  • Transfer the potatoes to a piece of foil, around 28 inches in length. Bunch the potatoes in the middle of the foil. Place 3 sprigs of thyme or dried thyme and 1 Tbsp. cubed butter on top of the potatoes.Bring the edges of the foil together and wrap, tightly sealing all the way around. If the foil isn't long enough to wrap properly, then double wrap with second piece of foil in the opposite direction.
  • Place the foil directly onto the grill or, if roasting, place on a tray before putting in the oven.Grill or roast for 40 minutes, then remove from the grill or oven and open up the foil. Remove the thyme and add in the rest of the butter and season again, then return to the grill or oven with the foil open and cook for a further 15 minutes or until golden brown.Top with parsley (optional) , and enjoy!

4 russet potatoes
2 tablespoons oil (olive, canola or melted butter)
2 teaspoons sea salt (thick flakes preferred)
2 teaspoons pepper

Steps:

  • Preheat grill to 450°F or medium low.
  • Rinse and scrub potatoes. Pat dry.
  • Cut 4 sheets of aluminum foil. Place each potato on a piece of foil and brush with oil and top with sea salt (optional). Wrap and repeat.
  • Using tongs, place potatoes on the shelf of the grill or away from direct heat evenly spaced so they are not touching. Close the lid and grill 30 minutes. Rotate with tongs and grill an additional 30 minutes.
  • Using tongs, remove aluminum foil and place potatoes over direct heat for 1 minute per side. Rotate and repeat. Use a thermometer to ensure they are done. Internal temperature should reach around 210°F. Remove from heat.

aluminum foil
1 ½ tablespoons butter
6 medium unpeeled potatoes, washed and cut into thick slices
1 onion, sliced
1 green bell pepper, cut into long strips
2 teaspoons garlic powder
salt and ground black pepper to taste

Steps:

  • Preheat an outdoor grill for high heat; close cover. Lay out three 18-inch long pieces of aluminum foil on a work surface, dull side facing up.
  • Smear 1/2 tablespoon butter in the middle of the first piece of foil. Add 1/3 of the potato slices, onion, and bell pepper. Sprinkle with 1/3 of the garlic powder; season with salt and pepper. Fold up the edges of the foil over the vegetables to create an almost leak-proof packet, making sure to seal the edges. Repeat with last 2 pieces of foil and the remaining ingredients to make 2 more packets.
  • Reduce the heat of the grill to medium. Place foil packets on the grate; cook until potatoes are tender, 20 to 30 minutes.

1 large potato, any type
1/4 large Spanish onion
2 -3 tablespoons butter or 2 -3 tablespoons margarine
2 -3 tablespoons olive oil
salt & fresh ground pepper
aluminum foil, large piece of

Steps:

  • Scrub potato and make 4 slits almost through to bottom.
  • Slice onion into 4 slices to fit into slits in potato.
  • Dot with butter or margarine.
  • Sprinkle with salt and pepper to taste.
  • Drizzle olive oil over all.
  • Wrap tightly in foil, as if to freeze.
  • Place package on rack in BBq and close the lid.
  • (Can also be done in the oven- 400f degrees for 1 hour or until potatoes are soft).
  • In a hot BBq they should be done within an hour, depends on what else you are BBqing.
  • Open packages, adjust seasoning, serve in opened foil.
  • Repeat process for as many potatoes as needed
