3 ½ cups White Lily® All Purpose Wheat Flour, or more as needed
¼ cup sugar
1 ¼ teaspoons salt
1 (.25 ounce) package active dry yeast
Crisco® Original No-Stick Cooking Spray

Steps:

  • Place water, butter, egg, 3 cups flour blend, sugar, salt and yeast in bread machine pan in order recommended by the manufacturer. Select Dough/Manual cycle. During initial mixing cycle, open lid and scrape down sides of bread pan as necessary. As dough mixes, add just enough additional flour blend to create a soft dough. When Dough/Manual cycle is complete, remove dough from bread machine pan. Place on lightly floured surface.
  • Coat 13 x 9-inch baking pan with cooking spray. Pat dough into rectangle. Cut with pizza cutter or serrated knife into 15 equal pieces. Shape each into a ball. Place evenly in prepared pan. Cover and let rise in warm place until doubled, about 35 to 45 minutes.
  • Heat oven to 375 degrees F. Uncover rolls. Bake 15 minutes or until golden brown. Serve warm or cool completely on wire rack.

2 packages yeast (Do not use the quick rising in this recipe)
1/2 cup butter, melted
1/2 cup sugar
3 eggs

  • Combine water and yeast in lg bowl; let stand for 5 minutes.
  • With wooden spoon, stir in butter, sugar, eggs and salt.

1 (1/4 ounce) package active dry yeast
1/2 cup warm water
1 cup milk, scalded
1/4 cup butter
1/2 teaspoon salt
1 (2 5/8 ounce) package custard mix
3 -3 1/2 cups pillsbury flour
2 tablespoons butter

Steps:

  • Soften yeast in warm water.
  • In large mixing bowl, combine the scalded milk, 1/4 cup butter and salt; stir until butter melts.
  • Add custard mix; stir until dissolved.
  • Cool to lukewarm!
  • Add yeast.
  • Gradually add flour to form a stiff dough.
  • Cover, let rise in warmplace until light and doubled in size, 1-1 ½ hours.
  • Turn out on lightly floured surface; knead about 12-14 times.
  • Roll out to 20x8" rectangle.
  • Cut in half lengthwise, making 20X4" strips.
  • Melt 2 tablespoons butter and brush on half of each strip.
  • Using a knife handle,crease each strip lengthwise, slightly off center.

  • Cook's Note: I almost forgot to tell you-I used White Lily flour in this, which is a soft wheat flour. I like it for the delicate texture it adds. You may wonder why I mention it, but not all flours are created equal. Even among brands, there are differences, and it stems from the type of flour they use, which makes the protein count vary. Really high protein flours (often called bread flours) absorb a lot of water, and lower protein flours (cake flour is probably the lowest) absorb less. Each brand will use a different blend, and the one I used absorbs less on the whole, but is known, especially in the Southern US, for its excellence especially for making tender flaky biscuits. So this is why it may sometimes seem the water you add doesn't work right, on occasion. So in making dinner rolls, just as in bread, you start with an amount of water in the bowl, and you want to add flour, about a half cup at a time, until it comes together and forms the dough ball, coming away from the sides of the bowl. It shouldn't be as runny as cake batter or add more flour. It shouldn't be dry and crumbly or cracked, or you have added too much flour and need to add a little water and work it in until you get the dough ball. This is why you should never just dump all the flour in at once. I know most bread makers already know this, but there is always someone just finding out, and I got your back here.
  • In your stand mixer, place warm water to heat the bowl.
  • When the temperature of the water reaches 110F, drain off all but one cup.
  • Sprinkle yeast over the water and let it soften.
  • Add room temperature melted butter, sugar, room temperature eggs, and salt.
  • Add dough hook and run mixer on low, adding flour 1/2 cup at a time until dough comes together, adjusting flour amount if necessary, then run mixer until dough is fairly smooth.
  • Turn dough out into an oiled bowl, cover with plastic wrap, and refrigerate for 2 hours.
  • Turn dough out onto a lightly floured surface. Divide dough in half, then each half into 4 pieces, then each piece into thirds. Roll each piece into a log and cut into three more pieces, and roll in between lightly oiled hands into smooth balls.
  • Place dough balls on waxed paper on a baking sheet and freeze until firm, about an hour or so. Place balls in a freezer bag, and keep frozen until needed.
  • To prepare, grease a muffin tin and place three balls into each cup. Cover loosely with plastic wrap and let sit in a warm, draft-free place for several hours or until doubled in size.
  • Bake at 375F for 12-15 minutes, or until golden brown.

These rolls were made using my bread machine, using the dough cycle and then forming the rolls. Very soft tender roll. I'm posting this recipe by request. Very easy, especially when the machine does all the hard work.

1 egg, room temperature
3/4 c (plus 1 tablespoon) water, 80 degrees f/27 degrees c
3 Tbsp oil
3 Tbsp sugar
1 1/2 tsp salt (i used natural sea salt)
3 1/4 c bread flour (may need to add add'l flour if to sticky)
2 tsp active dry yeast
melted butter, optional and not part of original recipe

Steps:

  • 1. This recipe is for 1.5 lbs and will make 18 rolls. Be sure to set your machine up for 1.5 lbs and set on the dough cycle. I have a Breadman Bread Machine. Check instructions on your machine as different machines may vary.
  • 2. Add ingredients to your bread machine in order listed. Start machine and let it complete the cycle.
  • 3. Once cycle is complete; place dough on a lightly floured service and divide into 18 pieces; shape. NOTE: you may want to put some oil in your hands to keep dough from sticking to hands.
  • 4. Place on a greased baking sheet; cover with plastic and let rise for 30 minutes in a warm place. I spread a little melted butter to tops of rolls. This was not part of the recipe but I like the butter. NOTE: I turn light on in oven and place rolls there to rise. I take out of oven a few minutes before ready to bake so the I can heat oven.
  • 5. Heat oven to 350 degrees; bake 15 to 25 minutes or until golden brown. Spred more butter if desired. NOTE: It took about 23 minutes in my oven.

  • Thaw frozen dinner rolls at room temperature until soft enough to cut, yet still cold.
  • Grease a 12-count muffin pan with softened butter or generously spray with nonstick cooking spray. Scatter flour on a plate. Cut each thawed roll in half. Roll each half into a ball and lightly toss in flour, knocking off any excess. Place three dough balls in each greased muffin cup. 2/3 cup canola oil
1 tablespoon salt
2 cups warm water
5 teaspoons dry yeast, disolved in 1/4 cup water (or 2 envelopes yeast disolved in 1/4 cup warm water)
1/4 cup sugar
1/2 cup wheat germ
2 eggs
6 cups flour

Steps:

  • In a large bowl mix together first 7 ingredients (oil - eggs).
  • Stir in flour one cup at a time until a soft dough is reached.
  • Cover dough with plastic wrap and place in refrigerator two hours before using (dough may be made ahead up to five days before using).
  • Form dough into 2-inch balls and place in a large greased cake pan one inch apart. Cover with plastic wrap and/or a damp cloth. Let rise until double (30 minutes - 1 hour).
  • Preheat oven to 375 degrees F.
  • Bake rolls for 20 minutes or until golden.

1 cup water (110 degrees F)
2 packages yeast (Do not use the quick rising in this recipe)
1/2 cup butter, melted
1/2 cup sugar
3 eggs
1 teaspoon salt
4 1/4 cups flour

Steps:

  • 1. Combine water and yeast in lg bowl; let stand for 5 minutes. 2. With wooden spoon, stir in butter, sugar, eggs and salt. 3. Add flour, 1 cup at a time and beat in as much as you can. 4. Cover and refrigerate for at least 2 hours, or up to 3 days. 5. Grease a 13x9 baking pan. 6. Turn dough out onto floured surface. 7. Divide into 24 equal pieces. 8. Roll each piece into a smooth round ball. 9. Place in rows in prepared pan. 10. Cover and let rise for 1 hour; until doubled. 11. Heat oven to 375*. 12. I tried for years to make dinner rolls as light airy and fluffy as the ones my sister N Law Sandra made, all to no avail, until I found this recipe. This is the recipe you want to try when all else has failed. It worked for me and I am sure it will work for you too. We just LOVED HOW LIGHT, AIRY, TASTY & FLUFFY THEY WERE. So now this is my favorite go to recipe when I want perfect dinner rolls. I don't know what I was doing in the past that DIDN'T WORK, but this is the one that works for me now, and it is a keeper. The neighbors love them too. I am confident you will too. So give them a try.

3 cup(s) warm water(110*-120*f)
1 cup(s) granulated sugar
2 package(s) rapid rise yeast
2/3 cup(s) canola oil or melted butter ( i always use butter)
1 tablespoon(s) salt
8 cup(s) bread flour

Steps:

  • PREHEAT OVEN TO 375 DEGREES F. about 15 to 20 minutes before you are ready to bake them. Combine warm water, sugar, & yeast in a medium bowl. Stir until completely dissolved. Let sit about 10-15 minutes until it has puffed on top.NOTE: If water is too hot it will kill the yeast, if it is too cold it will not activate. This is what the yeast looks like after 15 minutes and it is activated.
  • Combine oil or butter & salt with 6 cups of bread flour, then add water and yeast mixture, in a large MIXING bowl. Beat with a regular paddle on medium for about 2 minutes, just until it is mixed together.
  • Switch from paddle to the DOUGH HOOK, THEN ADD AN ADDITIONAL 1 1/2 CUPS FLOUR.KNEAD DOUGH FOR AT LEAST 5 MINUTES.
  • NOW TURN DOUGH ONTO A FLOURED SURFACE with the remaining 1/2 cup flour, and you might need more, but hand knead for a few minutes to remove air bubbles.
  • Next add about 2 tablespoons oil to bottom of a large bowl, add the dough and then grease on all sides. Cover loosely with clear plastic wrap.NOTE: I spray wrap first with cooking spray to keep the dough from sticking when it rises to the top. Allow dough to rise until it is about double in size about 1 hour to 1 1/2 hours in a warm draft free area.
  • Punch down and shape into desired roll shapes.Roll out on a floured surface. Makes about 18 rolls in a 9X13 X2 inch pan or about 13 Rolls in a 9 inch pan. Roll and cut out with biscuit cutter, dip in melted butter, fold the buttered side outward and the floured side together inward & place in buttered or greased baking pan. I made 4- 9 inch size pans with 13 rolls in each pan. NOTE: I HAVE NOW DISCOVERED IT IS MUCH EASIER TO BRUSH THE DOUGH WITH MELTED BUTTER ONCE IT IS ROLLED OUT, THEN CUT WITH BISCUIT CUTTER, AND KEEP THE BUTTERED SIDE TO THE OUTSIDE AND THE FLOURED SIDE IN.
  • Cover loosely with plastic wrap(spray first for easy removal) and let rise till double in size about 45 minutes. Carefully remove wrap and bake uncovered 18 minutes until golden brown. Brush tops with melted butter immediately after removing from oven.
  • NOTE: MAY FREEZE IN ORIGINAL PAN. but cover with large freezer bag or use foil & wrap tight.To preheat later, remove from freezer, cover loosely with foil, place in preheated 350 degree F. Oven for about 15 to 20 minutes if frozen. If fully thawed, place in preheated oven covered with foil for 5 -6 minutes. Will also make about 3 loaves of bread or cinnamon rolls.
  • Please note I made a pan for one of the neighbors, and gave her the heating instructions, I pre cooked them all but a few minutes, just before they were completely browned and all she needed to do was leave them in the oven for about 5 to 8 minutes until they were browned.
  • Main ingredients needed to make the rolls, I prefer to use Bread Flour, and I like to USE A THERMOMETER to make sure I get an accurate read on the temperature of the water. PLEASE NOTE I ALWAYS PRINT OUT EACH RECIPE I PLAN TO MAKE FOR THE HOLIDAY AND THEN TAKE THEM TO THE UPS STORE AND HAVE THEM COILED BOUND TOGETHER, FOR EASIER ORGANIZATION.
