This tastes like SUMMER! Try to use the best produce you can find, it makes a huge difference in the taste.

Number Of Ingredients 9

1 box(es) jiffy cornbread mix
2 cup(s) kraft ranch dressing
1 - green pepper, chopped (or 1/2 red and 1/2 green is also good)
1 medium red onion, chopped (must be red)
1 can(s) whole kernel corn
1 can(s) red kidney or pinto beans
2 medium tomatoes, chopped
2 cup(s) cheddar cheese, shredded
1 pound(s) bacon, fried crisp

Steps:

  • Prepare cornbread, bake and set aside to cool. Once cool, crumble into dish.
  • Drain and mix together corn and beans. Put this over cornbread.
  • Chop and mix together onion, tomato and pepper. Put this over beans/corn.
  • Cover with the cheese.
  • Pour Ranch dressing over this. Crumble crisp bacon over this. Cover and refrigerate overnight. It won't taste right until it sits overnight!
  • You can also use Mexican cornbread and chili style beans for this recipe, if you want a spicier version. You can even throw in a bit of chopped Jalapeno!

3 boxes Jiffy cornbread mix
1 large red onion, diced
2 fresh tomatoes, diced
1 large green pepper, diced
1-1/2 cups real mayonnaise

Steps:

  • Bake Jiffy mix in large baking pan as directed on box, cool, and crumble in a bowl.
  • Add diced onion, diced tomato, and diced green pepper. Add mayo and mix.
  • Chill overnight and serve as side dish or with ham and beans. Really good!

0.5 units red bell pepper
1 units salt and pepper
3 cups mayonnaise

Steps:

  • Crumble cornbread into large bowl. Add all ingredients and toss with mayonnaise.
  • Refrigerate for one hour and serve.
