- Combine collard greens, bacon, salt, garlic powder, onion powder, sugar, and cayenne pepper in a stock pot. Pour enough water over the greens mixture to cover completely. Bring the water to a boil, reduce heat to low, and cook at a simmer until the greens are tender, about 2 hours.

EASY VEGETARIAN COLLARD GREENS
This is a wonderful way to make delicious, tender, vegan collard greens. The smoked sweet paprika in these greens imparts a wonderful smoky flavor without the traditional but decidedly non-kosher and non-vegetarian smoked ham hock. Make sure the paprika you buy is smoked, as the regular kind won't give you that smoky flavor. Whatever you do, don't discard the pot liquor! It is full of the nutrients and flavor that have leached out of the greens during cooking, and makes a very full-bodied and rich broth you can use as a replacement for water when making rice (my favorite), as the base for soups or stews, or in any other savory dish that requires broth or water.

Steps:
- Wash greens well, submerging in a sink full of cold water to remove any dirt and grit. Drain well. Cut off the stems right where the leaf starts. Stack about 5-8 leaves on top of eachother, then roll lengthwise. Cut rolled up leaves into 1" slices widthwise. Repeat until all the greens are done, and add to a large pot.
- Add all other ingredients. Cover and bring to a boil over high heat, then reduce heat to a simmer. Simmer for 45 minutes or until greens are extremely tender. Serve hot, using a slotted spoon to drain the liquid from the greens.

- Cook bacon in a large pot set over medium-high heat. Once fat renders but before bacon becomes crispy, add onions and cook, stirring occasionally, until translucent, about 3 minutes. Add garlic and ham to pot and continue cooking, 1 minute.
- Add chicken broth to pot and bring to a boil, scraping brown bits from the bottom of the pot. Add collard greens and salt to pot and cook uncovered, stirring occasionally, until greens are tender and most of the liquid has evaporated from the pot, 25-30 minutes.

- Heat sesame oil in a large skillet or wok until sizzling; add collard greens, gomasio, and mirin. Cook until collard greens are tender, 3 to 5 minutes.
- Stir garlic into collard green mixture and cook just until garlic is fragrant, about 30 seconds; remove from heat. Season with additional sea salt if desired.

- 1. Place bacon in a frying pan after its done cooking, remove bacon from pan but leave bacon grease in the pan.
- 2. Add onions to the pan that has the beacon grease in it. Cook till they are almost done
- 3. add tomatoes to pan and continue cooking
- 4. add back in the bacon
- 5. add 3 cans of drained collard greens
- 6. Continue simmering for 10 minutes

- Stack half of collard leaves and roll into a cigar shape. Cut crosswise into very thin strips (1/16 inch wide). Repeat with remainder.
- Mince and mash garlic to a paste with salt.
- Heat oil in a 12-inch heavy skillet over medium heat until it shimmers, then cook garlic, stirring, 30 seconds. Add collards with 1/4 teaspoon pepper and cook, tossing, until just tender and bright green, 3 to 4 minutes.

- 1. Rinse and soak collard greens by filling your sink with cold water for at least 15 minutes. Drain sink and refill sink with water and greens for another 15 minutes
- 2. Drain the final rinse water and begin tearing the leaves away from the stalks. Discard all stalks.
- 3. Combine all the other remaining ingredients in the multi-cooker container.
- 4. Then, gather greens and layer them. Roll them into cigar-shaped bundles. Begin to slice the greens into one - two inch wide sections. You'll need the multi-cooker container near to place the cut greens inside.
- 5. Insert container into the cooker. Choose the lentil/beans selection. Select medium mode and then adjust time to 17 minutes.
- 6. When time has elapsed, turn power off. Release steam immediately or let cool naturally for 20 minutes. Serves four.

- Cut the bacon into one inch pieces and fry in a large stock pot on medium high until cooked.
- Add the chicken broth and bring to a boil.
- Add the salt and collard greens then stir.
- Lower heat to medium low and cover collard greens. Cook for 1 hour covered.
- Add the red pepper flakes and let cook uncovered for an additional 5-10 minutes.
