This is a yummy recipe for rum balls, and it costs a lot less to make than original recipes. I had 4 people try the little balls, and they thought they were great!

3 cups honey-nut toasted oat cereal (such as Honey Nut Cheerios®)
1 cup confectioners' sugar, plus more for dusting
½ cup crushed cashews
½ cup crushed almonds
¼ cup shredded coconut
3 tablespoons unsweetened cocoa powder
⅓ cup dark rum, or more as needed
3 tablespoons light corn syrup

Steps:

  • Place oat cereal, confectioners' sugar, cashews, almonds, coconut, and cocoa powder in a food processor; blend to an even crumb texture.
  • Stir rum and corn syrup together in a bowl; add cereal mixture. Stir until dough holds together. Add more rum if dough is dry. Form into balls and place on a plate.
  • Chill rum balls in the refrigerator for flavors to blend, at least 1 hour. Sprinkle with confectioners' sugar before serving.

2/3 cup sugar, brown
2 cups coconut, flaked,
1/2 cup peanuts, coarsley chopped

Steps:

  • 1. Put the sugar in a pan and heat until it melts. You will need to work quickly, stir constantly until it becomes thick and dark brown in color.
  • 2. Now add the coconut and cook for 2 minutes. The sugar will turn light brown when ready. Add the peanuts and mix well.
  • 3. Remove the pot from the heat and let it cool slighty. When the sugar mixture is cool enough to handle, form into small balls and place on wax paper to set.

1 (350 g) box arrowroot cookies
1 (200 g) package chocolate wafer cookies
1 cup sweetened coconut (shredded)
1 (300 ml) can sweetened condensed milk
1/2 cup rum (spiced or white)
1/2 cup sugar
chocolate sprinkles
cocoa powder
icing sugar (Powdered)
berry sugar

Steps:

  • Crush cookies into a bowl.
  • Add coconut an sugar, mix well.
  • Stir in rum.
  • Mix in condensed milk until dough is sticky.
  • Roll into 1 inch balls, then coat with desired garnish (my favorite is chocolate sprinkles) place on a cookie sheet.
  • Chill in refrigerator for 2 hours before transferring into air tight storage containers.
  • These treats can be eaten right away but taste better as time passes.

This is a very easy recipe, and is quite tasty, too! Only 3 ingredients! *The prep time does not include the freezer time - 20 - 25 minutes.

1 can(s) sweetened condensed milk (14 oz.)
1 Tbsp cocoa, unsweetened
1/2 c shredded coconut

Steps:

  • 1. Heat milk on medium-high heat with the cocoa powder stirred in. Cook, stirring, until the mixture comes away from the bottom of the pan, about 5 minutes. Whisk until smooth.
  • 2. Pour mixture into a small baking dish. Place in freezer until firm, about 20 minutes. Remove from freezer. Scoop out by spoonfuls; roll each spoonful into a little ball. Roll the balls in the coconut to coat well.
