This is a super quick batter bread that is wonderfully moist and yummy!

⅓ cup white sugar
2 teaspoons ground cinnamon
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
1 cup white sugar
1 egg, beaten
1 cup milk
⅓ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan. In a small bowl, mix together 1/3 cup sugar and 2 teaspoons cinnamon; set aside.
  • In large bowl combine flour, baking powder, salt and remaining 1 cup sugar. Combine egg, milk, and oil; add to flour mixture. Stir until just moistened.
  • Pour half of the batter into pan. Sprinkle with half the reserved cinnamon/sugar mixture. Repeat with remaining batter and cinnamon/sugar mixture. Draw a knife through batter to marble.
  • Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into center of the loaf comes out clean. Let cool in pan for 10 minutes before removing to a wire rack to cool completely. Wrap in foil and let sit overnight before slicing.

1 1/2 cups sugar, divided
1 tablespoon cinnamon
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 egg
1/4 cup vegetable oil
1/4 cup powdered sugar
1 1/2-2 teaspoons milk

Steps:

  • Combine 1/2 cup sugar and cinnamon; set aside.
  • Combine flour, baking soda, salt, and remaining sugar.
  • Combine buttermilk, egg and oil in separate bowl; stir into dry ingredients just until combined.
  • Grease a 9x5 inch loaf pan. Pour half of the batter into pan; sprinkle with half of the cinnamon sugar mixture.
  • Carefully spread with remaining batter and sprinkle with remaining cinnamon sugar; swirl knife through batter.
  • Bake at 350 for 40-50 minutes or until a toothpick inserted near the ceter comes out clean.
  • Cool in pan 10 minutes before removing to wire rack to cool completely.
  • Combine glaze ingredients and drizzle over bread.

1/4 cup butter, softened
1-1/3 cups sugar, divided
1 large egg, room temperature
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 tablespoon ground cinnamon

Steps:

  • In a large bowl, beat the butter, 1 cup sugar and egg until blended. Combine the flour, baking powder, baking soda and salt; add to egg mixture alternately with buttermilk. In a small bowl, combine the cinnamon and remaining sugar., Pour a third of the batter into a greased 8x4-in. loaf pan; sprinkle with a third of the cinnamon sugar. Repeat layers twice. Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

This recipe is from a Company's Coming cookbook it goes back a long time and is one of my son's all time favorite cakes, and it is sooooo easy to make just mix and bake! These can also be baked in mini loaf pans, but adjust the baking time, they also freeze very well. I most always double the topping mixture!

1 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 cup buttermilk
1/4 cup vegetable oil

2 teaspoons vanilla
1/2 cup sugar
4 teaspoons cinnamon
2 tablespoons butter, softened

Steps:

  • Set oven to 350 degrees F.
  • Grease a 9 x 5-inch loaf pan.
  • In a small bowl mix together all topping ingredients (you can double the amounts if desired for more cinnamon swirl).
  • In a large bowl combine all the cake ingredients and mix until well combined.

3 teaspoons ground cinnamon
GLAZE:
1/4 cup confectioners' sugar
1-1/2 to 2 teaspoons whole milk

  • Preheat oven to 350°. In a large bowl, combine flour, 1 cup sugar, baking soda and salt. Combine buttermilk, egg and oil; stir into dry ingredients just until moistened.
