1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
6 tablespoons granulated sugar
1/2 teaspoon salt
1/3 cup solid shortening
1/2 cup whole milk
1 large egg
1/2 teaspoon pure vanilla extract
2 tablespoons butter, melted
1/2 cup dark brown sugar
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 425 degrees F.
  • Grease and flour a 9 inch square pan.
  • In a large bowl mix together the flour, baking powder, sugar and salt.
  • Cut in the shortening with a pastry blender to the size of small peas.
  • In a separate small bowl, beat the egg well; then stir in the milk and vanilla.
  • Add the egg-milk mixture to the flour mixture all at once.
  • Stir carefully until just blended.
  • Pour batter into prepared pan and spread evenly.
  • Drizzle top with melted butter.
  • In a small bowl mix together brown sugar, 2 tablespoons flour and 1/2 teaspoon cinnamon.
  • Sprinkle on top of cake.
  • Pour batter into prepared pan.
  • Bake t 425 degrees F for 15 to 20 minutes, or until a toothpick inserted into the center of the cake comes out clean.

CAKE MIX INSTRUCTIONS
1 box yellow cake mix, I use Betty Crocker with a pudding mix
3 eggs
1 c water
1/3 c butter
TOPPING
3/4 c brown sugar
1 tsp cinnamon
1/2 c pecans
1/4 c flaxseed or another nut, as desired
THE DRIZZLE
1 c powdered sugar
dash(es) maple extract
milk or whipping cream, as needed

Steps:

  • 1. Spray bottom of 9 x 13 pan.
  • 2. Combine the cake ingredients as directed on the box.
  • 3. Combine topping ingredients.
  • 4. Pour batter into the baking dish. Sprinkle 1/2 of topping and swirl in cake.
  • 5. Sprinkle the remaining topping on top of the cake.
  • 6. Bake at 350 until a toothpick comes out clean about 30-35 min or according to cake instructions. Let cool.
  • 7. Mix together the powdered sugar, maple extract, and milk until a glaze forms.
  • 8. Drizzle the glaze over the cooled cake.

This breakfast or coffee cake is super easy to make and taste moist and lighter than most cinnamon coffee cakes I've tried. This is my husbands favorite and my family loves it , we hope you do too. It keeps nicely but mine never stick around long enough for me to know how long it will keep.

2 c all purpose flour
11/4 c sugar
2 Tbsp baking powder
1 pinch salt
11/4 c milk
1 large egg
1 tsp vanilla extract
1/2 tsp maple flavor
1/2 c brown sugar
1/4 c butter, cut into small chunks
3 tsp ground cinnamon
chopped pecans or walnuts optional.

Steps:

  • 1. Preheat oven to 350 and grease a 9x13 pan.
  • 2. in large bowl combine flour, sugar, baking powder, salt set aside
  • 3. in small bowl beat egg and stir in milk, vanilla and maple flavor.
  • 4. combine flour and egg mixture till just combined. don't over beat. pour into greased 9x13 pan
  • 5. sprinkle top with cinnamon, brown sugar, pecans and butter, or stir them together and drop by spoofulls on the top evenly
  • 6. bake at 350 degrees for 30 minutes. Serve warm.
