2 large eggs
1/3 cup canola oil
1/4 cup sugar
1/4 cup honey
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup fat-free plain Greek yogurt
TOPPING:
1/3 cup packed brown sugar
1/4 cup sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350°. Coat a 13x9-in. baking pan with cooking spray., In a large bowl, beat eggs, oil, sugar, honey and vanilla until well blended. In another bowl, whisk flours, baking powder, baking soda and salt; add to egg mixture alternately with yogurt, beating well after each addition., Transfer batter to prepared pan. In a small bowl, mix sugars, cinnamon and vanilla until blended. Stir in pecans; sprinkle over batter. Bake 25-30 minutes or until a toothpick inserted in center comes out clean. Cool in pan on a wire rack.

¼ cup cinnamon sugar
1 cup firmly packed light brown sugar
¾ cup chopped walnuts
¼ cup butter, softened
¼ cup all-purpose flour
2 ½ teaspoons ground cinnamon
3 cups all-purpose flour
3 ½ teaspoons baking powder
1 teaspoon salt
2 large eggs
1 ½ cups white sugar
⅔ cup butter, melted
1 cup milk
¼ cup sour cream
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking dish with cooking spray. Sprinkle cinnamon sugar into the bottom of prepared baking dish.
  • Combine brown sugar, walnuts, softened butter, flour, and cinnamon for streusel mixture in a bowl; mix with a fork until crumbly.
  • Mix flour, baking powder, and salt for batter together in a separate bowl. Beat eggs in a third bowl using an electric mixer until frothy; add white sugar and melted butter and beat until creamy. Add milk, sour cream, and vanilla extract and beat until smooth. Stir flour mixture into milk-butter mixture until batter is well blended.
  • Spread 1/2 of the batter into the prepared baking dish; top with 1/2 of the streusel mix. Spread remaining batter over streusel layer and top with remaining streusel.
  • Place dish on the center rack in the preheated oven; bake until a fork inserted in the center comes out clean, 15 to 20 minutes.

1 (18.25 ounce) package yellow cake mix
1 (3.4 ounce) package instant vanilla pudding mix
1 (3.4 ounce) package instant butterscotch pudding mix
4 eggs
1 cup water
1 cup vegetable oil
1 cup packed brown sugar
1 tablespoon ground cinnamon
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan, or a 10 inch Bundt cake pan.
  • In a medium bowl, stir together the cake mix, vanilla pudding mix, and butterscotch pudding mix. Add the eggs, oil and water, mix until well blended. In another bowl, stir together the brown sugar, cinnamon and nuts. Pour half of the batter into the pan, spread evenly. Sprinkle with half of the nut mixture. Cover with the rest of the batter, and sprinkle with the rest of the nut mixture.
  • Bake for 20 minutes in the preheated oven, then turn the oven down to 325 degrees F (165 degrees C) and bake for an additional 35 to 40 minutes.

CAKE MIX INSTRUCTIONS
1 box yellow cake mix, I use Betty Crocker with a pudding mix
3 eggs
1 c water
1/3 c butter
TOPPING
3/4 c brown sugar
1 tsp cinnamon
1/2 c pecans
1/4 c flaxseed or another nut, as desired
THE DRIZZLE
1 c powdered sugar
dash(es) maple extract
milk or whipping cream, as needed

Steps:

  • 1. Spray bottom of 9 x 13 pan.
  • 2. Combine the cake ingredients as directed on the box.
  • 3. Combine topping ingredients.
  • 4. Pour batter into the baking dish. Sprinkle 1/2 of topping and swirl in cake.
  • 5. Sprinkle the remaining topping on top of the cake.
  • 6. Bake at 350 until a toothpick comes out clean about 30-35 min or according to cake instructions. Let cool.
  • 7. Mix together the powdered sugar, maple extract, and milk until a glaze forms.
  • 8. Drizzle the glaze over the cooled cake.

1 cup butter, softened
2-3/4 cups sugar, divided
4 large eggs, room temperature
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda

2 cups sour cream
2 tablespoons ground cinnamon

Steps:

  • In a large bowl, cream butter and 2 cups sugar until light fluffy. Add 1 egg at a time, beating well after each addition. Beat in vanilla.
