Chocolate-Cherry-Coconut Granola Bars image

Chewy and delicious no-bake, homemade granola bars. Perfect for breakfast or a power snack. Will keep for 1 to 2 weeks at room temperature, longer if refrigerated.

2 ¼ cups old-fashioned rolled oats
1 cup puffed rice cereal
1 cup unsweetened coconut flakes
1 cup slivered almonds
1 cup dried tart cherries
⅔ cup honey
½ cup creamy peanut butter
3 tablespoons brown sugar
3 tablespoons coconut oil
1 teaspoon vanilla extract
1 teaspoon salt
½ cup mini semisweet chocolate chips

Steps:

  • Line a 9x13-inch baking pan with a piece of parchment paper that is large enough to go up all sides of the pan.
  • Combine oats, rice cereal, coconut, almonds, and cherries in a large mixing bowl and set aside.
  • Combine honey, peanut butter, brown sugar, coconut oil, vanilla extract, and salt in a small saucepan. Heat over medium heat until brown sugar is melted; continue to simmer for 1 minute more. Pour heated mixture into the dry ingredients and stir to fully combine. Stir in chocolate chips.
  • Pour granola into the prepared baking pan and press firmly with a nonstick spatula or lightly oiled hands to tightly compact and distribute evenly throughout.
  • Refrigerate for 2 hours.
  • Remove from the refrigerator and slice into 20 equal portions. Tightly wrap individually in plastic wrap or serve immediately.

1 cup sugar
2 large eggs
1/2 teaspoon vanilla extract
1/2 cup butter, melted
1/2 cup all-purpose flour
1/3 cup baking cocoa
1/4 teaspoon salt
1/4 teaspoon baking powder
CHERRY LAYER:
4 jars (10 ounces each) maraschino cherries
4 cups confectioners' sugar
1/4 cup butter, softened
COCONUT LAYER:
1 package (14 ounces) sweetened shredded coconut
1/4 cup sweetened condensed milk
CHOCOLATE GANACHE:
12 ounces semisweet chocolate, chopped
1 cup heavy whipping cream
1 cup chopped walnuts, toasted

Steps:

  • Preheat oven to 350°. In a large bowl, beat sugar, eggs and vanilla until blended. Beat in melted butter. In a small bowl, whisk flour, cocoa, salt and baking powder; gradually add to batter and mix well., Spread into a greased 9-in. springform pan. Bake 18-20 minutes or until a toothpick inserted in center comes out clean. Cool completely in pan on a wire rack., Drain cherries, reserving 1/2 cup juice. Arrange cherries evenly around top edge of brownie; place remaining cherries over top. In a large bowl, beat confectioners' sugar, butter and reserved cherry juice until creamy. Spread evenly over cherries., In a large bowl, combine coconut and milk. Sprinkle over cherry layer, carefully smoothing down near edges and pressing gently to form an even layer., Place chocolate in a large bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate. Let stand 5 minutes; whisk until smooth. Pour over coconut layer. Refrigerate until set. Loosen sides of pan with a knife. Remove rim from pan. Sprinkle with walnuts.

85g caster sugar
2 eggs , beaten
200g bar white chocolate , roughly chopped
85g glacé cherries , halved

Steps:

  • Heat oven to 180C/160C fan/gas 4. Line a 20 x 30cm baking tray with baking parchment. In a large bowl, mix the desiccated coconut, sugar, eggs, white chocolate and glacé cherries until combined. Cook for 20 mins until golden brown and set, then cool in the tin before slicing into bars.

CHOCOLATE COCONUT CHERRY LAYER CAKE

I recently wanted to make a one layer cake for just my husband and I. Since I had not been shopping since the holidays, I only had two eggs! I flipped through recipes and finally altered ingredients and created this cake. Oh My! It is delicious, moist and unresistable. I do not usually go for seconds in cakes but this one was hard to refuse. I used a 10" cake pan instead of two smaller pans to make it one layer. It was perfect. Hope you enjoy it!

1 ounce(s) (equals 2 square bars) semi-sweet chocolate
1 tablespoon(s) cocoa, unsweetened
1/2 cup(s) hot water
1/2 cup(s) butter, softened
1 1/2 cup(s) granulated sugar
2 - eggs, well beaten
3/4 cup(s) buttermilk
1 teaspoon(s) vanilla extract
1 1/2 cup(s) sifted flour
1 teaspoon(s) soda
pinch(es) salt
1 1/2 ounce(s) (1/2 package 3 oz.) dark cherry jello
1/2 cup(s) boiling water
FROSTING:
8 ounce(s) cream cheese, softened
1 1/2 cup(s) powdered sugar
1 teaspoon(s) vanilla extract
1 teaspoon(s) coconut extract
2 tablespoon(s) butter, softened
2 cup(s) shredded coconut*

Steps:

  • Melt chocolate in hot water. Set aside to cool. Cream butter and sugar, adding beaten eggs. Add chocolate mixture, buttermilk and vanilla to butter mixture. Sift flour, cocoa powder, salt and soda together; add to batter. Pour in greased and floured 10" cake pan. Bake at 350 degrees for 30 - 35 minutes or until tested with cake tester for doneness.
  • While cake is baking, mix together boiling water with the jello until dissolved. Store in refrigerator to cool down but remove before it starts to gel. You just want it to thickened a little. Poke large holes in top of cake using a cake tester or potato nail, etc. Pour jello in holes**. Then drizzle some of the mixture over top of cake. When cake is cool add frosting. I also added some shaved chocolate on top in the middle.
  • Frosting: Cream butter and cream cheese well. Add vanilla and coconut extract; add powdered sugar and mix well. If more sugar is needed for spreading consistency then add little at a time. Spread on cake. Add coconut by hand on top and sides of cake. Add shaved chocolate if desired.
  • *Tip: To make your coconut really taste "fresh" process it in blender for 10 to 20 seconds, stopping at intervals to distribute it. It is so good!
  • **Tip: I use a plastic capped "salon" bottle with a long tip dedicated for the use of drizzling on sauces, icings, etc. If you need the tip bigger (I have 2) cut the end to size you need. This works well drizzling into holes.

1 cup all-purpose flour
3 tablespoons confectioners' sugar
1/2 cup cold butter, cubed
FILLING:
2 large eggs, room temperature
1 cup sugar
1 teaspoon vanilla extract
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped walnuts
1/2 cup quartered maraschino cherries
1/2 cup sweetened shredded coconut

Steps:

  • In a small bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press into a lightly greased 13x9-in. baking pan. Bake at 350° for 10-12 minutes or until lightly browned. Cool on wire rack. , For filling, in a small bowl, combine the eggs, sugar and vanilla. Combine flour, baking powder and salt; add to the egg mixture and mix well. Stir in walnuts, cherries and coconut. Spread over crust. Bake for 20-25 minutes or until firm. Cool on a wire rack. Cut into bars.

This is a Christmas tradition at my house. These are great no bake sweets, however they are quite sweet.

1 1/2 cups icing sugar
1 1/2 cups sweetened coconut
1 teaspoon vanilla
1 teaspoon evaporated milk
2/3 cup graham cracker crumbs
38 maraschino cherries

Steps:

  • 1) Cream together all ingredient except the graham crumbs.
  • 2) Drain cherries and pat with a paper towel.
  • 3) Cover a cherry with coconut mixture and roll into a ball in the palm of your hand.
  • 4) Roll ball in graham crumbs
  • 5) Place in fridge or freezer.
