4 boneless skinless chicken breast halves (6 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup all-purpose flour
3 tablespoons olive oil
1 cup chicken stock
3 to 4 tablespoons capers, drained
2 to 3 tablespoons lemon juice
3 tablespoons butter

Steps:

  • Preheat oven to 350°. Cut chicken breasts in half crosswise. Pound with a meat mallet to 1/2-in. thickness; sprinkle with salt and pepper. Place flour in a shallow bowl. Dip chicken in flour to coat both sides; shake off excess., In a large skillet, heat 1 tablespoon oil over medium-high heat. Brown chicken in batches, adding additional oil as needed. Transfer chicken to an ungreased 13x9-in. baking dish., Add stock, capers and lemon juice to pan, stirring to loosen browned bits from pan. Whisk in butter, 1 tablespoon at a time, until creamy. Pour sauce over chicken. Bake 5-10 minutes or until no longer pink.

2 large skinless, boneless chicken breasts
1 cup all-purpose flour
½ stick butter
salt and ground black pepper to taste
½ cup white wine
3 lemons, juiced
2 tablespoons drained capers
2 tablespoons chopped fresh parsley

Steps:

  • Slice chicken breasts horizontally to yield 4 pieces. Place breasts between 2 sheets of plastic wrap and pound to 1/4-inch thin. Place flour on a plate and dredge each breast on both sides in flour.
  • Melt butter in a large skillet over medium heat. Put chicken into the skillet and season tops with salt and pepper. Turn when nicely browned, about 4 minutes, and season again. Cook second side until browned, about 4 minutes. Transfer breasts to a plate, reserving skillet drippings.
  • Add wine and lemon juice to the skillet, stirring to scrape up any browned bits. Simmer to reduce and thicken sauce, about 5 minutes more. Add capers and pour sauce over chicken breasts on the plate. Sprinkle with parsley.

1 large, boneless, skinless chicken breast
salt, to taste
pepper, to taste
flour, as needed
3 tablespoons butter
½ cup chicken broth
1 lemon, Juiced
2 tablespoons caper

Steps:

  • Butterfly the chicken breast and pound it thin. Salt and pepper to taste.
  • Dredge each piece in flour, shaking off the excess.
  • In a skillet over high heat, melt three Tbsp. butter, and brown the chicken, the browner and crispier the better, 3-5 minutes on each side.
  • Remove chicken from the skillet, and, in the same pan, add chicken stock, lemon, and capers.
  • Boil until the sauce reduces by ⅓, and return the chicken to the skillet.
  • Spoon sauce over the chicken several times.
  • Serve immediately, with the remaining sauce poured over the chicken.

Number Of Ingredients 15

1 lb boneless skinless chicken cutlet (4 breasts)
1 cup flour (1 bowl, about 1 cup)
1 1/2 tablespoons butter
1 teaspoon parsley
1/2 teaspoon garlic powder
2 tablespoons sauterne (white, dry)
1 teaspoon lemon juice
4 large russet potatoes
1/3 cup olive oil
fresh thyme
fresh rosemary
oregano
basil
black pepper
sea salt

Steps:

  • Wash chicken cutlets and pat dry with paper towels.
  • Pour flour into bowl (around 1 cup) and season with oregano, basil, and a bit of black pepper. Mix together.
  • Dredge chicken cutlets in flour until all surfaces are completely covered, then shake off excess.
  • Coat frying pan with olive oil and cook chicken cutlets over medium heat until both sides are golden brown.
  • When chicken is almost ready, place 1-1/2 tablespoons of butter with 1 teaspoon of parsley in tea cup or small glass bowl in the microwave for about 90 seconds.
  • Add 1/2 teaspoon of garlic powder, 1 teaspoon a lemon juice, 2 tablespoons of sauterne, and a bit of sea salt to butter and stir together.
  • When chicken is golden brown, add butter mixture over the cutlets as evenly as possible.
  • When most of butter mixture is absorbed into chicken or dissapates, place the cutlets onto a baking sheet (covered with cooking spray) and place them in oven at 400 degrees for about 10-15 minutes.
  • Clean 4 large russet potatoes.
  • Slice potatoes into 16 slices each.
  • Place potatoes slices into large bowl and coat with the olive oil.
  • Add fresh thyme, rosemary, oregano, basil, black pepper, and sea salt to you desired degree.
  • Mix the contents of the bowl together so the seasonings are coated onto the potatoes with the olive oil.
  • Place mixture on baking sheet and cook for around 30-40 minutes at 400 or until potatoes start to brown and get slightly crispy. Test with fork to make sure the potatoes have softened inside.

Coarse salt and ground pepper
1/2 cup all-purpose flour
1 1/2 pounds chicken cutlets
2 tablespoons olive oil
8 ounces linguine
3 packed cups loose baby spinach (about 5 ounces), torn into pieces
3 tablespoons butter
3/4 cup dry white wine
2 tablespoons fresh lemon juice
2 tablespoons capers, rinsed and drained

Steps:

  • Bring a large pot of salted water to a boil. Place flour in a shallow bowl. Season cutlets with salt and pepper, then dip into flour, turning to coat; shake off excess.
  • In a large skillet, heat 1 tablespoon oil over medium-high. Add half the chicken; cook until lightly browned and opaque throughout, 1 to 2 minutes per side. Transfer to a plate; cover with foil to keep warm. Repeat with remaining tablespoon oil and chicken (reserve skillet for sauce).
  • Meanwhile, cook linguine in boiling water until al dente, according to package instructions. Reserve 1/2 cup pasta water. Add spinach, and stir until submerged. Drain pasta mixture and return to pot. Toss with 1 tablespoon butter; season generously with salt and pepper. Add some reserved pasta water if necessary. Cover to keep warm.
  • Into skillet, pour wine and lemon juice. Cook over medium-high, stirring to loosen browned bits, until liquid has reduced to 1/3 cup, 4 to 5 minutes. Remove from heat; swirl in 2 remaining tablespoons butter until melted. (For a smoother sauce, strain through a fine-mesh sieve, if desired.) Add capers, and season with salt and pepper. Divide chicken and linguine among four serving plates; top chicken with sauce.

1 lb chicken cutlet
1/4 cup all-purpose flour
4 tablespoons butter, divided
2 cloves garlic, finely chopped
1/2 cup dry white wine
2 -3 tablespoons lemon juice
1 chicken bouillon cube
2 tablespoons capers
3 tablespoons fresh parsley, chopped
grated parmesan cheese

Steps:

  • Coat chicken cutlets with flour.
  • Cook Angel Hair pasta according to package directions and drain.

VERY EASY CHICKEN PICCATA

We all loved this dish, even the kids! Serve with crusty french bread, basmati rice and a spring salad. Please note: this is an adopted recipe and I have just tried it myself. Findings: I made it with more chicken stock, double the garlic & more sliced lemon and no lemon juice to suit DH's preference for not too much lemon and becuase we had guests and I had 6 chicken breasts. DH approved of it made this way as the lemon flavour came though well, without being overly acidic. Guests wanted the recipe, so it's a keeper. ZWT REGION: Italy.

1/2 cup flour
4 boneless skinless chicken breast halves, seasoned with
salt and pepper
4 tablespoons vegetable oil, divided use
1 teaspoon minced garlic
1 cup chicken broth
1 small lemon, halved lengthwise, then sliced
1/2 cup lemon juice (from 1 1/2 large or 3 small lemons)
2 tablespoons capers, drained
3 tablespoons unsalted butter, softened
2 tablespoons fresh parsley, minced

Steps:

  • Preheat oven to 200 degrees; place a heat-proof platter (or casserole dish) in oven.
  • Pour flour onto a plate. Coat both sides of chicken breast halves in flour; shake off excess.
  • Heat 2 tablespoons oil in 12-inch heavy-bottom skillet over medium-high heat. Saute half the chicken (without moving) until lightly browned on first side, about 4 to 5 minutes.
  • Turn and cook until second side is lightly browned and chicken is cooked through, 3 to 4 minutes. Transfer chicken to heated platter or casserole dish and return to oven.
  • Repeat with remaining oil and chicken.
  • In same skillet, saute garlic about 10 seconds; add broth and lemon slices. Increase heat to high. Scrape skillet bottom with wooden spoon to loosen any browned bits. Simmer about 10 minutes to reduce liquid.
  • Add lemon juice and capers and simmer about 5 more minutes.
  • Remove pan from heat and stir in butter until it melts and sauce thickens. Blend in parsley.
  • Spoon sauce over chicken and serve.

This is my second piccata recipe; the difference is that this one is a bit more on the traditional side. It seems like a lot of steps; however, if you prep before starting, you can have it on the table in under 30 minutes. So, you ready... Let's get into the kitchen.

PLAN/PURCHASE
1 large chicken breast
1/4 c flour, all-purpose variety
2 Tbsp olive oil, extra virgin variety, divided
2 clove garlic cloves, minced
1/4 c white wine, dry variety
2 tsp capers, drained and chopped
1/4 c chicken stock, not broth
4 Tbsp sweet butter, unsalted, divided
2 Tbsp lemon juice, freshly squeezed
salt, kosher variety, fine grind, to taste
black pepper, freshly ground, to taste

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your ingredients (mise en place).
  • 3. Cut the chicken breast in half, lengthwise.
  • 4. Pound out into an even thickness, somewhere around 1/2-inch (1.3cm).
  • 5. Chef's Note: If they are fairly thin, it might not be necessary to pound them. With that said, it fun, and it helps to take out all your frustrations. So, put on some good jazz, pour yourself a nice chardonnay, and pound baby pound. :-)
  • 6. Add a bit of salt and pepper, to the flour, and place into a shallow bowl.
  • 7. Take the chicken pieces, one-by-one, coat them in the flour, and reserve.
  • 8. Add 1 tablespoon of olive oil, and 1 tablespoon of butter to a sauté pan, over medium heat.
  • 9. When the foaming subsides, give the pan a swirl, to mix the oil and butter, and add the floured chicken breasts.
  • 10. Cook until golden brown on both sides, about 3 - 4 minutes per side.
  • 11. Remove from the pan, and reserve.
  • 12. Add the remaining olive oil to the pan, and add the garlic.
  • 13. Stir the garlic until fragrant, about 60 seconds. Do not allow the garlic to burn, or the sauce will taste bitter.
  • 14. Add the wine, and capers, then stir until most of the liquid is evaporated, about 3 - 5 minutes.
  • 15. Add the chicken stock, and butter, and stir to combine.
  • 16. Continue to simmer, until the liquid is reduced by half, and begins to thicken, about 3 - 4 minutes.
  • 17. Return the chicken to the pan, and cook until warmed through, about 2 - 3 minutes.
  • 18. Remove from the heat, stir in the lemon juice, and do a final tasting for proper seasoning. Because of the tang of the lemon juice, you will probably not need any additional salt; however, a few grinds of pepper, can give the sauce more depth.
  • 19. PLATE/PRESENT
  • 20. I like serving this with some long-grained white rice; however, the sides are up to you. Enjoy.
  • 21. Keep the faith, and keep cooking.
