Steps:
- Brown ground beef, onion and garlic in a large skillet; drain well.
- Add beans, soup, tomato sauce, and green chilies, stir together and set this aside.
- In a 9" X 13" greased pan, cover bottom with one layer of crushed chips.
- Add several large spoonfuls of bean and hamburger mixture, then sprinkle with cheese (both kinds).
- Continue layering in same way one more time; making two layers.
- If desired, top with one can tomatoes with green chilies. spreading to cover.
- Top with more cheese.
- Bake at 350 degrees for 40 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Stir condensed soup, sour cream, green chilies, and milk together in a large bowl. Add chicken, tortilla pieces, and taco seasoning; stir. Mix tomato and 1 cup Mexican-style cheese blend into chicken mixture.
- Spread chicken mixture out into the prepared baking dish and cover the dish with aluminum foil.
- Bake casserole in the preheated oven for 40 minutes. Discard aluminum foil. Sprinkle remaining cheese over the top of the casserole and continue baking until cheese melts and casserole is bubbling, 5 to 10 minutes more. Let rest for 5 minutes.

EASY CHEESY MEXICAN CASSEROLE
This goes together quickly and then bakes for about an hour. This recipe can be taylored to your own tastes quite simply. You can vary the flavors by using different chili powders, beans, cheese blends or Dorito flavors. It's easy to control the heat level by which Ro-tel you use. If you don't like it hot replace the jalapenos with mild green chilies.

- Brown ground beef and onions; add chili powder, cumin, tomatoes and jalapenos. Heat through.
- Meanwhile line bottom and sides of a 13 x 9" pan with tortillas. Line bottom with refried beans.
- Add ½ of ground beef mixture. Cover with ½ of the cheese. Top with beans. Add the rest of the ground beef mixture. Top with the rest of the cheese.
- Mix Bisquick, milk and egg together; add chilies. Pour over casserole; top with crushed Doritos.
- Bake in 350° oven for 50 - 60 minutes until top is browned and toothpick inserted in crust comes out dry. Let stand for 10 minutes before cutting.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed. Stir in beans, and heat through.
- Spray a 9x13 baking dish with cooking spray. Spread crushed tortilla chips in dish, and then spoon beef mixture over chips. Spread sour cream over beef, and sprinkle olives, green onion, and tomato over the sour cream. Top with Cheddar cheese.

- Heat oven to 400°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
- In 10-inch nonstick skillet, mix uncooked rice and sauce mix (from Hamburger Helper box), 1 cup of the milk and the hot water. Heat to boiling; reduce heat. Cover; simmer about 15 minutes, stirring occasionally, until rice is tender and most of liquid is absorbed. Remove from heat.
- In medium bowl, mix chicken, chiles, black beans and 1 cup of the cheese. In small bowl, mix topping mix (from Hamburger Helper box) and remaining 3 tablespoons milk; cover and refrigerate.
- Layer 3 tortillas in baking dish, overlapping as necessary and placing slightly up sides of dish (cut third tortilla in half). Top with about half the chicken mixture, half the rice and half the enchilada sauce. Layer with 3 more tortillas and remaining chicken mixture and rice. Place remaining 2 tortillas over chicken mixture, overlapping slightly (do not place up sides of dish.) Pour remaining enchilada sauce over top. Sprinkle with remaining 1 cup cheese.
- Bake uncovered 15 to 20 minutes or until cheese is melted and casserole is bubbling around edges. Drizzle with topping mixture. Serve with remaining ingredients.

The Mexican tasting casserole is SO delicious. In comparison to eating at a Mexican restaurant, it's also much better for you. I will give the basics, but there are so many other ingredients you could add to this! This recipe has been adapted from a Kraft Foods Recipe to make it healthier.

- PREHEAT oven to 400 degrees.
- BROWN meat and drain. (Since I buy lean meat, I like to add a Tbsp of salsa while I'm browning to give it a little more juice.).
- DRAIN and rinse beans.
- MIX browned meat, salsa, seasoning, and beans.
- PLACE 2 flour tortillas on the bottom of a glass casserole dish. (the edges will go up the sides slightly).
- TOP the tortillas with half of EACH of the meat mixture, cheese, and sour cream.
- PLACE the other 2 tortillas on top and repeat the layer.
- COVER with foil.
- BAKE for 30 minutes covered.
- REMOVE foil cover.
- BAKE 10 more minutes uncovered or until cheese is melted.
