CHEESY HAMBURGER NOODLE CASSEROLE

Easy Cheesy Hamburger Noodle Casserole is a hearty, freezer-friendly, kid-friendly, one-dish meal that is perfect for everything from weeknight dinners to Sunday suppers!

1 pound lean ground beef
14.5 ounces can petite chopped tomatoes
10 ounces can diced tomatoes and green chilies
6 ounces tomato paste
2 teaspoons granulated sugar
2 teaspoons kosher salt
ΒΌ teaspoon ground black pepper
8 ounces medium egg noodles
6 green onions or scallions (Divided, see notes)
1 cup of sour cream
1 cup shredded sharp cheddar cheese
1 cup grated Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the ground beef in a large skillet over medium heat for five to six minutes, or until it is no longer pink. Break up any large pieces with a meat chopper or potato masher. Drain any fat.
  • Add the chopped tomatoes, tomatoes with green chilies, tomato paste, sugar, salt, and pepper, to the beef mixture and stir to combine. Reduce the heat to low and simmer for 30 minutes.
  • While the beef mixture is simmering, cook the egg noodles according to the package directions and drain.
  • Place the noodles in a large bowl and add the chopped scallions (white part only), half a cup of the shredded cheddar cheese, and sour cream. Stir to combine.
  • If you are making one large casserole, pour the noodle mixture into a 13 x 9-inch baking dish that has been sprayed with non-stick cooking spray. If you are dividing the mixture up into several smaller dishes, divide the noodle mixture up evenly and add it to the smaller baking dishes.
  • Top with the beef mixture and spread out evenly. Then, sprinkle the remaining cheddar cheese and Parmesan cheese evenly over the top.
  • Cover the casserole with aluminum foil and bake for 35 minutes. Uncover and bake for five to ten more minutes or until the cheese has melted and is bubbling.
  • Garnish the casserole with chopped scallion (green tops) only and serve immediately.

1 1/2 pounds lean ground beef
1 large onion, diced
1 tablespoon canola oil
salt, to taste
pepper to taste
1/2 teaspoon oregano
2 cloves chopped garlic
1/2 teaspoon paprika
one 28-ounce can pureed tomatoes, or your favorite sauce
16 ounce box macaroni noodles
1/2 cup each grated cheddar and mozzarella cheeses

Steps:

  • Sweat the onions in the oil with a three-fingered pinch of salt. Add the beef and cook it, breaking it up as you do. Add another three-fingered pinch of salt or two, along with the dry seasonings. Add the tomatoes and bring to a simmer, then reduce the heat to low and cook for an hour.
  • Cook the macaroni in boiling water till it's half done. Drain it and add it to the tomatoes. (I wanted this to stretch into two meals, so I used the whole box, but if you want your dish to be very tomatoey and beefy, you might want to add only half the macaroni). Stir it into the sauce. Taste it and add cheese and cover or transfer it to a large baking dish and cover it with foil. It can be refrigerated for up to two days, or frozen a few weeks.
  • If refrigerated bake it in a 400 degree oven till it's piping hot (about 45 minutes if it's cold to room temperature). Just before you're ready to eat, remove the foil, cover macaroni with the cheese and broil till the cheese is bubbly.

This is similar to lasagna with a different twist and cheaper to make. It's a make ahead casserole too. Just put it in the oven to heat up before serving. I've made this for years now and it always pleases. The kids love it too.

1 lb ground chuck (browned and drained)
1 jar(s) ragu or any spaghetti sauce you prefer
16 oz extra wide noodles
1 8 oz pkg cream cheese (softened)
1 8 oz sour cream
3 green onions (chopped fine)
1 Tbsp sugar
salt and pepper to taste
1/2 c grated cheddar cheese

Steps:

  • 1. Brown hamburger and drain. Add spaghetti sauce. You can add any spices you like here, onions, garlic, etc. Cook noodles and drain.
  • 2. Mix softened cream cheese in a bowl with the sour cream. Add the sugar, chopped green onions and salt and pepper.
  • 3. Make 2 layers in a casserole dish (I use a round dish but even a 9 X 13 Pyrex dish is fine too.) Starting with noodles, then half the cheese mixture, then the meat sauce mixture. Repeat for second layer ending with the meat sauce.
  • 4. Top with grated cheddar cheese (or your favorite cheese)
  • 5. Bake in oven at 350 until hot and bubbly, approximately 45 minutes.
  • 6. (The Sugar in the cheese mixture is what gives this casserole its unusual taste so do not omit it!)
