1 large head cauliflower, cut into bite-size pieces
1 cup light sour cream
1 cup shredded Cheddar cheese
½ cup diced onion
3 tablespoons melted butter
2 tablespoons red pepper flakes, or to taste
¼ teaspoon salt
½ cup panko bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of water to a boil. Add cauliflower and cook uncovered until tender, about 10 minutes. Drain.
  • Combine sour cream, Cheddar cheese, onion, melted butter, red pepper flakes, and salt in a baking dish. Mix in cauliflower. Sprinkle bread crumbs on top.
  • Bake in the preheated oven until bubbly and cheese is melted, about 30 minutes.

Cheesy and creamy cauliflower gratin that's easy to prepare and makes for one delicious Holiday side dish recipe!

4 tablespoons butter (divided)
2 tablespoons all-purpose flour
1 1-2 cups 2% milk
1/4 cup half-and-half
3/4 cup finely shredded Manchego Cheese or Gouda Cheese
1/2 teaspoon dried thyme
1/2 teaspoon italian seasoning
salt and freshly ground pepper (to taste)
1/4 teaspoon or to taste chili powder
pinch of ground nutmeg
2 pound head of cauliflower (cut into florets)
3 garlic cloves (minced)
1 onion (diced)
Spanish paprika ((optional))
2 tablespoons coarsely chopped almonds ((optional))

Steps:

  • Preheat oven to 400F.
  • Melt 2 tablespoons of butter in a skillet.
  • Add the flour and whisk over medium-high heat for 1 minute.
  • Add the milk and the half-and-half; cook, whisking constantly, until thickened, about 5 minutes.
  • Remove skillet from heat and whisk in the cheese.
  • Whisk in the thyme, Italian seasoning, salt, pepper, chili powder, and nutmeg; set aside and keep warm.
  • In a large skillet, bring 1/2 inch of salted water to a boil.
  • Add the cauliflower florest; cover and cook over high heat for 5 minutes.
  • Drain the cauliflower in a colander.
  • Melt remaining butter in a skillet.
  • Add the onion and cook over medium-high heat for 3 minutes.
  • Stir in the minced garlic and continue to cook for 1 minute, or until fragrant.
  • Add the prepared cauliflower florets to the skillet and cook, stirring frequently, for 2 minutes.
  • Transfer the cauliflower to a 2 quart baking dish and spread the prepared cheese sauce on top.
  • Sprinkle the top with the chopped almonds and paprika; bake in the oven for 20 minutes, or until bubbling and browned on top.
  • Let stand for 10 minutes before serving.

1 (3-pound) head cauliflower, cut into large florets
Kosher salt
4 tablespoons (1/2 stick) unsalted butter, divided
3 tablespoons all-purpose flour
2 cups hot milk
1/2 teaspoon freshly ground black pepper
1/4 teaspoon grated nutmeg
3/4 cup freshly grated Gruyere, divided
1/2 cup freshly grated Parmesan
1/4 cup fresh bread crumbs

Steps:

  • Preheat the oven to 375 degrees F.
  • Cook the cauliflower florets in a large pot of boiling salted water for 5 to 6 minutes, until tender but still firm. Drain.
  • Meanwhile, melt 2 tablespoons of the butter in a medium saucepan over low heat. Add the flour, stirring constantly with a wooden spoon for 2 minutes. Pour the hot milk into the butter-flour mixture and stir until it comes to a boil. Boil, whisking constantly, for 1 minute, or until thickened. Off the heat, add 1 teaspoon of salt, the pepper, nutmeg, 1/2 cup of the Gruyere, and the Parmesan.
  • Pour 1/3 of the sauce on the bottom of an 8 by 11 by 2-inch baking dish. Place the drained cauliflower on top and then spread the rest of the sauce evenly on top. Combine the bread crumbs with the remaining 1/4 cup of Gruyere and sprinkle on top. Melt the remaining 2 tablespoons of butter and drizzle over the gratin. Sprinkle with salt and pepper. Bake for 25 to 30 minutes, until the top is browned. Serve hot or at room temperature.

1 head cauliflower, cut into florets
2 tablespoons butter
1 small onion, chopped
2 tablespoons all-purpose flour
1 cup milk
6 ounces shredded Cheddar cheese, divided
1 pinch ground black pepper
1 pinch ground nutmeg, or to taste

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, 5 to 7 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish.
  • Heat butter in a small saucepan over low heat; cook and stir onion in the melted butter until softened, about 5 minutes. Add flour; cook, stirring constantly, until mixture just starts to brown, 3 to 5 minutes. Gradually pour milk into mixture, whisking into a smooth sauce. Cook until just simmering.
  • Remove sauce from heat and stir in half the Cheddar cheese until melted; sprinkle with pepper and nutmeg.
  • Place steamed cauliflower in the prepared baking dish; pour cheese sauce over cauliflower. Sprinkle with remaining Cheddar cheese.
  • Bake in the preheated oven until cheese is melted and browned, about 25 minutes.

1 (10-ounce) package frozen cauliflower florets (recommended: Pictsweet)
1 (10.75-ounce) can condensed Cheddar cheese soup (recommended: Campbell's)
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1/2 cup Mexican style shredded cheese (recommended: Kraft)
2 tablespoons grated Parmesan (recommended: Di Giorno)
2 tablespoons Italian style bread crumbs (recommended: Progresso)
1 teaspoon extra-virgin olive oil

Steps:

  • Preheat the broiler.
  • In a microwave-safe casserole dish, stir to combine cauliflower, soup, cayenne pepper, salt and shredded cheese. Cover with plastic wrap and microwave on high setting for 6 minutes.

With all the richness of a traditional potato gratin, this vegetable rendition is just as satisfying, but it's healthier.

3 slices white sandwich bread, torn into large pieces
2 tablespoons grated Parmesan cheese
3 tablespoons butter
1/3 cup all-purpose flour
2 cups milk
1 head cauliflower (about 2 pounds), cored and cut into small florets
Coarse salt and ground pepper
4 ounces Gruyere cheese, grated (1 cup)

Steps:

  • Preheat oven to 350 degrees. In a food processor, combine bread and Parmesan. Pulse until coarse crumbs form, about 3 to 4 times; set aside.
  • In a large saucepan with a lid, melt butter over medium heat. Add flour; cook, whisking constantly for 1 minute. Whisk in milk.
  • Add cauliflower, and season with salt and pepper. Bring to a boil, and reduce to a simmer. Cover, and cook until starting to soften, about 5 minutes. Remove from heat; gradually stir in Gruyere.
  • Pour mixture into a 2-quart baking dish, and sprinkle with breadcrumb mixture. Cover with aluminum foil; bake until cauliflower is easily pierced with a knife, about 20 minutes. Remove foil, and bake until breadcrumbs are golden brown, about 20 minutes more. Serve.
