EASY BEET, PEAR, AND GOAT-CHEESE SALAD



Easy Beet, Pear, and Goat-Cheese Salad image

This salad is a rich blend of sweet and tangy flavors.

1/4 cup fresh orange juice
1 tablespoon red-wine vinegar
1 tablespoon olive oil
2 teaspoons Dijon mustard
Coarse salt and ground pepper
1 recipe Basic Roasted Beets
2 firm, ripe Bartlett pears, peeled, halved lengthwise, cored, and sliced 1/4 inch thick lengthwise
4 ounces soft goat cheese, crumbled
1/3 cup toasted pecans or walnuts, coarsely chopped

Steps:

  • In a medium bowl, whisk together juice, vinegar, oil, and mustard; season with salt and pepper.
  • Arrange beets and pears on four serving plates. Drizzle with dressing. Scatter cheese and nuts over, and season with more pepper, if desired. Serve immediately.

This takes a bit more time than other versions, but well worth it! Quite filling and visually stunning. Resist the urge to stir too much before presentation. Keeping the cheese as white as possible really makes it beautiful.

4 medium beets, peeled and cut into 1-inch pieces
¼ cup extra-virgin olive oil, plus more for drizzling
sea salt to taste
½ medium lemon
½ cup chopped green onion, green parts only
6 ounces goat cheese, crumbled

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Toss chopped beets with olive oil and sprinkle with salt. Spread out in a single layer in a baking dish and squeeze lemon half over top. Cover baking dish tightly with aluminum foil.
  • Bake in the preheated oven until beets are tender, about 1 hour. Remove and allow to cool to room temperature, about 10 minutes.
  • Combine cooled beets and green onion in a bowl; toss to combine. Scatter crumbled goat cheese on top. Drizzle with olive oil and season with more sea salt, if necessary.

MADDY'S QUICK AND EASY BEET AND SPINACH SALAD



Maddy's Quick and Easy Beet and Spinach Salad image

This quick and easy beet salad goes with any meal!

Number Of Ingredients 9

15 oz can of sliced beets
1/2 small sweet or white onion sliced thinly
2 c fresh spinach leaves
FOR THE DRESSING
3 Tbsp heaping tablespoons of mayonnaise
1/2 Tbsp red wine vinegar
1 tsp salt
1/2 tsp black pepper
6 pkg artificial sweetener (or regular sugar to your taste)

Steps:

  • 1. Place drained beets in a bowl If they are whole, slice them up. Canned cubed beets work as well. You can also use fresh beets that have been cooked and cooled and sliced up.
  • 2. Add the thinly sliced sweet onion to the bowl.
  • 3. Add the fresh spinach to the bowl, and mix all ingredients together. If you do not like spinach, you can use romaine or any other lettuce instead.
  • 4. Mix the dressing ingredients together in a separate bowl. I like to use artificial sweetener in salads because it is less grainy. Sweetener can be adjusted to your taste, but the salad should be slightly sweet.
  • 5. Add the dressing to the beets, onion and spinach and mix well. Store leftovers in the refrigerator.

1/4 medium red onion, sliced (1/4 of it)
1 Tbsp basil, cut into thin strips
1 Tbsp apple cider vinegar
1 Tbsp olive oil
1/2 tsp salt
1 pinch sugar n blk pepper

Steps:

  • 1. IN A BOWL WHISK TOGETHER APPLE CIDER VINEGAR, OLIVE OIL, S n P AND SUGAR. ADD BEETS, SLICED ONIONS N BASIL. MIX GENTLY ...COVER WITH PLASTIC WRAP N REFRIGERATE FOR ATLEAST 15 MINUTES. LONGER BETTER :)
