Our take on the beloved mini-marshmallow-topped casserole calls for baking and mashing sweet potatoes, then returning them to their jackets and baking again with pecans and marshmallows. Everyone will adore having their own at Thanksgiving.

14 (each about 8 ounces) sweet potatoes
1/2 cup sour cream
6 tablespoons unsalted butter, room temperature, plus 6 tablespoons cold unsalted butter, cut into 1/4-inch-thick slices
1 3/4 cups packed light-brown sugar
4 teaspoons fresh lemon juice
1/2 teaspoon freshly grated nutmeg
Kosher salt and freshly ground pepper
2/3 cup pecans, toasted, coarsely chopped
40 large marshmallows, halved crosswise

Steps:

  • Preheat oven to 400 degrees. Prick sweet potatoes with a fork. Bake until soft, about 50 minutes. Let cool slightly on a rack.
  • Cut a lengthwise slit in potatoes almost all the way through, leaving about 1 inch at each end intact. Scoop out flesh, leaving a 1/2-inch border on skins. Put flesh in a medium nonreactive bowl, then transfer half to a food processor. Process until smooth; return to bowl. Stir in sour cream, 6 tablespoons softened butter, 1 cup brown sugar, lemon juice, and nutmeg. Season with salt and pepper.
  • Reduce oven temperature to 350 degrees. Transfer sweet potato mixture in batches to a pastry bag fitted with a very large round tip. Pipe mixture into 12 of the potato shells, dividing evenly; discard remaining 2 shells. Filled shells can be refrigerated in an airtight container up to 1 day. Just before serving, top with remaining 3/4 cup brown sugar, the sliced butter, and pecans; arrange marshmallows on top. Bake on a rimmed baking sheet until hot and marshmallows are golden brown, 7 to 10 minutes.

2 (15 ounce) cans sweet potatoes, with juice (in 1/2in. chunks)
1/2 cup brown sugar (firmly packed)
1/4 cup margarine (melted)
1/2 teaspoon cinnamon

  • Layer potatoes,brown sugar and margarine in a casserole.
  • Sprinkle with cinnamon.
  • Bake uncovered at 375 degrees for 30 minutes.

This is a quick way to prepare baked sweet potatoes. No need to heat up the house by turning on the oven.

2 sweet potatoes, large
2 Tbsp margarine or butter
water, enough to moisten well

Steps:

  • 1. Wash and dry sweet potatoes. Poke holes in potatoes with fork.
  • 2. Rub each potato on all sides with softened butter.
  • 3. Wrap potatoes separately & completely in paper towels. Then, moisten with water.
  • 4. Bake in microwave. Check & turn over after top side gets soft. Continue baking. Should be completely done in about 12 minutes (when no longer hard). Serve warm with a pat of butter.

This is a cooking method I use for apples and sweet potatoes. This recipe does require a convection oven. It is quick and easy and your family will love it. Enjoy!

3 large sweet potatoes
4 Tbsp butter
1/3 c brown sugar
2 Tbsp cinnamon
2 Tbsp cinnamon sugar

Steps:

  • 1. Preheat oven to 400 convection bake. Peel and wash your sweet potatoes. Cut the whole potato into 1 1/2 inch pieces. Place each piece cut side down in a standard baking dish. Tip: for easy cleanup, use a disposable foil pan. You can buy 1/2 pans cheap at a big box club store.
  • 2. Melt the butter (I melt the butter in the microwave for 30 sec.) While butter is hot mix in brown sugar. Once brown sugar is dissolved, pour mixture over the sweet potatoes and completely coat each piece by rolling them around in the mixture.
  • 3. Cover dish with foil and convection bake 400 for 45 minutes.
  • 4. Remove foil and sprinkle the top of each piece with the cinnamon and cinnamon sugar. DO NOT TAKE A SHORTCUT AND USE JUST CINNAMON SUGAR. The pure cinnamon makes the dish.
  • 5. Cook uncovered 400 convection bake for 15 minutes or until brown on top. Remove from oven and drizzle the juice in the pan over the sweet potatoes.
