Donna's Easy Baked Macaroni & Cheese image

My husband's baked macaroni & cheese is absolutely delicious and is a requirement at ALL family gatherings. The simplicity of the dish is what makes it so easy and tasty. There is no flour or roux, or eggs. Sometimes less is more!

1 lb pasta (elbow, rotini, bucatini)
1 stick butter or margarine
2 c milk
1 lb shredded cheddar
salt

Steps:

  • 1. The American favorite pasta is small elbow noodles or rotini. The Italian favorite is long macaroni or Bucatini.
  • 2. Boil the pasta of your choice in very well salted water until al dente. Don't cook the pasta completely because it will finish cooking in the oven. Pour into a colander and quickly rinse with cold water to stop the cooking - allow to drain.
  • 3. In the same pot that you boiled the pasta, add butter and melt it over low heat. Turn Off Heat! Add the milk and the drained pasta - stir well. Taste at this point to see if it needs any additional salt. Remember that cheese is salty so don't add too much if it's needed.
  • 4. Add about 1/3 of the shredded cheese to the pasta & milk and stir. It doesn't have to completely melt, just get it mixed well.
  • 5. In a large casserole dish layer half of the noodles, then put a layer of cheese.
  • 6. Add the rest of the noodles and all of the remaining liquid, then layer the top with the remaining cheese.
  • 7. Bake at 350° F for 30-40 minutes until hot and bubbly and cheese is golden brown. Remove from oven and allow to sit about 5-10 minutes. Serve hot. Enjoy!
  • 8. *NOTES: I prefer to use a mixture of mild and sharp cheddar. Use Colby or whatever flavor cheese that you like to make it your own. If you like pepper, granulated garlic or onion then add it - I don't think it needs it but make it to your taste.

I first had this at a friend's house for dinner and loved it. I asked her for the recipe and could not believe it when she said it had mayonnaise in it! She said her Great Aunt made it this way all her life. I never would have posted this recipe because I don't really care for mayonnaise but in this dish it reigns supreme! You've got to try it! I usually use penne pasta and I love adding cayenne, to taste, to the mayo before mixing it in with the pasta.

1 lb pasta noodles, cooked and drained
1 cup mayonnaise, preferably homemade
1 1/2 cups milk
3 cups sharp cheddar cheese, freshly grated
2 teaspoons Dijon mustard
1/4 cup seasoned bread crumbs
kosher salt & freshly ground black pepper

Steps:

  • Butter or spray a casserole dish.
  • Preheat the oven to 375 degrees.
  • Toss the pasta with the mayonnaise, milk, mustard and cheese.
  • Season with the salt and pepper.
  • Pour into the casserole dish and top evenly with the breadcrumbs.
  • *If you like a real crunchy top, use more breadcrumbs.
  • Bake for 30 minutes or until golden brown on top and bubbling hot.

2 cups uncooked elbow macaroni
2 tablespoons flour
1 teaspoon salt
1/4 teaspoon pepper, white or black
1/4 teaspoon dry mustard
3 tablespoons cold margarine, cut into very thin slices
2 - 3 cups shredded Sharp cheddar cheese, as desired
3/4 cup milk

Steps:

  • Cook pasta al dente tender; drain well. Preheat oven to 350 F. Spray a 2-qt. baking dish with cooking spray. Mix the flour, salt, pepper, and dry mustard together in a small bowl; set aside. Place half of the cooked macaroni in the bottom of the prepared baking dish. Sprinkle half the flour mixture over the top of the macaroni, then top with half of the margarine slices. Cover with 1 cup of cheese. Repeat the layers (macaroni, flour, margarine, and cheese). Pour the milk evenly over the top of all. Cover the dish tightly with foil and bake for 30 minutes. Remove foil, return to oven and bake an additional 5-10 minutes. (If desired, you can top with additional cheese before returning it to the oven.)

This dish has become a family holiday favorite. It's so easy and quick though, that you might want to serve it on a regular basis. I've made this with both regular and low fat ingredients and have been pleased with the results each time, though I wouldn't suggest using fat free products.

1 cup sour cream
2 cups small curd cottage cheese
1/2 cup milk
1 large egg, beaten
3 cups cheddar cheese, shredded
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook macaroni according to package directions and drain.
  • Mix sour cream, cottage cheese, milk, egg, salt and pepper in large mixing bowl.
  • Gently add noodles and 2 cups of cheddar cheese, mixing lightly.
  • Pour into a greased 13" x 9" caserole dish.
  • Sprinkle with remaining cheddar cheese.
  • Bake at 350 degrees for 30 minutes.

This is a family favorite that I learned from my Mom. It has been passed down and I am sure it has changed over the years, but everyone that has it loves it. I use it anytime I need a nice side dish in a pinch!! The left overs reheat nicely and never stick around more than a day or so! I tend to cook by sight, so I did my best to approximate the measurements. I like to make this with fried chicken, grilled salmon, pork roast,etc with a fresh salad or veggie. It really is a versatile dish that leaves you free to tend to your main dish or dessert prep!! My kids love this, and I recently made this for great friends while in Canada on vacation and it seemed to be a hit. Definitely a staple for our household. :)

12 ounce(s) bag elbow macaroni
1 pint(s) heavy whipping cream
8 ounce(s) bag shredded sharp cheddar cheese
8 ounce(s) bag shredded four cheese blend
2 tablespoon(s) butter or margarine
1 cup(s) chopped onion (walla walla or vidalia if available)
- garlic powder, to taste
- ground black pepper, to taste

Steps:

  • Pre-heat oven to 400.
  • Bring water to boil, then add pasta. Cook uncovered for 8-10 minutes (as directed on package).
  • While macaroni cooks, chop onions to desired consistency. **Depending on time available, onions can be sauteed/carmelized for added flavor/texture.
  • Drain pasta and rinse with hot water.
  • Place pasta back into pot with 2 tbsp butter and stir to cover so pasta does not stick.
  • Stir in onions and cheese. Pour in heavy whipping cream and stir until nicely mixed.
  • Add garlic powder and black pepper to taste.
  • Scoop mixture into covered casserole dish and bake for 30 minutes, then check for desired bubbliness. ;)
