1 cup cake flour
1-1/2 cups sugar, divided
2 cups egg whites (about 14)
1-1/4 teaspoons cream of tartar
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1/4 teaspoon salt

Steps:

  • Sift flour and 1/2 cup sugar together four times; set aside. In a bowl, combine egg whites, cream of tartar, extracts and salt; beat on high until soft peaks form but mixture is still moist and glossy. Add remaining sugar, 1/4 cup at a time, beating well after each addition. Sift flour mixture, a fourth at a time, over the egg white mixture; fold in gently, using about 15 strokes for each addition. Spoon batter into an ungreased 10-in. tube pan (pan will be very full). Bake at 375° for 35-40 minutes or until top crust is golden brown and cracks feel dry. Immediately invert cake in pan to cool completely. Loosen sides of cake from pan and remove.

1 cup water
1/3 cup orange juice
1 teaspoon orange extract

Steps:

  • Prepare cake mix according to package directions, using 1 cup water and 1/3 cup orange juice instead of the liquid called for on the package.
  • Stir in orange extract.
  • Spoon batter into an ungreased 10-inch tube pan.
  • Bake at 350 on lowest oven rack for 40 to 45 minutes or until cake springs back when lightly touched.
  • Invert pan over the neck of a glass bottle; let cool completely.
  • Loosen cake from sides of pan with a knife and remove from pan.

  • 1. Preheat oven to 350.
  • 2. Pour cake mix into medium sized mixing bowl.
  • 3. Add can of crushed pineapple.
  • 4. Stir together. It will start to foam and fizz a bit, which is kind of cool.

1 pkg. (3 oz.) JELL-O Island Pineapple Gelatin
ice cubes
1/2 cup cold water
1 can (8 oz.) crushed pineapple in juice, drained
1 pkg. (10 oz.) prepared angel food cake
2 cups thawed COOL WHIP Whipped Topping

Steps:

  • Add boiling water to gelatin mix in medium bowl; stir 2 min. or until completely dissolved. Add enough ice to cold water to measure 2 cups. Add to gelatin; stir until slightly thickened. Remove any unmelted ice.
  • Stir pineapple into gelatin. Refrigerate 15 min. Meanwhile, cut cake into 1-inch pieces.
  • Add COOL WHIP to gelatin mixture; whisk just until blended. Layer half each of the cake pieces and gelatin mixture in 12 parfait glasses; repeat layers. Refrigerate 30 min.

Can of crushed pineapple
Optional: fruit to drizzle over the top and Cool Whip

Steps:

  • Add the contents of the Angel Food Cake Mix to a mixing bowl.
  • Add a can of crushed pineapple (do not drain).
  • Stir until both ingredients are well mixed.
  • Spray a baking pan with nonstick spray (I used a bundt pan). The Angel Food Cake Box says that you do not need to grease the pan, but from my experience, if you're using a bundt pan, it's much easier to get the cake out if you spray it.
  • Bake according to the directions on the box.
  • Serve with fruit topping and/or Cool Whip (it's also yummy without).
