1 cup unsweetened cocoa powder
2 cups white sugar
½ cup vegetable oil
4 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
½ cup confectioners' sugar

Steps:

  • In a medium bowl, mix together cocoa, white sugar, and vegetable oil. Beat in eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, and salt; stir into the cocoa mixture. Cover dough, and chill for at least 4 hours.
  • Preheat oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper. Roll dough into one inch balls. I like to use a number 50 size scoop. Coat each ball in confectioners' sugar before placing onto prepared cookie sheets.
  • Bake in preheated oven for 10 to 12 minutes. Let stand on the cookie sheet for a minute before transferring to wire racks to cool.

Bake a batch of these simple but delicious Easter crinkle cookies topped with seasonal treats. These bites are perfect for sharing with friends

30g cocoa powder, sieved
100g caster sugar
2 tbsp vegetable oil
1 egg
90g plain flour
½ tsp baking powder
25g icing sugar
15 Maltesers Mini Bunnies a mixture of white and milk chocolate

Steps:

  • Line a large baking tray with baking parchment and set aside. Whisk the cocoa, caster sugar, oil and egg together in a bowl until smooth. Sieve over the flour, baking powder and a small pinch of salt, then mix well to make a soft dough. Wrap and chill for 1 hr to firm up slightly.
  • Heat the oven to 190C/170C fan/gas 5. Sieve the icing sugar into a shallow bowl. Roll the chilled dough into 15 even-sized balls (about 20g each) using your hands. Roll the dough balls in the icing sugar, then arrange on the prepared baking tray, evenly spaced apart. Bake for 9 mins, then press a Maltesers mini bunny into the middle of each cookie, alternating the flavours, and bake for 1 min more. Leave to cool completely on the tray - the cookies will firm up more as they cool. Will keep in an airtight container for up to three days.

2 cups semisweet chocolate chips, divided
2 tablespoons butter, softened
1 cup sugar
2 large egg whites, room temperature
1-1/2 teaspoons vanilla extract
1-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup water
1/2 cup confectioners' sugar

Steps:

  • In a microwave, melt 1 cup chocolate chips. Stir until smooth; set aside. Beat butter and sugar until crumbly, about 2 minutes. Add egg whites and vanilla; beat well. Stir in melted chocolate. , In another bowl, whisk together flour, baking powder and salt; gradually add to butter mixture alternately with water. Stir in remaining chocolate chips. Refrigerate, covered, until easy to handle, about 2 hours., Preheat oven to 350°. Shape dough into 1-in. balls. Roll in confectioners' sugar. Place 2 in. apart on baking sheets coated with cooking spray. Bake until set, 10-12 minutes. Remove to wire racks to cool.
