I call this my East meets West fusion sauce because it has American and Asian flavors fused together with an butter technique that leaves the sauce glossy and shiny. This has serious flavors and textures. It's sweet, salty, sour, & savory. I could eat it everyday.

EAST MEETS WEST SAUCE
1 c brown sugar
1/4 c each fish sauce, oyster sauce, ketchup, white vinegar
2 Tbsp worcestershire sauce
1 tsp black pepper
3 clove garlic minced
4 Tbsp cold butter cut into chunks
FOR THE DISH
1 lb boneless rib eye steak
2 large egg whites
2 Tbsp cornstarch
1 tsp salt
1/4 c veg oil
2 shallots thinly sliced
1 bulb baby bok choy separated
2 c bean sprouts
1/2 c each thai basil & cilantro
1/4 c thinly sliced scallion dark green parts only
1/4 c crushed peanuts
8 oz rice noodles
lime wedges for serving

Steps:

  • 1. For the steak Mix the egg whites, cornstarch and salt together. Cut the steak across the grain into 1 inch sliced. Place in the egg white mixture use your hand and cover the steak well. Set aside.
  • 2. Cook the noodles according to package directions and drain.
  • 3. Mix all the ingredients for the sauce except the butter. Add to saucepan and bring to a boil. Reduce to a simmer to let it reduce and become syrupy coating the back of the spoon. Whisk the butter in one pat at a time until each one melts. Simmer about 5 more minutes.
  • 4. In a skillet add the oil. Get the oil hot and add the steak strips cooking about 1 minute one each side. Remove from the pan and set aside.
  • 5. Add the shallots to the oil. Cook 1 minute. Add the bok choy and cook 1 minute. Add the bean sprouts. Add the steak back to the pan. Pour the sauce over the steak and veggies. Cook 1 minute. Stir in the Thai basil. Serve over the noodles garnished with the cilantro chives and peanuts Squeeze a lime wedge over top.

2 cups packed dark brown sugar
1 cup dark chile powder
1 cup good-quality paprika
1 cup kosher salt
1 cup butcher-grind (coarse) black pepper
2 tablespoons ground cumin
2 tablespoons curry powder
4 plates beef chuck short ribs
Barbecue sauce, for serving (see Cook's Note)

Steps:

  • Heat a smoker to 250 degrees F preferably using Texas post oak wood.
  • Mix the brown sugar, chile powder, paprika, salt, pepper, cumin and curry in a large bowl by hand into a uniform color and consistency. Set aside.
  • Remove the beef ribs from their packaging and rinse under cold water. Trim any large fatty areas off the top of the ribs. Turn the ribs over and remove all of the silver skin. Pack the rub only on the top and sides of the ribs; you want it about 1/8 inch thick.
  • Smoke the ribs until they register a consistent interior temperature of 200 degrees F, roughly 11 hours. Let the ribs rest for 30 minutes, then cut into 2-bone portions. Serve with barbecue sauce on the side.

1 lb. beef sirloin steak, cut into strips

1 Tbsp. teriyaki sauce

Steps:

  • Cook pasta in large saucepan as directed on package, adding vegetables to the boiling water for the last 2 min.
  • Meanwhile, heat oil in large nonstick skillet. Add meat; cook until browned on all sides, stirring occasionally. Stir in dressing and teriyaki sauce; cook 2 min. or until sauce is thickened, stirring occasionally.
  • Drain pasta mixture; place in large serving bowl. Add meat mixture; toss to coat.

Inspired by galbi, or Korean barbecued short ribs, this recipe takes a sharp turn away from the traditional sweet, fruity treatment and instead skews savory, with warm spices like cumin, coriander and turmeric. Meaty short ribs generally require a lengthy cook time, but slice them thinly off the bone and they'll tenderize quickly when seared on the stovetop-or you could use slivers of skirt steak or hanger steak instead. The skinny strips also have a higher surface area, which means they'll quickly soak up the flavors of the marinade. Rice is the perfect canvas for the meat, and celery and lettuce balance out the bold flavors with lightness and crunch.

2 tablespoons soy sauce
1 tablespoon grated fresh ginger
1 tablespoon light brown sugar
2 garlic cloves, grated
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon ground turmeric
1/2 teaspoon red-pepper flakes
Kosher salt
2 tablespoons vegetable oil
4 cups cooked short-grain rice
1 small head green leaf lettuce, shredded
2 stalks celery, thinly sliced crosswise

Steps:

  • Combine short ribs, soy sauce, ginger, sugar, garlic, coriander, cumin, turmeric, red-pepper flakes and 1 teaspoon kosher salt in a medium bowl and toss to coat. Cover, transfer to the fridge and let marinate for 5 minutes or up to 8 hours, if desired.
