This is a very easy and no fail recipe for meatloaf. It won't take long to make at all, and it's quite good!

1 ½ pounds ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons brown sugar
2 tablespoons prepared mustard
⅓ cup ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
  • In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.

ASIAN PORK MEATLOAF WITH RED WINE-MUSHROOM GRAVY



Asian Pork Meatloaf with Red Wine-Mushroom Gravy image

Canola oil, to cook
1 tablespoon minced garlic
1 tablespoon minced ginger
1 tablespoon fermented black beans, rinsed and chopped
3 carrots, peeled and 1/4-inch dice
4 stalks celery, 1/4-inch dice
2 onions, 1/4-inch dice
1 zucchini, 1/4-inch dice
1 tablespoon sambal
1/2 cup hoisin sauce
2 cups cooked long grain rice
2 pounds ground pork
4 eggs, lightly beaten
Salt and black pepper, to taste
1 tablespoon minced garlic
1 large onion, roughly chopped
1 pound button mushrooms, sliced
1 bottle dry red wine
2 cups chicken stock
2 tablespoons soy sauce
2 tablespoons butter
Salt and black pepper, to taste

Steps:

  • In a large saute pan coated with oil, add the garlic, ginger and black beans. Stir and season. Add carrots, celery, onions, zucchini and stir. Add sambal and hoisin and continue to stir. When the mixture is cooled, mix in the rice, pork and eggs. Season with salt and black pepper. (Test for seasoning by cooking a small piece in boiling water, a frying pan or even nuking it.) Spray a non-stick meatloaf pan and fill with mix. Bake in a preheated 350 degree oven for 45 to 60 minutes or until a knife/poker comes out clean.
  • For the Red Wine Mushroom Gravy: In a saucepan coated with oil, caramelize the garlic, onions and mushrooms. Deglaze with red wine and reduce by 75 percent. Add the stock and soy sauce and reduce by 50 percent. Check for seasoning. Using a hand blender, puree the sauce and add the butter. Check again for seasoning. Keep warm.
  • Plating: Sauce the plate completely then top off with a thick slab of meatloaf.

Same old comfort food meatloaf, but with some Asian ingredients for an Oriental twist on an old favorite. Very moist and flavorful- makes great sandwiches the next day! Serve with white or brown rice and steamed broccoli.

1-1/2 lb ground beef
1/2 lb ground turkey or pork (unseasoned)
2 eggs, lightly beaten
1 c panko asian bread crumbs
1/2 c water chestnuts, drained well and chopped finely
1/2 c each yellow onion and bell pepper, finely chopped
2 tsp minced ginger/garlic paste, from a jar
3 tsp low sodium soy sauce
1 tsp hoisin sauce
1/4 tsp chile garlic sauce
GLAZE INGREDIENTS
1/4 c ketchup
2 Tbsp hoisin sauce
1/2 tsp chinese mustard
1/4 minced ginger/garlic paste

Steps:

  • 1. Preheat oven to 350 deg. F.
  • 2. Mix meatloaf ingredients together in a bowl until well mixed. Pat into an oven baking dish or your favorite meatloaf pan.
  • 3. Bake for 45 minutes at 350 degrees. Remove from oven and carefully drain grease from pan.
  • 4. Blend glaze ingredients. Spread evenly over top of meatloaf. Return to oven and bake for 25-30 additional minutes.
  • 5. Remove from oven. Cover loosely with foil and let cool for 10 to 15 minutes to firm up. Slice and serve.

1 1/2 teaspoons vegetable oil
1/2 teaspoon dried chili flakes
6 ounces ground chicken
3/4 cup cliced onion
3/4 cup sliced red bell peppers or 3/4 cup yellow bell pepper
3/4 cup small broccoli floret
3/4 cup sugar snap peas or 3/4 cup snow pea pods
3/4 cup zucchini, sliced into matchstick strips
2 cloves garlic, minced
1 teaspoon ginger, minced
2 tablespoons honey
1 1/2 cups chicken broth
1 1/2 teaspoons cornstarch
1 teaspoon soy sauce
1 1/2 teaspoons sesame oil
2 cups hot cooked brown rice

Steps:

  • Heat wok or large skillet over medium/high heat.
  • Add veggie oil and chile flakes.
  • Add soy sauce, chicken, broccoli and bell pepper; stir fry for 1 minute.
  • Add pea pods, zucchini and onion;stir fry for 1 minute.
  • Add garlic, ginger and honey;continue to cook an additional 2-4 minutes until veggies are close to desired doneness.
  • Mix broth, sesame oil and corn starch; add to your pan.
  • Stir constantly until boiling, reduce heat and simmer for 2-4 minutes.
  • Place rice on serving dish (es).
  • Pour stir fry mixture over rice and serve.
  • I served it family style on one big platter and allowed everyone to scoop out what they wanted.
