This is a delicious lower fat, lower calorie baked french fry--evidently soaking the potatoes in the salt-sugar solution draws out some of their water. This way they brown and crisp instead of steam. So yummy! (to me, these taste like the fry-daddy type french fries my mom made me when I was a kid!) My non-dieter husband also deemed these delicious. 159 calories/5 g. fat, 0 mg. cholesterol/28 g. carbs/3 g fiber Weight Watchers Points per serving: 3 This came from a WW book, but I'm not sure which one.

1 1/4 lbs baking potatoes, peeled and cut into 1/2-inch strips
1/2 teaspoon sugar
4 teaspoons oil
1 teaspoon paprika
3/4 teaspoon salt

Steps:

  • Preheat oven to 450 degrees. Spray a non-stick baking sheet w/ non-stick cooking spray.
  • In a lg. bowl, combine potatoes, 1/4 teaspoons of the salt and all of sugar w/ cold water to cover. Soak 15 min, drain and blot dry.
  • In another lg. bowl, toss potatoes w/ oil and paprika. Place in a single layer on the baking sheet.
  • Bake, turning potatoes over as they brown, until cooked through and crisp. (Could take anywhere from 25-45 min., depending on how you cut your potatoes and your oven. My fries only took about 25 minute I checked on my potatoes and turned them about every 5 minute or so. You will see them browning and hear them sizzling.) Sprinkle w/ the remaining 1/2 teaspoons of salt.

5 pounds russet potatoes
Vegetable or peanut oil, for frying
Sea salt

Steps:

  • Peel and rinse the potatoes. Then cut them into sticks by cutting the potato in 4 or 5 vertical pieces, and then cutting each piece into sticks.
  • Place them in a large bowl and cover with cold water. Allow them to soak, 2 to 3 hours. (You can also stick them in the fridge and let them soak overnight.)
  • When you're ready to make the fries, drain off the water and lay the potatoes on 2 baking sheets lined with paper towels. Blot with paper towels to dry them.
  • Heat a few inches of oil in a heavy pot to 300 degrees F. In 3 or 4 batches, cook the potatoes until soft, 4 to 5 minutes per batch. They should not be brown at this point! You just want to start the cooking process. Remove each batch and drain on new/dry paper towels.
  • Once all the potatoes have been fried at 300 degrees F, turn up the heat until the oil reaches 400 degrees F. When the oil's hot, start frying the potatoes in batches again, cooking until the fries are golden and crisp. Remove the potatoes from the oil and drain on paper towels.
  • Sprinkle with sea salt and dive in!

1 russet potato, cut into evenly sized strips
1 quart vegetable oil for frying
salt to taste

Steps:

  • Soak potatoes in a large bowl of water for about 30 minutes. Pat dry thoroughly with paper towels.
  • Heat oil in a deep-fryer or large saucepan to 275 degrees F (135 degrees C). Gently add the potatoes in the hot oil for about 5 minutes, stirring and flipping the potatoes occasionally. Remove potatoes from oil with a slotted spoon to drain on paper towel and to cool completely.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Fry the potatoes again until golden brown, 5 to 6 minutes. Blot with a paper towel. Sprinkle with salt to serve.

  • Preheat oven to 450 degrees. While oven is heating, cut potatoes into fry shapes, approximately 1/4 inch thick.

1 3/4 teaspoons salt, divided
1 -2 russet potato
1 teaspoon extra virgin olive oil

Steps:

  • Bring water to boil in a saucepan over high heat. Add one teaspoon of salt.
  • Preheat oven to 400°F.
  • Peel potatoes and slice into 1/4 inch fries.
  • Weigh the potatoes and measure out 9 ounces.
  • Transfer potatoes to boiling water and cook exactly 2 1/2 minutes.
  • Drain in colander and let cool (about 5 minutes).
  • Transfer cooled potatoes to a mixing bowl and add oil and 1/2 teaspoon of salt.
  • Mix gently to coat.
  • Spread in a single layer on a non stick baking sheet.
  • Bake for 20-25 minutes until crisp and golden.
  • Turn every five minutes during the last half of cooking.
  • Add the remaining salt if desired. (I found them plenty salty without).
  • Note: Mine took 30 minutes to achieve the right level of crispiness--so check for crispness before removing from the oven.
  • Chef Alexander states that this recipe is equal to a medium order of fries and has 5 grams of fat (as opposed to 17 grams of fat in the original version).

1 small baking potato
cooking spray
1 -2 teaspoon mixed Italian herbs
salt

Steps:

  • Preheat oven to 450 degrees.
  • Cover an 8"x8" pan with tin foil and spray with cooking oil and sprinkle on salt.
  • Cut potato to desired wedge sizes.
  • Place potato pieces into quart size bag and spray in some cooking oil and add the herbs.
  • Shake until the pieces are coated evenly.
  • Pour into the 8"x8" pan and add some more salt on top (I like mine really saltly).
  • Place in oven and bake for 15-20 minutes for softer fries and 25-30 minutes for crispier fries.
  • Enjoy with sauce of your choice!
