This vegetarian side dish is comfort food at its finest. Tender broccoli is sauced with creamy Cheddar and crowned with a buttery, crunchy cracker topping. It's sure to steal the show.

- Preheat the oven to 350 degrees F. Butter a 2-quart baking dish or gratin dish.
- Melt 2 tablespoons butter in a medium saucepan over medium-high heat. Add the onions and 1 teaspoon salt and cook, stirring frequently, until the onions are translucent, about 4 minutes. Stir in the flour and stir to coat the onions. Cook for 2 minutes. Remove from the heat and whisk in the hot milk. Return to the heat and bring to a simmer. Stir in the cheese by the handful. Add salt to taste. Add the broccoli to the cheese sauce and pour into the prepared dish.
- Melt the remaining 2 tablespoons butter in a small skillet and stir in the cracker crumbs. Cover the broccoli casserole with the buttered cracker crumbs. Bake until bubbly and lightly browned, about 20 minutes.

- Preheat the oven to 350 degrees. Prepare a 9X13 baking dish by spraying the bottom and sides with non-stick spray. Set aside.
- Boil the broccoli florets in salted water for 3 minutes, drain them, and put them into a large mixing bowl.
- Season the broccoli with salt, pepper, garlic and onion powder. Stir the Velveeta Cheese into the broccoli until fully incorporated and all the cheese is melted.
- Pour the broccoli cheese mixture into the casserole dish and distribute evenly. Sprinkle the shredded cheddar evenly on top of the broccoli.
- Mix the crushed ritz crackers with the melted butter then sprinkle on the top of the casserole. Bake for 25-30 minutes until the cheeses are bubbly. Remove from oven and serve immediately.

- Place in layers of bread cubes, the sausage, then cheese.

- Preheat oven to 350°F. Melt 2 tablespoons butter. Combine melted butter with panko and 1 cup shredded Cheddar cheese; toss to coat. Bring broth and next 3 ingredients to a simmer in a medium saucepan over medium-low heat. Reduce heat to low; cover and keep mixture warm until ready to use. Melt remaining 4 tablespoons butter in a large shallow dutch oven or ovenproof skillet over medium heat. Add onion and celery to dutch oven, and cook, stirring occasionally, 3 to 5 minutes or until onion is lightly browned. Add mushrooms to dutch oven, and stir in 1/2 teaspoon kosher salt and a pinch each of black pepper and ground red pepper. Cook, stirring occasionally, 3 to 5 minutes or until mushrooms are tender. Add garlic, and cook, stirring constantly, 45 seconds. Stir in flour until combined, mixture will be dry. Remove and discard bay leaf and thyme from broth mixture. Gradually stir warm broth mixture into mushroom mixture. Add remaining 1 cup cheese, and stir until well blended and smooth. Stir in rice and next 3 ingredients. Cover Dutch oven with a tight-fitting lid. Bake at 350°F for 25 to 30 minutes or until rice is tender and liquid is absorbed. Remove dutch oven from oven; increase oven temperature to broil. Microwave broccoli, 1/4 cup water, and remaining 1/2 teaspoon kosher salt in a covered microwave-safe bowl at high about 2 minutes or just until broccoli is tender and bright green. Drain and pat broccoli dry. Stir broccoli into rice mixture in dutch oven. If desired, transfer mixture to a broiler-safe serving dish coated lightly with cooking spray. Sprinkle breadcrumb mixture over broccoli mixture. Place on middle oven rack, and broil 2 to 3 minutes or until topping is golden brown. Let casserole stand 5 minutes before serving.

My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
- In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
- Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. - Preheat oven to 350*F
- Place broccoli in a steaming basket on stove and steam for 5 minutes or until broccoli is tender to a fork.
- Remove broccoli from stove and chop into bite sized pieces. Place into a medium size mixing bowl.
- Add to broccoli, soup, mayonnaise, butter, eggs, onion, salt and pepper. Mix well.
- Add 3/4 cup of cheese to broccoli mixture and mix well.
- Pour entire contents into an 8x8" square baking dish.

- 1. Preheat the oven to 350°. Boil the broccoli heads in water for about 10 minutes. Drain them, and then chop them coarsely, including the stems.
- 2. Beat the eggs in a deep bowl, add the ricotta and cheddar cheeses and the cornstarch-milk mixture. Mix thoroughly. Add the chopped onion, salt, and pepper. Add the drained broccoli, mix again, and blend the ingredients well.
- 3. Butter thoroughly an ovenproof baking dish and place the broccoli mixture in it. Bake for about 30 minutes. Serve hot.
