3 large apples, peeled and thinly sliced
1 tablespoon lemon juice
2 cups fresh cranberries
1/2 cup raisins
1/4 cup chopped walnuts
3/4 cup packed brown sugar
1/4 cup cornstarch
1 tablespoon grated orange zest
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pastry for single-crust pie
2 tablespoons butter
TOPPING:
1/2 cup all-purpose flour
1/4 cup packed brown sugar
3 tablespoons cold butter

Steps:

  • In a large bowl, toss apples with lemon juice; add the cranberries, raisins and walnuts. Combine the brown sugar, cornstarch, orange zest, cinnamon and nutmeg; add to apple mixture and toss gently to coat., On a floured surface, roll out dough to fit a 9-in. pie plate; transfer to plate. Trim crust to 1/2 in. beyond rim of plate; flute edges. Fill with apple mixture and dot with butter., For topping, combine flour and brown sugar; cut in butter until crumbly. Sprinkle over filling. Bake at 350° for 50-60 minutes or until topping is golden brown and filling is bubbly. If necessary, cover edges with foil during the last 15 minutes to prevent overbrowning.

Number Of Ingredients 21

Crumb Topping
3 cups Flour
1 cup sugar
1/2 cup packed dark brown sugar
1 teaspoon salt
1 tablespoon cinnamon
8 ounces of unsalted butter or shortening
Pie Filling( for each pie)
6-8 medium to large apples cored peeled and sliced
(preferably 20 ounce, Ida Red or Crispin variety of apples)
1 cup of fresh cranberries
1 cup of chopped walnuts
1 cup of sugar
1 and 1/2 tablespoon of cinnamon
3 tablespoons of flour or cornstarch mixed with sugar and cinnamon
Crust ( Makes enough for 3-4 crusts)
6 cups all purpose flour
2 sticks or 12 ounces of shortening
1 1/4 cup of milk
1 Tablespoon of salt
2 Tablespoons of sugar

Steps:

  • Crust Directions ( can be made by hand or using the paddle on a stand mixer) 1. Cut shortening into flour till small pieces of flour and shortening form the size of small pebbles. 2. Mix milk, sugar and salt together stirring to mix them together. 3. Pour all at once into the flour shortening and mix till it all comes together in a clump and uniform in consistency. 4. Wrap in plastic wrap and refrigerate till morning or for at least 1 hour. Notes: If the dough is too sticky the moisture will be absorbed by the flour overnight. Do not mix too long or the dough will not be flaky. Crumb Directions Place all dry ingredients in mixing bowl with mixer fitted with a paddle Slice butter or shortening into smaller pieces and place with dry ingredients Blend at medium speed till mixture is uniform in color and texture. Stop when mixture holds together when pressed together but easily crumbles apart when run through fingers Assemble pie 1. Mix apples, nuts, cranberries and dry ingredients together in a bowl. 2. Roll out crust and place in pie dish. 3. Mound apple mixture in pie till well above sides of pan ( apples will decrease greatly during baking) 4. Top pie with crumb mixture. Bake @ 375 for 45-55 min. till well browned and apples soft

For the dough (single crust):
1 1/4 cups all purpose flour
1/4 tsp table salt
1/2 cup butter, chilled and diced
1/4 cup very cold ice water
For crumble topping:
3/4 cup all-purpose flour
1/4 cup packed light brown sugar
1/2 teaspoon cinnamon
1/8 teaspoon salt
1/2 stick unsalted butter, cut into 1/2-inch pieces
1/2 cup pecans, coarsely chopped
For the Filling:
2 1/4 lbs honeycrisp apples (about 6), peeled/thinly sliced
5 ounces fresh or frozen (not thawed) cranberries
1/2 cup packed light brown sugar
3 tablespoons all-purpose flour
1 1/2 teaspoon cinnamon
1/4 teaspoon salt
2 1/2 tablespoons fresh lemon juice
1/2 stick (4 TB) salted butter, cut into 1/2-inch pieces
Equipment: a 9 1/2-inch deep-dish pie plate (6-cup capacity)

Steps:

  • Make the Crust: In a bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs, just until there remains small pea-sized butter chunks in the dough. Gently stir in 1 TB of ice cold water at a time, until mixture starts to hold together. It should be pliable enough to stick together when pinched, but not sticky. Work the dough sparingly, using either pastry cutter or cold fingers. The key is not to overwork the dough (avoid using food processor.) The little chunks of butter should still be visible. Gently form dough ball and wrap in plastic. Refrigerate at least 1 hour (up to overnight.)
  • Make crumble topping: Stir together flour, brown sugar, cinnamon, and salt in a bowl. Blend in butter with your fingertips until large clumps form, then stir in pecans. Chill until ready to use.
  • Make fruit filling:Stir together apples, cranberries, brown sugar, flour, cinnamon, salt, and lemon juice in a large bowl.
  • Assemble pie:Preheat oven to 425°F with rack in lowest position. Roll out dough on a lightly floured surface with a lightly floured rolling pin into a 13-inch round, then fit into pie plate. Trim edge, leaving a 1/2-inch overhang, then fold overhang under and crimp decoratively. Transfer fruit filling to pie shell and dot with butter. Loosely cover with foil and bake until apples droop slightly, about 30 minutes.
  • Reduce oven temperature to 375°F. Sprinkle crumble topping over filling and bake, uncovered, until crumble is browned, filling is bubbling, and apples are tender, 45 minutes to 1 hour more. If crumble starts to brown too quickly, loosely cover with foil. Allow pie to cool completely before slicing.
