This blackberry cake is soft and moist and has a fluffy lemon blackberry buttercream frosting. The lemon juice cuts the sweetness and brightens up the whole cake.

6 large eggs (room temperature)
1 cup granulated sugar
1 cup all-purpose flour
1/2 tsp baking powder
3/4 cup warm water
1 Tbsp granulated sugar
4 Tbsp Lemon Juice (from 1 large lemon)
3 cups powdered sugar
3 sticks (1 1/2 cups unsalted butter, room temperature)
8 oz Cream cheese (softened at room temperature)
1/2 tsp salt (I used fine sea salt)
12 oz blackberries
2 Tbsp fresh lemon juice from 1 medium lemon
Crystal sprinkles (optional)

Steps:

  • In the bowl of an electric stand mixer fitted with whisk attachment, beat 6 large eggs 1 min on high speed. With the mixer on, gradually add 1 cup sugar and continue beating 8-10 min until thick and fluffy.
  • Whisk together 1 cup flour and 1/2 tsp baking powder then sift this mixture into fluffy egg mixture one third at a time. Fold with a spatula with each addition just until incorporated. Scrape spatula from the bottom to catch any pockets of flour and stop mixing when no streaks of flour remain. Do not over-mix or you will deflate the batter.
  • Divide evenly between prepared cake pans and bake at 350˚F for 23-28 minutes (my oven took 25 min), or until top is golden brown. Remove from pan by sliding a thin spatula around the edges then transfer to a wire rack and remove parchment backing. Cool cakes to room temp then slice layers equally in half with a serrated knife.
  • Combine 2 Tbsp lemon juice with 1 cup blackberries in small saucepan. Simmer 6-7 minutes or until berries easily mash up with a fork then turn off heat. Strain through a fine mesh strainer, pushing the blackberries through with a spatula until only seeds are left in strainer. Discard seeds and set the puree aside to cool completely to room temp (you should get 5 Tbsp puree).
  • In the bowl of an electric stand mixer fitted with whisk attachment, cream together 3 sticks butter, 3 cups powdered sugar and 1/2 tsp salt on low speed until combined, scraping as necessary. Increase speed to medium-high and beat until white and fluffy (2 to 3 min).
  • Add cream cheese 1-piece at a time and mix until combined then continue to beat 2 min until fluffy, scraping down the bowl as needed. With the mixer on, drizzle in blackberry syrup 1 Tbsp at a time then beat another minute.
  • Slice 1 cup blackberries and set aside. Make your lemon syrup by combining 3/4 cup warm water, 1 Tbsp granulated sugar and 4 Tbsp Lemon Juice.
  • Place first cake layer on serving platter cut-side up **. Brush with 1/4 of the lemon syrup. Spread frosting over the top and layer with 1/3 sliced berries. Repeat with remaining layers placing the final layer cut-side-down, then frost the top and sides.
  • Pipe remaining frosting onto cake. For the roses, use a closed star Wilton 2D tip. Decorate with remaining blackberries and sprinkle sugar crystals if desired.

1 cup fresh blackberries
2 cups all-purpose flour, divided
1/2 cup butter, softened
1 cup sugar
2 large eggs, room temperature
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
3/4 cup buttermilk
Optional: Whipped cream and confectioners' sugar

Steps:

  • Preheat oven to 350°. Toss blackberries with 1/4 cup flour; set aside. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs. Combine baking soda, cinnamon, nutmeg, salt, cloves, allspice and remaining 1-3/4 cups flour; add to creamed mixture alternately with buttermilk, beating well after each addition. Fold in blackberries. , Pour into a greased and floured 9-in. square baking pan. Bake until a toothpick inserted in center comes out clean, 45-50 minutes. Cool on a wire rack. If desired, serve with whipped cream and top with confectioners' sugar and additional fresh blackberries.

1 package yellow cake mix (regular size)
1-1/4 cups water
1/2 cup canola oil
Vanilla ice cream, optional

Steps:

  • Prepare grill or campfire for low heat, using 16-20 charcoal briquettes or large wood chips., Line an ovenproof Dutch oven with heavy-duty aluminum foil; add pie filling. In a large bowl, combine the cake mix, water and oil. Spread over pie filling., Cover Dutch oven. When briquettes or wood chips are covered with white ash, place Dutch oven directly on top of 8-10 of them. Using long-handled tongs, place remaining briquettes on pan cover., Cook until filling is bubbly and a toothpick inserted in the topping comes out clean, 30-40 minutes. To check for doneness, use the tongs to carefully lift the cover. If desired, serve with ice cream.

1 ½ cups white sugar
1 cup unsalted butter, thinly sliced
1 (15.25 ounce) package French vanilla cake mix

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix blackberries and sugar together in a bowl. Transfer to a 9x13-inch glass baking pan and spread evenly over the bottom.

4 cups frozen blackberries or other desired fruit
1/2 cup flour
1 white (vanilla) cake mix, with pudding included for moistness
1 (20-ounce) bottle lemon-lime soda, such as 7-Up

Steps:

  • Put fruit in the bottom of a 12-inch Dutch oven. Sprinkle flour over the fruit for thickening. Sprinkle the dry cake mix over the fruit and flour. Gently pour the carbonated soda over the cake mix. Cover and bake using 4-6 briquets under the Dutch Oven and 18-22 on the lid of the DO to bake the cake. Baking should take about 35-45 minutes. You will know when it is done. The aroma of the fruit and cake are unmistakable. Let stand to cool. 1 box white or yellow cake mix
2 cups blackberries, fresh or frozen
half and half, rather than water

Steps:

  • Follow directions on the box, adding suggested ingredients such as eggs and salad oil. However, instead of adding water as the liquid, add half and half in the quantity specified. Stir ingredients in a large bowl until thoroughly blended. Pour into a 12" Dutch oven. Drop blackberries into batter. Bake according to directions on the mix, using 5-6 briquets under the oven and 20-25 on the lid, baking for 30-40 minutes. It is also one we rarely share, but I love this site so much and have gotten so many wonderful recipes, I decided to give you great cooks something you will truly enjoy and get many, many compliments from. 1 (18 ounce) box yellow cake mix
4 eggs
1 cup oil
2 (3 ounce) boxes blackberry Jell-O or 2 (3 ounce) boxes raspberry Jell-O gelatin
1 (16 ounce) bag frozen blackberries, unthawed with juice (can use fresh berries also)
1/2 cup butter or 1/2 cup margarine, softened
1 (8 ounce) package cream cheese, softened
1 (16 ounce) box confectioners' sugar

Steps:

  • In large bowl mix cake mix, eggs, oil and Jello on high speed with electric mixer about 2 minutes.
  • Add berries; mix until blended well.
  • Pour into greased and floured 9x13-inch pan.
  • Bake at 350 until fork inserted in center comes out clean, about 40-45 minutes.
  • Allow cake to cool completely.
  • In bowl make icing by beating cream cheese and butter until smooth. Gradually add confectioners' sugar.
  • Frost cake, chill and serve.
