I love bread puddings and am always looking for different recipes for them. I haven't tried this yet but sure looks good. This recipe makes 24 servings. It can be easily halved.

1/2 lb braided challah, cut into 1/2- to 3/4-inch-thick slices
8 granny smith apples, peeled, cored and sliced thin (about)
12 eggs
1/4 cup honey
4 cups milk
2 cups whipping cream
1 tablespoon vanilla extract
1 cup chilled butter
1 cup packed brown sugar
1 cup granulated sugar
1 cup flour
1 tablespoon ground cinnamon

Steps:

  • Coat with vegetable oil spray or butter a 13-by-9-inch pan or a 10-by-121/2-inch pan.
  • Line bottom of pan with one layer of bread slices. This should fill about one-third of the depth of the pan. Cover bread completely with one layer of apples. The apples should almost reach the top of the pan.
  • In a large bowl, whisk eggs just until all the yolks are broken. Add honey and mix well. Add milk, cream and vanilla and mix well.
  • Slowly pour custard mixture over apples and bread, giving the liquid time to be absorbed into the bread. (If there is custard left over, pour into individual oven-proof dishes and bake in a water bath until done.).
  • Preheat oven to 350°F.
  • Prepare streusel by combining butter, sugars, flour and cinnamon in a food processor, or combine with a pastry cutter or with hands. Do not overmix or butter will be creamy. Mixture should be crumbly.
  • Evenly crumble streusel over custard mixture in pan; mounding slightly if needed. If you have any leftover streusel it can be sprinkled over leftover custard before baking.
  • Place the pan of bread pudding in the oven on a sheet pan with sides. Or, set in the center of a larger baking pan. Pour water into the sheet pan, filling it about halfway up to make a water bath. Bake in preheated oven 11/2 hours or until custard is set, turning pan halfway through cooking and adding more water if needed. When done, remove from oven and cool about 30 minutes. Serve warm or refrigerate and reheat later. Makes 24 servings.

4 cups soft bread cubes
¼ cup raisins
2 cups peeled and sliced apples
1 cup brown sugar
1 ¾ cups milk
¼ cup margarine
1 teaspoon ground cinnamon
½ teaspoon vanilla extract
2 eggs, beaten
¼ cup white sugar
¼ cup brown sugar
½ cup milk
½ cup margarine
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 7x11 inch baking dish.
  • In a large bowl, combine bread, raisins, and apples. In a small saucepan over medium heat, combine 1 cup brown sugar, 1 3/4 cups milk, and 1/4 cup margarine. Cook and stir until margarine is melted. Pour over bread mixture in bowl.
  • In a small bowl, whisk together cinnamon, 1/2 teaspoon vanilla, and eggs. Pour bread mixture into prepared dish, and pour egg mixture over bread.
  • Bake in preheated oven 40 to 50 minutes, or until center is set and apples are tender.
  • While pudding is baking, mix together sugar, 1/4 cup brown sugar, 1/2 cup milk, and 1/2 cup margarine in a saucepan. Bring to a boil, then remove from heat, and stir in 1 teaspoon vanilla. Serve over bread pudding.

5 tablespoons butter, divided
2 medium Granny Smith apples, peeled and chopped
1 cup sugar, divided
1/2 teaspoon ground cinnamon
1/4 cup brandy or unsweetened apple juice
3 cups refrigerated unsweetened vanilla almond milk
4 large eggs, room temperature, beaten
1/2 teaspoon vanilla extract
8 cups cubed day-old bread
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 350°. In a large cast-iron or other ovenproof skillet, melt 2 tablespoons butter over medium heat. Add apples and 1/4 cup sugar. Cook and stir until apples are golden brown and soft, about 6 minutes. Stir in cinnamon. Remove from heat. Stir in brandy; cook over medium heat until liquid is syrupy, 1-2 minutes. Remove from heat., In a large bowl, whisk milk, eggs, vanilla and remaining 3/4 cup sugar until blended. Gently stir in bread; let stand until bread is softened, about 5 minutes. Stir in apple mixture and walnuts., Add 1 tablespoon remaining butter to skillet; place in oven to heat skillet. Carefully remove hot skillet from oven once butter has melted. , Add bread mixture. Melt remaining 2 tablespoon butter; drizzle over top. Bake until puffed, golden, and a knife inserted near the center comes out clean, 50-55 minutes. Serve warm.

1 cup sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup apple juice or 1/3 cup orange juice
1 cup chopped apple (skins or not, both okay)
1/3 cup raisins

Steps:

  • Cream the margarine and sugar.
  • Beat in the eggs and vanilla.
  • Combine the flour, baking soda and salt in a small bowl.

This recipe comes from the Honolulu Advertiser & is about 15 years old. The apple cinnamon mixture is very rich & yummy. Sweet bread is readily available in Hawaii, but I bet the pudding would come out fine with regular white bread too.

2 cups peeled and chopped apples
2 tablespoons lemon juice
2 tablespoons cinnamon (more or less to taste)
3 tablespoons butter
1/2 cup brown sugar
3 cups sweet bread, cubes
2 cups milk
2 large eggs
1/2 cup sugar
2 teaspoons vanilla
1/2 cup raisins

Steps:

  • Preheat oven to 350 degrees.
  • Heat 3 T butter in a nonstick frying pan& saute chopped apples& lemon juice on medium low heat.
  • Add brown sugar& cinnamon& continue cooking til the juice drains from the apples& thickens.
  • Set aside.
  • Place bread cubes in a 9 by 9" pan, lightly greased with butter.
  • Sprinkle raisins over the bread.
  • In a large bowl, beat eggs& add white sugar, vanilla, milk,& sauted apple mixture.
  • Mix well& pour over the bread cubes.

1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
