POUND CAKE CHURRO BITES

Half a 1-pound all-butter frozen pound cake, thawed and cubed
4 tablespoons (1/4 cup) salted butter, melted
1 cup granulated sugar
3 tablespoons ground cinnamon
12 ounces prepared dulce de leche

Steps:

  • Preheat the oven to 350 degrees F.
  • Line a large baking sheet with parchment paper. Place the pound cake cubes on the lined baking sheet in a single layer and bake until toasted and firm, about 10 minutes. Let cool completely.
  • Brush the toasted cubes with the butter. Mix the sugar and cinnamon together in a large bowl. Toss the cubes in the cinnamon-sugar. Thread the cubes on ten 6-inch skewers. Fill each of 10 shot glasses a third of the way full with the dulce de leche. Stand one churro skewer upright in each glass of dulce de leche and serve.

Cinnamon Sugar Pound Cake Bites turn plain pound cake into sweet, cinnamon-y, bite-size treats!

1/3 cup granulated sugar
1 & 1/2 to 2 teaspoons ground cinnamon
2 tablespoons unsalted butter
1 standard loaf-size pound cake, cut into 1-inch cubes*

Steps:

  • Place a sheet of waxed paper near your stovetop.
  • Combine the sugar and cinnamon in a bowl. Place near the waxed paper.
  • Melt the butter in a large skillet over medium heat.
  • Add several pieces of pound cake. Turn each piece over when the undersides are lightly toasted and continue toasting.
  • Once the batch of cake pieces are toasted, transfer them to the bowl of cinnamon sugar. Shake to cover and then transfer to the waxed paper.
  • Repeat steps 4 & 5 with the remaining cake pieces.
  • Serve warm or at room temperature.

1 cup shortening
2 cups sugar
3 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3 eggs
1 cup buttermilk
2 teaspoons almond extract or 2 teaspoons orange extract (1 tsp each of any 2 flavorings you like etc.)

Steps:

  • DUMP all ingredients in large mixing bowl and mix with electric mixer on medium speed for 15 minutes.
  • Pour batter into greased Bundt or tube cake pan.
  • Put into COLD oven.
  • Set oven temperature at 325 degrees and bake for 1 hour 20 minutes, or until cake tests done.

3 cups all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon baking soda
1 cup unsalted butter (2 sticks)
2 cups granulated sugar
1 cup dark brown sugar
4 eggs
1 cup buttermilk
1 teaspoon vanilla
1/4 teaspoon almond extract
1 orange, zest of
lemon, zest of
1/2 cup prune, coarsly chopped brandy soaked

Steps:

  • Heat oven to 325 degrees. Position rack in bottom third of the oven. Butter and flour a 9X3 inch tube pan, or spray with nonstick cooking spray.
  • In large bowl, whisk together the flour, salt, and soda. In the bowl of an electric mixer, cream the butter and sugars at medium high speed until light and fluffy, about 3 minutes. Beat in the eggs, one at a time, mixing well after each addition. Add the flour mixture alternately with the buttermilk. Mix in the extracts and zests, and fold in the prunes.
  • Bake for one hour, until the cake pulls away from the pan, and a toothpick inserted into the cake comes out clean.
  • To Make Brandy Soaked Prunes.
  • Empty a 16 ounce container of prunes into a clean, sealable glass jar and pour brandy over the top until it covers them by about an inch. Allow prunes to macerate at least one day before making cake. Kept in a cool, dark place, the prunes will keep for months.
