GRANDMA PARSON'S CHEERY CHERRY DATE NUT DROP COOKIES

My sister has a life long bud, Mary Jane who had a Grandma Parsons that loved to bake. Grandma Parsons gave this recipe to my Mom, and so there cookies have been in both families for several generations now. These cookies are moist and loaded with fruits,nuts and dates, a perfect Christmas combination.

Number Of Ingredients 10

3 1/2 c all purpose flour
1 tsp baking soda
1/2 tsp salt
1 c butter, softened
2 c light brown sugar, packed
2 eggs
1/2 c buttermilk
1 c walnuts, chopped
1 c maraschino cherries, halved
2 c dates, chopped

Steps:

  • 1. Sift together flour, soda, salt. Set aside.
  • 2. Cream butter, brown sugar, eggs. Mix til light and fluffy
  • 3. Add creamed mixture alternately with flour mixture, then add buttermilk.
  • 4. Stir in nuts, cherries, dates.
  • 5. Drop by teaspoons on a lightly greased cookie sheet.
  • 6. Bake in a preheated 350 degree oven for 12 to 15 minutes, or unti lightly browned.

BANANA NUT BUTTERSCOTCH DROP COOKIES

These are yummy and quick to make. I buy bananas while on sale, let them ripen, then freeze them in their own skins. when I am ready to use them I just thaw and pop them right out of their skins

1 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
3 dashes nutmeg
1 cup sugar
1/2 cup butter
2 eggs
1 cup ripe banana
1/2 teaspoon banana flavoring
1 1/2 cups oatmeal
1/2 cup chopped walnuts
1 (11 ounce) bag butterscotch chips

Steps:

  • Mix dry ingredients together set aside.
  • Cream sugar and butter, add eggs mixing in well, stir in bananas and flavoring, add dry ingredients and oatmeal fold in nuts and chips (The dough may seem a little sticky and you may be tempted to add more flour, but first try baking off a few. Found that adding more flour made them dry after baking, the oatmeal seems to swell some during the baking process).
  • Drop onto lightly greased baking sheet, bake at 375°F 10-12 minutes.

1 cup shortening
2 cups packed brown sugar
2 eggs
1 teaspoon vanilla extract
¼ teaspoon salt
¼ cup sour milk
3 ½ cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream together the shortening and the sugar. Add the eggs and beat for 2 minutes. Beat in the vanilla, salt, sour milk, flour, cream of tartar, baking soda and cinnamon. Stir in the chopped walnuts. Drop cookies 3 inches apart on a baking sheet.
  • Bake at 350 degrees F (175 degrees C) for 12 minutes. Chopped dates can be added for extra flavor.

½ cup hot water
1 cup dried currants
1 cup shortening
2 cups brown sugar
2 eggs
1 teaspoon vanilla extract
3 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup buttermilk
½ cup chopped walnuts
6 tablespoons butter
¼ cup hot water
½ teaspoon vanilla extract
4 cups confectioners' sugar

Steps:

  • In a small bowl, soak currants in 1/2 cup of hot water until swollen; drain and set aside. Preheat oven to 400 degrees F (200 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the shortening and brown sugar until smooth. Beat in the eggs, one at a time, then stir in the 1 teaspoon vanilla. Combine the flour, baking powder, baking soda and salt, stir into the creamed mixture alternately with the buttermilk. Fold in the chopped walnuts and dried currants. Drop by rounded spoonfuls onto the cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. When the cookies are cool, frost with the brown butter frosting.
  • To make the frosting: Melt butter in a small saucepan over medium hat until golden brown. Stir in the 1/4 cup of water and 1/2 teaspoon vanilla. Beat in the confectioners' sugar 1/2 cup at a time until icing is of a spreadable consistency.

1-1/4 cups packed brown sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour

3/4 teaspoon baking soda

1 cup chopped dried apricots
1 cup chopped pecans

Steps:

  • In a bowl, cream shortening and brown sugar. Beat in egg, milk and vanilla. Combine dry ingredients; gradually add to creamed mixture. Stir in apricots and pecans. , Drop by rounded tablespoonfuls 3 in. apart onto ungreased baking sheets. Bake at 375° for 10-13 minutes or until light golden brown. Cool for 2 minutes; remove to wire racks.

CHOCOLATE NUT DROP COOKIES

On the recipe card Gramma Bea says this recipe came out of "The Spry Cook Book". I am only guessing here but I bet this recipe is from the 1950's. It is a wonderful soft cookie that always shows up on our Christmas cookie tray.

1/2 c spry (shortening)
1 c brwn sugar (firmly packed)
1 egg
2 oz melted chocolate (unsweetened)
1/2 tsp salt
1 tsp vanilla
1/4 tsp soda
1 1/4 c flour
1/2 c butermilk
1 c copped walnuts (optional)

Steps:

  • 1. Combine shortening, brown sugar, egg, melted chocolate, vanilla & salt. Beat well. Add flour, soda & buttermilk. Mix well. If you want to you can add the chopped walnuts now. Drop by teaspoons on the cookie sheet and bake at 350 for 12 minutes. Cool and frost with a chocolate frosting & place 1/2 walnut or pecan on each cookie.
