This is a tasty way to use the dried fruit that comes in gift baskets. I substituted the pears in an apricot bread recipe that I've had for more years than I can remember. The aroma of the baking bread is delightful! Slices may be toasted and buttered if preferred.

Number Of Ingredients 12

6 ounces dried pear halves
2 cups hot water
2 cups flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1 cup sugar
2 tablespoons melted butter
1 large egg
1/4 cup water
1/2 cup orange juice
1/2 cup chopped pecans

Steps:

  • Cover dried pears with 2 c.
  • hot water and let soak 30 minutes.
  • Drain pears and snip into small pieces.
  • Sift dry ingredients together (except sugar).
  • Combine in another bowl sugar, butter, egg, 1/4 c.
  • water and orange juice.
  • Mix well; add dry ingredients.
  • Stir in pears and pecans.
  • Pour mixture into a 9x5x3-inch loaf pan, which has been lightly greased and floured.
  • Bake at 350F for 55-60 minutes.
  • Cool 10 minutes on a wire rack; remove from pan and cool completely on rack.
  • Makes 1 loaf.
  • May be frozen.

2 cups all-purpose flour
1 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
1-1/2 cups fresh or frozen blueberries
1 teaspoon grated orange zest
2 large eggs
1 cup whole milk
3 tablespoons vegetable oil
Whipped cream cheese, optional

Steps:

  • In a bowl, combine flour, sugar, baking powder and salt. Stir in blueberries and orange zest. In another bowl, beat eggs; add milk and oil. Stir into dry ingredients just until moistened. Pour into a greased 9x5-in. loaf pan. Bake at 350° for 1 hour or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes; remove to a wire rack to cool completely. Serve with cream cheese if desired.

This recipe was found in Better Homes and Gardens Cook Book. I've used it for years, adjusting it to my specific tastes. I use either dried blueberries, or cranberries. I have only once used dried apricots, diced. It's fabulous either way, any way.

2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 large eggs
5 medium bananas, mashed
1 cup sugar
1/2 cup butter, melted
1/2 cup walnuts or 1/2 cup pecans, chopped
1/2 cup dried blueberries, dreid cranberries or 1/2 cup dried apricot, cut into fours

Steps:

  • preheat oven to 350degrees.
  • grease bottom and 1in up the sides of TWO bread 7 1/2x3 1/2x2in bread pans; set aside.
  • combine flour, baking powder, baking soda, cinnamon and nutmeg.
  • in a medium mixing bowl, or food processor, combine eggs, bananas, sugar and butter. (I use I Can't Beleive It's Not Butter). Mix for 30 seconds.
  • fold in nuts of your choice.
  • spoon batter into prepared pans.
  • bake at 350 for 40-45minutes, or until a toothpick inserted in the center of bread comes clean.
  • cool in pan on a wire rack for 10minutes. remove from pan. cool completely on a wire rack and enjoy.

1/4 cup(s) ideal or splenda sugar
1/2 cup(s) packed brown sugar
2 1/2 cup(s) all purpose flour
2 teaspoon(s) baking powder
1 teaspoon(s) ground cinnamon

1/2 teaspoon(s) baking soda
1/2 cup(s) dried blueberries or cranberries

ADDED INGREDIENTS FOR BREAD
1 1/2 cup(s) buttermilk or sour milk
1/4 cup(s) butter,melted or 1/2 stick of butter melted
1 teaspoon(s) vanilla
2 medium eggs

Steps:

  • JAR MIX:
  • Layer ingredient in 1-quart food storage jar with tight-fitting lid in following order: sugar,brown sugar;Combine flour;baking powder,cinnamon;baking soda; blueberries; and pecan.
  • MAKE BREAD:
  • Preheat oven to 35 F. Grease a9x5-inch loaf pan; set aside.
  • Place content of jar in a large bowl: mix well.
  • Beat eggs in a med bowl; stir in buttermilk, butter and vanilla. Stir egg mixture int flour mixture just until dry ingredients are moistened. Pour batter into prepared pan.
  • Bake 40 minutes or until toothpick inserted in center of bread comes out clean. Cooling pan for 15 minutes. Cool on rack completely.
