CRANBERRY BANANA NUT BREAD

This one came from an old school cook book. Really good bread. Great for bake sales and gifts. You can add Cool Whip for a dessert, or slice it for a really interesting sandwich.

Number Of Ingredients 11

4 cups flour
2 teaspoons baking soda
2 teaspoons salt
3 cups sugar
2 eggs
2/3 cup orange juice
4 tablespoons vinegar
1/2 cup oil
1 1/2 cups mashed bananas
2 1/2 cups cranberries
2 cups nuts (your choice)

Steps:

  • In a bowl, sift the first 4 ingredients; set aside.
  • Mix the next 4 ingredients together in another bowl.
  • Fold flour mixture with orange juice mixture, then stir in bananas, cranberries and nuts.
  • Pour into 2 lightly greased loaf pans.
  • Bake at 350° for 45 minutes to 1 hour, or until a toothpick inserted comes out clean.
  • *Note: I haven't made this bread in quite awhile and for some reason my recipe doesn't have the bake time written down, so I'm going by the bake time on a banana bread and a cranberry bread.
  • I suggest checking at 30 minutes to be on the safe side.

Another favorite quick bread that my mom made when I was a child. I often make small tins of my apricot nut bread, pumpkin bread, and cranberry bread to give as teacher gifts, along with the recipe for each, during the holidays.

Number Of Ingredients 11

2 1/2 cups flour
1 cup sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
3 tablespoons butter, melted
1/2 cup milk
3/4 cup orange juice
1 egg, beaten
1 cup nuts, chopped
1 cup dried apricot, chopped
orange rind, grated,to taste

Steps:

  • In a small saucepan, cook the apricots in water until soft; drain.
  • Preheat oven to 350 degrees.
  • Generously grease and lightly flour two 7x3x2-inch loaf pans.
  • In a large bowl, combine flour, sugar, baking powder, and salt; mix well.
  • Stir in butter, milk, orange juice, and egg; mix well.
  • Fold in dried apricots, nuts, and orange peel.
  • Spoon into prepared pans.
  • Bake 55 minutes or until a toothpick inserted in center comes out clean.
  • Cool on rack 15 minutes.
  • Remove from pan.
  • Cool completely.

This is my most asked-for recipe. I've used it for many years, which is obvious from my recipe card that's yellowed and full of stains. The fruity appearance and taste of this easy-to-make bread blend beautifully with our warm Florida sunshine. It's always a hit whenever I serve it.

1 cup snipped dried apricots
2 cups warm water
1 cup sugar
2 tablespoons butter, softened
1 large egg
3/4 cup orange juice
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
3/4 cup chopped nuts

Steps:

  • Preheat oven to 350°. Soak apricots in warm water for 30 minutes. Meanwhile, in a bowl, cream the sugar, butter and egg. Stir in orange juice. Combine flour, baking powder, baking soda and salt; stir into creamed mixture just until combined. Drain apricots well; add to batter with nuts. Pour into a greased 9x5-in. loaf pan. Bake at 350° for 55 minutes or until bread tests done. Cool 10 minutes in pan before removing to a wire rack.

This is so good and reminds me of a real moist kind of a sweet quick bread. Everybody asks for the recipe: this bread is moist, and easy to make too. Note: If you are using frozen blueberries, you can thaw them in the microwave for about 3 minutes. However, you need to increase the amount of blueberries to 3/4 cup.

½ cup fresh blueberries
1 ⅝ cups all-purpose flour
½ cup quick cooking oats
½ cup chopped pecans
1 teaspoon baking soda
¼ teaspoon salt
½ cup shortening
1 cup white sugar
2 eggs
1 cup mashed bananas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan.
  • In a medium bowl, toss blueberries in 2 tablespoons flour. Gently stir blueberries together with oats, nuts, 1 1/2 cups flour, baking soda, and salt.
  • In a large bowl, cream shortening. Gradually add sugar, beating until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in mashed banana. Add blueberry mixture to creamed mixture, and stir just until moistened. Spoon batter into the prepared pan.
  • Bake in preheated oven until a wooden toothpick comes out clean when inserted in the center of the loaf, 50 to 55 minutes. Cool in pan for 10 minutes. Remove from pan, and cool completely on a wire rack.

3 1/2 cups unbleached all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/4 pound (1 stick) butter, room temperature
1 cup sugar
1 tablespoon plus 1 teaspoon freshly grated orange zest
2 large eggs
2/3 cup orange juice
2/3 cup milk
2/3 cup finely chopped apricots
2/3 cup chopped walnuts
3 cups cranberries, picked over and chopped in a food processor

Steps:

  • Sift together the flour, baking powder, baking soda, and salt. Cream the butter and sugar in a large bowl. Beat in the orange zest and eggs, 1 at a time. Add the orange juice and milk and beat until mixed thoroughly. It will appear curdled.
  • Add the flour mixture and beat until it is just moistened. Stir in the apricots, walnuts, and cranberries.
  • Place baking rack in middle of the oven. Preheat the oven to 350 degrees F. Butter and flour five 5 3/4- by 2 1/4-inch loaf pans.
  • Pour the batter into the pans. Bake for 45 minutes. Test for doneness with a toothpick - it should come out clean. Remove the bread from the pans, transfer to a wire rack, and let them cool on their sides.

This recipe was found in Better Homes and Gardens Cook Book. I've used it for years, adjusting it to my specific tastes. I use either dried blueberries, or cranberries. I have only once used dried apricots, diced. It's fabulous either way, any way.

  • grease bottom and 1in up the sides of TWO bread 7 1/2x3 1/2x2in bread pans; set aside.
  • combine flour, baking powder, baking soda, cinnamon and nutmeg.
  • in a medium mixing bowl, or food processor, combine eggs, bananas, sugar and butter. (I use I Can't Beleive It's Not Butter). Mix for 30 seconds.
  • fold in nuts of your choice.
  • spoon batter into prepared pans.
  • bake at 350 for 40-45minutes, or until a toothpick inserted in the center of bread comes clean.
  • cool in pan on a wire rack for 10minutes. remove from pan. cool completely on a wire rack and enjoy.

1 cup sugar
1 1/2 tablespoons baking powder
1/2 teaspoon salt

1/2 cup skim milk
2 egg whites
1/4 cup orange juice
4 teaspoons orange zest
1/4 cup finely chopped pecans
10 large dried apricot halves, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Spray a non-stick 9 by 5 inch loaf pan with non-stick cooking spray.
  • Measure all ingredients into a large mixer bowl.
  • Beat on medium speed for 30 seconds, scrape sides and bottom of bowl.
  • Pour into pan and bake in preheated oven for 35 to 45 minutes or until a wooden pick inserted in center comes out clean.
  • Allow to cool in pan for 5 minutes; turn out and cool thoroughly.

This is a recipe from one of my mother's old cookbooks. If you don't have buttermilk, sour milk will do, or you can mix 1 T vinegar with milk to make 1 cup.

1 cup brown sugar
1/2 cup butter, softened
2 eggs
1 cup buttermilk

  • Preheat oven to 375°F.
  • Grease two standard size loaf pans.
  • Mix cranberries, blueberries and granulated sugar together in saucepan, cooking over medium heat and stirring until sugar is dissloved.
  • Remove from heat and set fruit aside to cool.
  • Mix brown sugar and butter in mixing bowl and beat until blended. Add eggs and beat well.

I was making cranberry bread one day and wanted to try something a little different. I found a jar of apricot jam in the refrigerator and decided to spoon the jam into the center of the bread. 1/4 cup apricot preserves

Fold in the cranberries., Pour into a greased and floured 9x5-in. loaf pan. Cut apricots in the preserves into small pieces; spoon preserves over batter. Cut through batter with a knife to swirl. Bake at 350° for 65-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack.
