ODEN WITH HOMEMADE SHRIMP BALLS

Oden is a comforting Japanese one-pot dish in which assorted fish cakes, vegetables, fried tofu and hard-boiled eggs are simmered in a dashi broth. Hondashi, bonito soup stock made from dried bonito and flavors of kombu, is a convenient pantry item that creates instant dashi. Homemade shrimp balls with fragrant ginger, garlic and scallions replace store-bought fish cakes in this version. As they poach alongside earthy mushrooms and daikon, the soup becomes fortified with deep seafood flavor. Inari-no-moto, found canned in most Asian markets, is deep-fried tofu that has been cooked in dashi, soy sauce and mirin until it softens and absorbs the sauce. The tofu adds texture and another layer of seasoning, but the hot pot is just as tasty without. Add udon noodles for a heartier meal.

4 large eggs
2 tablespoons safflower or canola oil
4 ounces shiitake mushrooms, stemmed and thinly sliced
1 pound daikon, peeled and cut into 1-inch slices or pieces
12 ounces napa cabbage (about 1/2 small head), chopped into 2-inch pieces
2 tablespoons instant dashi powder
1 pound cleaned, tail-off medium shrimp, chopped into 1/4-inch pieces
2 tablespoons chopped scallions
2 teaspoons minced fresh ginger
1 teaspoon minced garlic
1 teaspoon kosher salt
1 tablespoon cornstarch
4 ounces inari-no-moto (seasoned tofu skins), sliced 1-inch thick
1 pound cooked udon noodles (8 ounces dry), optional
Hot mustard, for serving

Steps:

  • In a medium saucepan, arrange eggs in a single layer and add enough water to cover by 1 inch. Bring to a full boil, then cover and turn off the heat. Let stand for 10 minutes. Drain and run under cold water until eggs are cooled, then peel.
  • Meanwhile, in a large pot, heat oil over medium. Add mushrooms and cook, stirring occasionally, until softened and lightly golden, about 3 minutes. Add 8 cups water, the daikon, cabbage and instant dashi powder, and bring to a boil over high heat. Reduce heat to medium and simmer until daikon is tender, about 15 minutes.
  • While daikon cooks, in a medium bowl, combine shrimp, scallions, ginger, garlic, salt and cornstarch, and mix well. Using about a scant 2 tablespoons per shrimp ball, form mixture into 16 balls about 1 1/2 inches in diameter. Mixture will be sticky, so work with moistened hands.
  • Add shrimp balls, inari-no-moto and eggs to pot and simmer until shrimp balls turn pink and are cooked through, about 5 minutes. Stir in udon, if using.
  • Divide the shrimp balls, vegetables, tofu and udon among bowls. Halve eggs and add to bowls. Fill bowls with broth and serve with hot mustard on the side for dipping.

4 scallions, green and white parts, coarsely chopped
2-inch piece fresh ginger, peeled
1 serrano or jalapeno chili pepper, seeded and finely chopped, divided
2 cloves garlic, crushed
1/2 cup tamari, plus 3 tablespoons, dark soy, found on the international aisle
1/4 cup fresh cilantro leaves, a big handful
2 limes, zest and juice
1/2 pound medium shrimp, shelled and deveined, tails removed
1 pound ground pork
4 tablespoons vegetable oil
1 teaspoon dark sesame oil
1 tablespoon honey
3 tablespoons water
Toothpicks

Steps:

  • In the bowl of a food processor combine the scallions, half of the ginger - grated or minced, half of the chopped chile pepper, garlic, 3 tablespoons tamari, cilantro and the lime zest. Pulse for 30 seconds, scrape down the bowl and then continue to process 1 minute or until finely ground. Add the shrimp and pork, process until the shrimp are ground into small pieces and the mixture is well combined but not so fine that it becomes a paste, about 1 minute. Roll the shrimp and pork mixture into to 24 balls, about the size of a large walnut. If you dip your hands in water before rolling the mixture the rolling goes a little easier.
  • Preheat a large nonstick skillet with 4 tablespoons of vegetable oil over medium heat. Add the balls and don't move them until they are brown on 1 side, about 2 minutes. Turn the balls and continue to cook, browning on all sides until cooked through, about 4 minutes.
  • While the balls are cooking make the spicy lime dipping sauce: in a bowl combine the remaining ginger, chili pepper, 1/2 cup tamari, lime juice, toasted sesame oil, honey and 3 tablespoons (a splash) of water. Taste and adjust the seasoning, if you find it to be too salty, add another drizzle of honey.
  • Platter the shrimp and pork balls with a bowl of the spicy lime dipping sauce and toothpicks.

1 1/2 lb large shrimp (30), peeled and deveined
8-oz can water chestnuts (1 cup), rinsed and finely chopped
1 large egg white, lightly beaten
3 tablespoons finely chopped chilled fresh pork fat or lard
1 1/2 tablespoons rice wine or Scotch
1 tablespoon grated peeled fresh ginger
2 tablespoons finely chopped scallion greens
2 1/4 teaspoons coarse salt
2 tablespoons cornstarch
3 cups panko (Japanese bread crumbs)
About 8 cups vegetable oil
Accompaniment: apricot dipping sauce

Steps:

  • Pulse shrimp in a food processor until finely chopped. Transfer to a large bowl, then stir in water chestnuts, egg white, pork fat, rice wine, ginger, scallion, salt, and cornstarch. Beat shrimp mixture vigorously with a wooden spoon and throw it against side of bowl until combined well and compacted. Wet your hands with cold water and form teaspoons of shrimp mixture into balls, arranging in 1 layer on a wax-paper-lined tray. Coat balls, 1 at a time, in panko, then arrange in 1 layer on another wax-paper-lined tray.
  • Preheat oven to 425°F.
  • Heat oil in a 5-quart pot until a deep-fat thermometer registers 375°F and fry balls in 4 batches, turning, 1 to 1 1/2 minutes, or until golden and just cooked through. (Return oil to 375°F between batches.) Transfer with a slotted spoon to paper towels to drain. When all shrimp balls are fried, reheat on a rack set in a shallow baking pan in middle of oven until just hot, about 2 minutes.

SASSY SEASONED SHRIMP

I came up with this recipe for the Mixing Pot Challenge of the Zaar World Tour 6. I tried to represent my team "A Seasoned Sailor and his Sassy Sirens" in an Asian marinade that is great for shrimp. Its zesty and sweet, and has a bit of kick, just like our team. I used the marinade for grilled shrimp, I also tried it sauteed and liked the grilling method best. I recommend saving out about 1/4 cup of the marinade as a dipping sauce for the grilled shimp. We served it with fried rice as a side dish, but this would also make a wonderful appetizer! If you like it spicy, use 4 tablespoons of the chili garlic sauce. I used 3 and it was a little spicy but I could have gone hotter. You can also add some crushed red pepper to kick it up. Prep time includes marinating time.

1 teaspoon fresh ginger, minced
2 tablespoons rice wine vinegar
3 tablespoons chili-garlic sauce
1/4 cup green onion, sliced
1 tablespoon dark sesame oil
1/4 cup low sodium soy sauce
3/4 cup mango nectar
2 lbs shrimp, peeled and deveined

Steps:

  • Mix first eight ingredients in a bowl (or simply put all in a large ziploc and squish to mix). You can reserve 1/4 cup of the marinade as a dipping sauce.
  • Put the marinade in a large ziploc bag and add shrimp.
  • Marinate in the refrigerator at least 2 hours.
  • Take shrimp out of bag and thread onto skewers.
  • Grill over medium high heat for about 4 minutes each side, or until shrimp are done.
  • Serve with reserved marinade as a dipping sauce.

3 russet potatoes
1 tablespoon butter
1 egg yolk
2 teaspoons salt
2 teaspoons pepper
2 teaspoons paprika
2 teaspoons garlic powder
2 tablespoons flour, if the texture is too wet
flour
1 egg
panko breadcrumb
oil, for frying

Steps:

  • Peel off the shrimp skin (leave the tail on) and salt and pepper the shrimp for seasoning.
  • Cook the potatoes, mash them into small crumbs and add in butter and egg yolk. (If the texture is too wet, go ahead and add in some flour.)
  • Mix until smooth and then add in salt, pepper, paprika, and garlic powder for seasoning, mix well.
  • Take about ⅓ cup mashed potato, form into a ball shape, poke a hole on the top, then put a shrimp inside, cover the shrimp well, and tighten the ball.
  • Dip the ball into flour, egg wash, and panko, and make sure the ball is fully covered well with all three ingredients. If needed, refrigerate the balls before frying.
  • Heat the oil between 350ºF to 375ºF (180ºC to 190ºC), then fry the shrimp ball until the outside is golden brown.
  • Let it cool down a bit, and then serve it right away with any kind of sauce.
  • Enjoy!

Another super appetizer using one of our fave's SHRIMP! Actually great made a couple days before you require! You can usually get two small balls or one large one - whichever you prefer. I have also made a larger batch of this recipe and rolled into separate mini-balls! Use your imagination - anything goes!

2 package(s) cream cheese, small, softened (3oz)
1 package(s) shrimp, small salad, frozen
1 tablespoon(s) lemon juice
1 tablespoon(s) onion, minced jar (or finely chopped fresh)
1 tablespoon(s) worcestershire sauce
1/2 teaspoon(s) dill weed
1 teaspoon(s) horseradish (jar) pure
1/2 teaspoon(s) old bay seasoning
1/2 cup(s) parsley flakes

Steps:

  • In collander rinse frozen shrimp with cold water until thawed. Allow to drain well while preparing the reaminder of ingredients.
  • In large mixing bowl combine remaining ingredients and mix well. Add shrimp into mixture and mix well. Shape into ball(s) and roll in parsley flakes.
  • Wrap tightly in plastic wrap and refrigerate until ready to serve. Tip: You may adjust the horseradish to your liking. This recipe contains mild amounts - so for my spicy family I add about 2 tab of horseradish! Enjoy with your favorite crackers!
