This is really good granola. I love it on my oatmeal or cream of wheat in the morning.

4 c regular rolled oats
1 1/2 c sliced almonds
1/2 c packed brown sugar
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 c cooking oil ( i use canola oil )
1/4 c honey
1 tsp vanilla
1 1/2 c your favorite dried fruit ( i use a mixture cranberry, pineapple, blueberry

Steps:

  • 1. Preheat oven to 300 degrees. In a bowl mix oats, almonds, brown sugar, salt, and cinnamon. In a saucepan warm oil and honey. Whisk and stir in vanilla. Carefully pour liquid over oat mixture. Stir gently with a wooden spoon; now finish mixing by hand.
  • 2. Spread evenly in a 15x10x1-inch baking pan. Bake for 40 minutes or until lightly browned, stirring every 10 minutes. Cool in pan on wire rack. Stir in you dried fruit. Store in an airtight container for up to 1 week or in freezer for 3 months. Makes 8 cups.

4 cups old fashioned oats
1/2 cup sliced almonds
1/2 cup packed light brown sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 cup cooking oil
1/4 cup honey
1 teaspoon vanilla
1 1/2 cups raisins or 1 1/2 cups dried cranberries

Steps:

  • In a bowl, mix oats, almonds, brown sugar, salt and cinnamon. In a sauce pan, warm the oil and honey. Whisk or stir in the vanilla. Carefully pour liquid over the oat mixture. Stir gently with wooden spoon, finish mixing by hand.
  • Preheat oven to 300°F Spread granola in a 15x10x1" pan. Bake 40 minutes, stirring carefully every 10 minutes.
  • Transfer granola-filled pan to a cooling rack. Cool completely.
  • Stir in raisins or dried cranberries. Seal granola in an air-tight container or self sealing plastic bags.
  • Store at room temperature for 1 week or the freezer for 3 months.
