5 pounds apples, peeled and sliced (about 13 cups)
3/4 cup packed light brown sugar
2/3 cup unsweetened apple juice
2 teaspoons ground cinnamon
1 teaspoon pumpkin pie spice
1 tablespoon vanilla extract

Steps:

  • In a 5- or 6-qt. slow cooker, combine the first five ingredients. Cook, covered, on low 6-8 hours or until apples are soft., Add vanilla; stir to break up apples. Reserve 3/4 cup applesauce for Double-Duty Applesauce Mini Muffins. Serve remaining applesauce warm or refrigerate and serve cold. Freeze option: Freeze cooled applesauce in freezer containers. To use, thaw in refrigerator overnight.

1/2 cup butter
1/2 cup sugar
2 eggs
1 cup applesauce
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup margarine
sugar
cinnamon

Steps:

  • In a bowl, cream 1/2 cup butter and sugar. Add eggs and applesauce.
  • In another bowl, mix flour, baking powder and salt. Add to butter mixture.
  • Grease mini-muffin tins. Bake at 375°F for 12-15 minutes. Let cool.
  • Melt 1/2 stick butter. Make a mixture of sugar and cinnamon in bowl. Dip muffin tops in butter, then roll in sugar/cinnamon mixture.

3/4 cup white whole wheat flour (all the nutrition of whole wheat, not nearly the "bite." its taste is sweeter and more mild, due to )
3/4 cup unbleached all-purpose flour
1/2 cup flax seed meal (ground flax seed, found in the "nutritional" isle at many grocers)
1/4 cup light brown sugar
1/2 cup white sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3/4 teaspoon fresh ginger, minced (more or less to taste)
1 egg, beaten (or egg substitute)
1 cup applesauce
2 tablespoons butter, melted (substitute 2 tbsp applesauce OR 2 tbsp oil for a vegan alternative)
3 tablespoons light brown sugar (for sprinkling on top of muffins)

Steps:

  • Preheat oven to 350°F.
  • Combine the dry ingredients in small bowl.
  • Combine the wet ingredients in large bowl, and then add dry ingredients and stir until combined.
  • Spray a mini muffin tin with non-stick spray and measure the (slightly sticky) batter into the tins by the tablespoon (don't use muffin liners, the dough sticks too much).
  • Sprinkle each muffin with a bit of light brown sugar to coat the top (don't skip this step if you don't have to, the brown sugar adds a lovely touch to the muffins).
  • Bake for 10 minutes, let them sit in the tin for a couple of minutes and then move the muffins to a rack to cool completely.
  • Alternative: bake in a loaf pan for 55-60 minutes or until an inserted toothpick comes out clean.

2 cups all-purpose flour
1/3 cup packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 large egg, beaten
1 cup 2% milk
1/2 cup canola oil
2 cups finely chopped peeled apples
FILLING:
1 package (8 ounces) cream cheese, softened
2 tablespoons maple syrup
4 teaspoons grated orange zest
1/4 teaspoon ground nutmeg
TOPPING:
1/4 cup all-purpose flour
1/4 cup old-fashioned oats
1/4 cup packed brown sugar
1/4 teaspoon ground cinnamon
3 tablespoons cold butter
1/4 cup chopped pecans

Steps:

  • Preheat oven to 400°. In a large bowl, combine flour, sugar, baking powder, salt and cinnamon. In another bowl, combine egg, milk and oil. Stir into dry ingredients just until moistened. Fold in apples. Fill greased or paper-lined muffin cups three-fourths full., In a small bowl, beat the filling ingredients until smooth. Drop by tablespoonfuls into centers of muffins., For topping, in a small bowl, combine flour, oats, brown sugar and cinnamon. Cut in butter until crumbly. Stir in pecans. Sprinkle over filling. Bake 16-20 minutes or until a toothpick inserted in muffin comes out clean. Cool 5 minutes before removing from pan to wire rack.
