SOUTHERN-STYLE EGG SALAD
Southern egg salad, primarily used for sandwiches. Serve on fresh bread of your choice. My wife likes to make double-decker sandwiches (utilizing whole wheat bread for the center slice) with pimento cheese on the other half. Trim the edges and cut into 2 or 3 pieces. Great for tailgating.

Steps:
- Cover eggs with water in a saucepan, bring to a low boil, let boil slowly for 5 minutes. Remove from heat and let stand, covered, for 5 minutes.
- Transfer eggs to ice water to chill for 5 minutes; peel. Grate eggs into a medium mixing bowl and add mayonnaise, relish, mustard, sugar, lemon juice, salt, pepper, and hot sauce. Mix well.
- Chill in the refrigerator for at least 30 minutes.

DOUBLE DECKER SWEET CHILI SAUCE EGG SANDWICH
I don't know what made me think of putting sweet chili sauce on an egg sandwich in place of the traditional ketchup but I praise the sweet Lord for his abundant kindness! This sandwich was awesome!

Steps:
- Cook two eggs on a skillet. Break the yokes if you don't like your egg sandwich to be runny.
- Toast two pieces of bread.
- Place one of the cooked eggs on one piece of toast.
- Administer sweet chili sauce.
- Place the next egg on top of the first egg.
- Place the 2nd piece of toast on top.
- Enjoy!

Steps:
- Melt butter in a skillet over medium heat. Cook the eggs until the white is completely set, but the yolks are still soft , flipping once.
- Spread the mango chutney evenly on four pieces of toasted bread. Place a fried egg on a slice of bread, break the yolk and season egg with a dash of chili sauce. Repeat with two of the remaining pieces of toast and the remaining two eggs. Stack the pieces so that the egg and toast alternate layers. Place the final piece of toast on top and serve immediately.
