Puffed corn can be found in the potato chip aisle of your grocery store. This is a great caramel corn without hulls or unpopped kernels. Warning: you need to make a double batch of this because it doesn't last long, at least not in my house. Very addicting. Love it!

1 (8 ounce) bag corn puffs (such as O-Ke-Doke®)
1 cup salted peanuts
1 cup butter
1 cup packed brown sugar
½ cup light corn syrup
1 teaspoon baking soda

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Combine corn puffs and peanuts in a large roasting pan.
  • Bring butter, brown sugar, and corn syrup to a boil in a heavy 2-quart saucepan. Cook and stir for 2 minutes. Remove from heat; stir in baking soda until mixture foams up. Pour over corn-peanut mixture and toss well using rubber spatulas.
  • Bake in the preheated oven, stirring every 10 to 15 minutes, until a cooled piece of corn is crunchy, about 45 minutes.
  • Spread on waxed paper to cool. Break apart and transfer to an airtight container.

1 cup milk
1 tablespoon apple cider vinegar
1 cup cornmeal
1 cup flour
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 eggs
1/4 cup olive oil
1 cup corn kernel (cooked or canned)

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Pour all ingredients into big bowl, and mix thoroughly.
  • Grease a 41/2-inch by 81/2 inch loaf pan.
  • Pour mixture into pan.
  • Bake for 45 minutes or until golden-brown.

From America's Test Kitchen. I've had some cornbread that is almost cake-like and sweet. If that is what you're looking for, this is not it. This does have a very good, somewhat coarse texture. Perfect served up with your favorite chili! :) They recommended baking this in a cast-iron skillet, but I had very good results usimg a 9-inch round cake pan.

1 cup cornmeal (yellow or white)
1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon table salt
1 cup frozen corn, thawed
1 cup sour cream
2 large eggs
1/2 teaspoon hot pepper sauce
4 tablespoons unsalted butter, melted
2 teaspoons vegetable oil

Steps:

  • Adjust oven rack to middle position and heat oven to 450 degrees.
  • Whisk cornmeal, flour, sugar, baking powder, baking soda, and salt in large bowl.
  • Pulse corn, sour cream, eggs, and hot sauce in food processor until corn is coarsely chopped and mixture is combined.
  • Fold corn mixture into cornmeal mixture, then stir in melted butter.
  • Add vegetable oil to 9-inch round cake pan, and place the pan in the preheated oven for 5 minutes.
  • Take out of oven and quickly add batter; return pan to oven.
  • Bake until toothpick inserted in center comes out clean, about 20-25 minutes.
  • Cool cornbread in pan on wire rack for 20 minutes.
  • Serve warm.

1 can (7 oz) whole kernel corn, drained, or 1 cup frozen (thawed) whole kernel corn

Steps:

  • Heat oven to 400°F. Grease bottoms only of 8 regular-size muffin cups with shortening, or line with paper baking cups.
  • In medium bowl, beat milk, oil and egg with spoon. Stir in remaining ingredients except corn just until flour is moistened. Fold in corn. Divide batter evenly among muffin cups (about 3/4 full).
  • Bake 18 to 20 minutes or until golden brown. Immediately remove from pan to wire rack. Serve warm or cool.

1 package (12 ounces) unseasoned stuffing cubes
1 medium onion, finely chopped
1/2 each medium green, sweet yellow and red pepper, chopped
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
3 eggs, lightly beaten
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (14-3/4 ounces) cream-style corn
1/2 cup butter, melted
1/2 to 1 cup chicken broth

Steps:

  • In a large bowl, combine the stuffing, onion, sweet peppers and seasonings. Add the eggs, corn and butter; toss to coat. A friend gave me this recipe as a good "Halloween" snack for the kids. I have not tried it yet, but it sounds really good - and her kids love it. I'm putting it here for safe keeping until I get a chance to try it later.

2 (3 1/3 ounce) bags microwave popcorn
1/4 cup butter, melted
2 tablespoons sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
30 drops yellow food coloring
4 drops red food coloring
2 cups candy corn (or a combo of both) or 2 cups M&M's plain chocolate candy (or a combo of both)

Steps:

  • Pop popcorn according to package directions.
  • Mix melted butter, sugar, cinnamon, nutmeg and food coloring in a small bowl (or glass measuring cup to make it easier to pour).
  • Place popcorn in a large bowl.
  • Pour butter mixture over the popcorn.
  • Toss to coat.
  • Add candy corn and/or M&Ms.
  • Toss to combine.
