We took a traditional side dish and turned it into the best Christmas Holiday Ambrosia Salad. Loaded with cranberries, pecans, mandarin oranges and more. A holiday favorite!

1 14 ounce can whole berry cranberry sauce
1 8 ounce can crushed pineapple, drained
1 8 ounce can shredded pineapple, drained
1 11-15 ounce can mandarin oranges, drained
2 cups miniature marshmallows
8 ounces of homemade or store-bought whipped cream
1/2 cup vanilla yogurt
1 cup shredded coconut
1 cup chopped pecans

Steps:

  • In a large bowl, combine the whole berry cranberry sauce, both pineapples and mandarin oranges.
  • Add the whipped cream and vanilla yogurt. Mix and combine well.
  • Gently fold in the marshmallows, coconut and pecans.
  • Cover and refrigerate for at least 12 hours.
  • Serve chilled. Serve on lettuce or spinach leaves for holiday serving - looks incredibly festive!

A really quick and easy to assemble Ambrosia that is great for a hot summer day. This recipe came from a magazine years ago. Prep time does not include chilling time.

1 (20 ounce) can chunk pineapple in juice or 1 (20 ounce) can syrup
1 (11 ounce) can mandarin orange segments
1 1/2 cups seedless grapes
1 cup miniature marshmallow
1 cup flaked coconut
1/2 cup nuts
3/4 cup sour cream or 3/4 cup vanilla yogurt
1 tablespoon sugar

Steps:

  • Drain pineapple.
  • Drain oranges.
  • Combine pineapple, oranges, grapes, marshmallows, coconut, and nuts.
  • Mix sour cream and sugar.
  • Stir into fruit mixture.
  • Chill well and serve.

1/2 cup butter, softened
1 cup sugar
4 large eggs, room temperature
1 teaspoon coconut extract
2-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsweetened pineapple juice
2-1/4 cups sweetened shredded coconut
1-1/2 cups chopped candied pineapple
1 cup chopped macadamia nuts
1 cup golden raisins
1/2 cup chopped dried mangoes
1/2 cup chopped green candied cherries
1/2 cup chopped red candied cherries
COCONUT GLAZE:
1 cup confectioners' sugar
2 tablespoons coconut milk or 2% milk
1/4 teaspoon coconut extract
1/4 teaspoon vanilla extract

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in extract. Combine the flour, baking powder and salt; add to the creamed mixture alternately with pineapple juice, beating well after each addition. Fold in the coconut, pineapple, macadamia nuts, raisins, mangoes and candied cherries., Transfer to a greased and floured 10-in. fluted tube pan. Bake at 350° until a toothpick inserted in the center comes out clean, 50-60 minutes. Cool for 10 minutes before removing from pan to a wire rack to cool completely., In a small bowl, combine the confectioners' sugar, coconut milk and extracts. Drizzle over cake.
