DIY Homemade Yellow Cake Mix image

Yield 5 1/2 cup dry mix

Number Of Ingredients 8

2 cups granulated sugar
1 1/2 cups all-purpose flour
1 1/2 cups cake flour
1/2 cup nonfat dry milk powder
1 tablespoon baking powder
1 teaspoon salt
1 cup unsalted butter, cut into 1/2-inch pieces and chilled to very cold
1 tablespoon vanilla extract

Steps:

  • Add all ingredients, except the butter, into a food processor.
  • Process for 15 seconds, until combined.
  • Add the butter and lightly fluff with a fork to coat with the flour mixture.
  • Add vanilla, then pulse until the mixture is crumbly and fine.
  • Use immediately in any recipe calling for yellow cake mix, or freeze immediately in a zipper bag for up to 2 months.
  • NOTES:.
  • If not using right away, transfer to a zipper bag and freeze immediately.
  • If you allow the mixture to sit out too long, the butter will start melting and change the texture of the dry mix.
  • If this does happen, freeze it for about 1 hour then throw it back in the food processor and pulse until it reaches the fine consistency.

2 c flour
1 Tbsp baking powder
1/2 c powdered milk
1 1/2 c sugar (super fine)
TO MAKE CAKE
3/4 c water
1 tsp vanilla
1/2 c butter (soft)
3 eggs

Steps:

  • 1. run dry milk and sugar through food processor until super fine. Mix dry ingredients for cake mix through sifter until fine and well blended, store in mason jar or baggie marked with contents and date
  • 2. To make cake, mix all ingredients together until thoroughly blended and bake as follows in greased- 8-9" rounds for 20-25 minutes 13x9" for 35-40 minutes cupcakes for 15 minutes bundt for 45-50 minutes at 350*
  • 3. Enjoy the savings for a better tasting cake! Note- For lemon cake replace vanilla with lemon juice!
