1 can (12 ounces) frozen pineapple juice concentrate, thawed
1 can (6 ounces) frozen orange juice concentrate, thawed
1 cup water
1 cup sugar
2 tablespoons lemon juice
3 medium firm bananas, sliced
1 package (16 ounces) frozen unsweetened strawberries
1 can (15 ounces) mandarin oranges, drained
1 can (8 ounces) crushed pineapple
18 clear plastic cups (9 ounces)

Steps:

  • In a large bowl, prepare pineapple juice concentrate according to package directions. Add orange juice concentrate, water, sugar, lemon juice and fruit. Spoon 3/4 cup mixture into each plastic cup. Place cups in a pan and freeze. Remove from the freezer 40-50 minutes before serving.

DD#2 needed a quick, light "something" to take to a picnic an hour after she got home from work. I remembered reading a salad recipe with a package of pudding added so I opened the cupboard and started draining and dumping. She came home with an empty bowl and requested I make more for home. That's a good sign I think! (Cooking time is for refrigeration)

1 (3 1/2 ounce) package instant lemon pudding
1 (10 ounce) bottle maraschino cherries, halved,drained
1 (8 ounce) container Cool Whip, thawed
1 (21 ounce) can chunk pineapple, do not drain
1 (12 ounce) can mandarin oranges, drained
2 cups mini marshmallows

Steps:

  • In serving bowl, dump can of undrained pineapple.
  • Pour pudding mix over and mix into juices.
  • Set aside for 5 minutes to slightly set.
  • Meanwhile drain oranges and cherries, patting dry if necessary.
  • Mix into pineapple mixture along with marshmallows.
  • Gently fold in cool whip.
  • Refrigerate at least 30 minutes.

Like Capital-One, I don't leave home without it. For family or church gatherings, there's always a couple of requests for this oh-so-easy salad/dessert. Be mindful, though...it really freezes up and does take some time to thaw out enough to enjoy the full-bodied flavor. After all the times I've made it, though, I almost always forget to bring it out early as a salad. Sooo, once the meal is over I present it as dessert!!

1 (16 ounce) jar maraschino cherries, drained
1/4 cup cherry juice
1 (8 ounce) package cream cheese, softened
1 (20 ounce) can crushed pineapple
1 (11 ounce) can mandarin oranges, drained
2 1/2 cups mini marshmallows
1 (8 ounce) container whipped topping

Steps:

  • Drain cherries, reserving 1/4 cup juice; set aside.
  • Combine cream cheese and pineapple with juice in medium bowl; mix on medium speed 3-4 minutes.
  • Stir in oranges, cherries, and cherry juice.
  • Gently fold in marshmallows and whipped topping.
  • Spread evenly in 13x9x2 baking pan.
  • Freeze until set.
  • Can be made one day ahead.

1/2 cup thawed lemonade concentrate
6 medium ripe peaches, peeled and cubed
3 cups water
1 can (20 ounces) crushed pineapple, undrained
2 cups sugar
1-1/3 cups seedless red grapes, halved
1 cup thawed orange juice concentrate

Steps:

  • In a large bowl, stir the bananas and lemonade concentrate until coated. Stir in the remaining ingredients. Cover and freeze for 8 hours or until firm. , Remove from the freezer 1 to 1-1/4 hours before serving so mixture becomes slushy.
