GARLIC-ONION DINNER MUFFINS



Garlic-Onion Dinner Muffins image

This muffin makes a perfect bread accompaniment for steaks and roast. The recipe comes from " A taste of Cuba" and was sent to me.

Yield 12 Muffins

Number Of Ingredients 9

2 cups flour
3 teaspoons baking powder
1 teaspoon salt
2 tablespoons sugar
1 egg, beaten
1 cup milk
1/4 cup melted butter
2 garlic cloves, minced
1 medium onion, diced

Steps:

  • Heat oven to 400°F.
  • In a large bowl, mix flour, baking powder, salt and sugar.
  • In a small bowl, mix together egg, milk, garlic and onion.
  • Make a well in the center of dry ingredients and pour in the egg mixture and melted butter.
  • Mix together using as few strokes as possible.
  • DO NOT OVER BEAT--the batter should have small lumps in it.
  • Pour into 12 paper-lined muffins tins, filling about 2/3 full.
  • Bake 20 minutes or until muffins begin to turn golden on top.
  • Test for doneness with a toothpick which should come out clean.
  • Remove from tins and cool slightly before serving.

This is a delicious muffin recipe. My children LOVE the jam on top as an extra treat. My husband enjoys these muffins as well although he prefers to omit the jam for a nice slice of butter. They are also lovely to have for breakfast.

1/4 cup sugar
2 1/4 teaspoons baking powder
3/4 teaspoon salt
1 egg
1/3 cup oil
3/4 cup buttermilk

Steps:

  • Mix dry ingredients in bowl.
  • Mix milk, egg and oil.
  • Add all at once to dry ingredients. Stir quickly just until dry ingredients are moistened.
  • Fill greased muffin tins 1/3 full. Place a drop of jam on top of each muffin.
  • Bake at 400 for 12-15 minutes.

2 teaspoons baking powder

1 cup buttermilk

1/2 cup grated Romano cheese

Steps:

  • In a large bowl, combine the flour, herbs de Provence, baking powder and salt. In another bowl, combine the eggs, buttermilk, and butter. Stir into dry ingredients just until moistened., Fill greased muffin cups half full. Sprinkle with cheese. Bake at 400° for 18-20 minutes or until a toothpick inserted in muffin comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

3 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon poultry seasoning
1 egg
3/4 cup turkey gravy
1/3 cup canola oil
3/4 cup diced cooked turkey
2 tablespoons jellied cranberry sauce

Steps:

  • In a bowl, combine the flour, sugar, baking powder, salt and poultry seasoning. In another bowl, combine the egg, gravy and oil; mix well. Stir into dry ingredients just until combined. 1/4 cup sugar
2 eggs, slightly beaten

8 tablespoons butter, melted (light butter works fine)
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 400°F Grease muffin pans and set aside.
  • Stir together the flour, baking powder, and salt until completely mixed. Place the sugar, eggs, milk, butter, and vanilla in a large bowl and mix well. Add the combined dry ingredients and mix by hand just until the batter is blended; it should not be completely smooth.

2 cups whole wheat flour
1 cup oat bran
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cups low-fat buttermilk
1 tablespoon canola oil

Steps:

  • Preheat oven to 425 degrees.
  • Spray 10 muffin tins with non-stick cooking spray.
  • In a large bowl, mix the flour, bran, baking soda, baking powder and salt.
  • Make a well in the middle of flour mixture and pour in the buttermilk and oil.
  • Mix quickly with a rubber scraper until flour disappears, folding dough with a kneading motion.

1/4 cup mayonnaise

Steps:

  • Preheat oven to 425°F. Grease or spray muffin pan. Measure the flour by spooning it into a measuring cup then leveling the top off with a knife. Add the flour to a medium mixing bowl and twirl it around several times with a wire whisk to lighten the texture. Whisk in the milk and mayonnaise, just until combined. Do not over mix. (Small lumps are ok.) Set aside to rest for 5 minutes. Lightly stir the batter again then fill muffin cups about 3/4 full. Place in preheated oven - then immediately reduce the temperature to 400°F. Bake for 15 minutes. Remove from oven and butter the tops. Serve warm with real butter and a drizzle of honey.
