MOM'S CLASSIC MEATLOAF RECIPE

It's an oldie, but a goodie-- Meatloaf! There's not a whole lot better than a tender and moist meatloaf and this is the PERFECT recipe in my book.

3/4 cup milk
2/3 cup crushed saltine crackers
2 large eggs
1/4 teaspoon black pepper
1 teaspoon kosher salt
1 teaspoon dried dill weed
1/2 teaspoon rubbed sage
1 1/2 pounds ground beef (80/20% fat)
1/2 cup onion (finely chopped)
1 cup ketchup
1/2 cup brown sugar
1 teaspoon Worcestershire Sauce

Steps:

  • Preheat oven to 350 degrees Fahrenheit
  • Combine the milk and crushed saltine crackers in a small bowl. Allow to soak for about 5 minutes or until the crackers are soft. Whisk in the egg, salt, sage, dill, and pepper.
  • Place ground beef in a large bowl and add in onion and milk mixture. Gently mix until just combined.
  • Line a baking sheet with parchment paper or aluminum foil and shape meat into a loaf shape. Dip fingers in water and smooth out the cracks with your if needed.
  • Place in oven and bake for about 20 minutes.
  • Combine ketchup, sugar and Worcestershire sauce and spoon half of it over the partially cooked loaf. Return to the oven.
  • Cook for 5-7 minutes longer and spoon the remainder of the sauce over meatloaf. Continue to cook until the internal temperature reaches 160 degrees-- about 10-15 additional for a total of 35-45 minutes total cooking time.

1 lb ground beef*
1/2 lb ground pork*
1 onion, chopped
1/2 c soft bread crumbs
1/2 c dill pickle juice
1 egg
1 1/2 tsp salt
1/4 tsp pepper
TOPPING
1/2 c chopped dill pickles
1/2 c catsup
1/4 c water
2 Tbsp sugar
1 tsp worcestershire sauce
a few drops favorite hot pepper sauce

Steps:

  • 1. Mix the ground meat with the onion, crumbs, pickle juice, egg, salt and pepper til thoroughly combined.
  • 2. Prepare a loaf pan with food release spray. Shape the meat mixture and place in the loaf pan. Set aside.
  • 3. Combine the topping ingredients and pour the topping over the meatloaf.
  • 4. Bake at 350F one hour and fifteen minutes, basting often. Remove from oven and let rest at least 10 minutes before serving. If you like, double the sauce recipe so you can bake with half, and serve with half.
  • 5. NOTE: This would be great served with a nice baked mac and cheese, which could bake with the meatloaf, and a fresh green salad.
  • 6. * If you prefer, use all ground beef. Or you could try it with 2 lbs. of ground turkey.

CLASSIC SPICY MEATLOAF

2 tablespoons unsalted butter
1 cup finely chopped onion
½ cup finely chopped green onions
1 carrot, finely chopped
1 rib celery, finely chopped
1 tablespoon minced garlic
⅔ cup ketchup, divided
2 teaspoons Worcestershire sauce
2 teaspoons salt
1 ½ teaspoons ground black pepper
1 ½ pounds ground beef
¾ pound spicy ground pork sausage
1 cup bread crumbs
⅓ cup minced fresh parsley
2 large eggs, slightly beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat butter in a large heavy skillet over medium heat; cook and stir onion, green onions, carrot, celery, and garlic until fragrant, about 5 minutes. Cover skillet with a lid and cook, stirring occasionally, until carrot is tender, about 5 more minutes. Stir 1/3 cup ketchup, Worcestershire sauce, salt, and pepper into vegetable mixture; cook until warmed through, about 1 minute.
  • Mix ground beef, sausage, vegetable mixture, bread crumbs, parsley, and eggs in a large bowl; form into a loaf and place in a rectangular baking pan with 2-inch high sides. Cover loaf with remaining 1/3 cup ketchup.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

MEATLOAF
1 large egg
1 small onion, finely chopped
6 baby carrots, grated (or one whole carrot) optional
1/2 c dill pickle juice
1/4 tsp ground black pepper
1 clove minced garlic
1 tsp dijon mustard
1 c saltine cracker crumbs
1 1/2 lb lean ground beef
TOPPING
1/4 c dill pickles, chopped (or use dill pickle relish)
1/4 c ketchup
2 Tbsp water
3 tsp brown sugar
1/2 tsp worcestershire sauce

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Using a large mixing bowl, beat the egg. Stir in onion, carrot, pickle juice, garlic, mustard, and pepper. Add cracker crumbs and mix. Add the ground beef and mix using your hands until all ingredients are evenly blended.
  • 3. Form into a rectangular loaf approxiimately 3-4" high. Put the meatloaf on a wire cooking rack then place into in a 9"x13" oven-safe pan. The rack allows any excess fat to drain from the meat. Indent the top of the meatloaf a bit using your fingers. This helps keep the topping from running off.
  • 4. Make the topping by combining chopped pickles, ketchup, water, brown sugar, and worcestershire sauce. Pour on top of the meatloaf. Avoid drizzling down the sides, as it may burn in the bottom of the pan.
  • 5. Bake 1 hour or until no longer pink in center. Internal temp should be at least 160 degrees. Cover meatloaf with foil and let it rest 4-5 minutes. Slice and serve. We enjoy this with smashed potatoes, buttered peas, and a glass of red wine.

CRUSTY MUSTARD-DILL MEAT LOAF

1/2 cup old-fashioned oats
1 1/4 pounds meat loaf mix
1/2 cup minced onion
1 large egg
3 tablespoons chopped fresh dill
2 tablespoons coarse-grained Dijon mustard
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Preheat oven to 450°F. Mix 1/2 cup broth and oats in medium bowl. Let stand 5 minutes. Mix in meat, onion, egg, dill, mustard, salt, and pepper. Transfer mixture to rimmed baking sheet; shape into two 3x6-inch rectangular loaves.
  • Bake meat loaves until browned and cooked through and thermometer inserted into center registers 160°F, about 25 minutes. Using large spatula, transfer loaves to platter. Place baking sheet directly atop 2 burners. Add remaining 1/2 cup broth to sheet. Boil pan juices over high heat until reduced by half, scraping up browned bits, about 2 minutes. Pour sauce over loaves and serve.

1 lb ground beef or 1 lb ground veal
1/2 lb ground pork
1 onion, medium, chopped
1/2 cup soft breadcrumbs
1/2 cup pickle juice
1 large egg
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1/2 cup dill pickle, chopped
1/2 cup chili sauce or 1/2 cup ketchup
1/4 cup water
2 tablespoons brown sugar
1 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 350°F.
  • Lightly mix meats with onions, bread crumbs, pickles, egg, salt and pepper until well blended.
  • Shape into a loaf and place in shallow pan.
  • Combine pickle juice, chili sauce or ketchup, water, sugar and Worcestershire sauce.
  • Pour over meatloaf and place in 350°F oven basting twice with sauce in pan for 40 minutes.
  • Continue baking without basting for additional 30 - 35 minutes, until meatloaf is really glazed.
  • Garnish with a pickle fan. Dad always served this with Brussels sprouts and tiny whole carrots.

1 pound bulk spicy pork sausage
1-1/2 cups herb-seasoned dry bread stuffing
1 large egg, beaten
5 tablespoons ketchup, divided
3 tablespoons steak sauce, divided
1 cup shredded cheddar cheese
1 small tomato, diced
1 small onion, diced
1/2 small green pepper, diced
8 to 10 fresh mushrooms, sliced
4 ounces thinly sliced fully cooked ham, optional
1 cup shredded Swiss cheese

Steps:

  • In a bowl, combine ground beef, sausage, stuffing, egg, 3 tablespoons ketchup and 2 tablespoons steak sauce. Mix well., Pat half of the meat mixture into a 9x5-in. loaf pan.
