4.5 TBSP butter
1.25 lb leeks (white and pale green, sliced ( about 5 cups)
1 Lg potato
1Lb broccoli (flourets seperated from stems, stems cut into pieces)
6TBSP whipping cream
1TSP dry dill ( or 1TBSp fresh dill)

Steps:

  • Melt butter in large skillet over medium heat, Stir in leeks, Cover and cook until soft, stirring often ( 15 min) Quarter potato, in lg suace pan with salted water for about 15 min) Add broccoli stems in to salted water for 5 min. Then put in flourets for 5 min) Drain and place in food processor. Add leek mixture, puree until smooth. Add ream and dill. season with salt and pepper. Casserole dish into over just to warm.

Number Of Ingredients 8

2 medium red potatoes, cut into 1 inch pieces
Handful of fresh dill leaves
1/2 pound (1/4 cups) broccoli florets
3 green onions, minced
3 tablespoons fresh lemon juice (or herb vinegar)
1 tablespoon olive oil
1 tsp. fresh minced dill
black pepper and salt to taste

Steps:

  • Steam the potatoes over boiling water while covered with a handful of dill leaves for 5 minutes. Add the broccoli to this and steam 5-10 minutes longer till the vegetables are tender. Add the potatoes and broccoli to a serving bowl. Add the green onions, lemon, minced dill, oil and salt and pepper to taste. Toss. Serve warm.

Got this recipe from a co-worker and have made it often. One of the few ways I can get my husband to eat broccoli! This recipe can be halved, as it makes alot.

3 heads broccoli
1 cup white vinegar
1 1/2 cups canola oil
1 tablespoon sugar
1 tablespoon Accent seasoning (optional)
1 tablespoon dried dill weed
1 teaspoon fresh ground pepper
1 teaspoon garlic salt
1/2 teaspoon salt

Steps:

  • Cut or break off broccoli florets-- set aside.
  • Mix remaining ingredients until sugar and salt dissolves (Do NOT use a metal bowl).
  • Pour marinade over broccoli and let marinate overnight.
