FRIED FISH WITH DILL TARTAR SAUCE
Steps:
- For the dill tartar sauce: Mix the mayonnaise, pickles, capers, lemon juice, dill and sugar in a bowl. Taste and add salt and pepper to your liking.
- For the fried fish: Heat 1 1/2 inches of oil in a deep skillet (I use cast iron) on medium heat until the oil reaches about 375 degrees F.
- Clean the fish with cold water and dry just a tad; the fish should be a little wet to help the cornmeal mixture stick to it. Sprinkle a little salt and pepper on the fish. Add the cornmeal and flour to a paper bag. Sprinkle in the Cajun seasoning. Add the fish to the flour mixture and coat each piece evenly. Transfer the breaded fish to a plate or cutting board.
- Lay the fish into the oil in batches and fry until they start to float and are golden brown, 3 to 4 minutes. Rest them on a rack to let the extra oil run off. Squeeze a little lemon juice on top. Serve with the tartar sauce.
TANGY TARTAR SAUCE (MADE WITH DILL PICKLES, NOT SWEET)
This tartar sauce is made with dill pickles, or dill pickle relish, instead of sweet pickle relish, as is common with many other recipes. The flavor is bright and fresh, without being overly sweet. I make it with Best Foods/Hellmans light mayo, so it is not too heavy of a condiment, and the kids can have a good portion without turning their healthy baked fish into an unhealthy meal.

DILL TARTAR SAUCE
It's hard to find store bought tartar sauce that doesn't taste icky sweet to me. A friend and I experimented until we came up with this. Now this is my favorite. Plan ahead because if let set at least a couple hours in the fridge before serving the flavor really matures.

- Prepare barbecue (medium-high heat). Whisk 1/2 cup tartar sauce, 1 tablespoon dill, and lemon peel in medium bowl to blend. Grill rolls until toasted. QUICK EASY AND DELISH DILL TARTAR SAUCE
If you are a fan of pickles, then you're going to love this easy tartar sauce. It has a wonderful dill flavor throughout with bits of fresh cucumber in every bite. Pepper gives it a nice little kick of spice. We tried this with shrimp and it was delicious. We can't try dipping other things into the tartar sauce.

CLASSIC CRAB CAKES WITH DILL PICKLE TARTAR SAUCE

- In a medium saute pan melt butter over medium heat. Add shallots and saute until translucent. Then add the chardonnay followed by the bread cubes. Stir to incorporate and saute for one more minute. Remove from heat and set aside. In a small bowl whisk mayonnaise, lemon zest, egg, salt, pepper, and spices until smooth. Add this mixture, the crab meat and the chives to the bread mixture. Mix gently without breaking apart the lumps of crab meat. Refrigerate this crab mixture for 30 minutes or up to 8 hours. On a work surface combine the panko and the fresh bread crumbs. Place a 3 inch biscuit cutter on top of the bread crumbs. Firmly press the crab mixture into the biscuit cutter until full. Carefully remove the biscuit cutter.
