1 1/2 cups all purpose unbleached flour
2/3 cup yellow corn meal
2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
2 tbsp brown sugar
1/2 tsp crushed red pepper
4 tsp dried minced onion
1 tsp onion powder
1 tsp dill weed
(approximately 3 cups for a 32 oz container)
1/3 cup parmesan

Bake at 375°F for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cover with foil during last 10 minutes to prevent over browning. Cool in pan 1

Number Of Ingredients 10

2-2/3 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon dill weed
ADDITIONAL INGREDIENTS:
1 bottle (12 ounces) beer
1 tablespoon butter, melted

Steps:

  • In a large bowl, combine the first seven ingredients. Transfer to a 1-qt. glass jar. Cover and store in a cool, dry place for up to 6 months. Yield: 1 batch (about 3 cups)., To prepare bread: Transfer bread mix to a large bowl. Stir in beer just until moistened. Spoon into a greased 9x5-in. loaf pan. Bake at 375° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Brush with butter.

My favorite Beer Bread variation, so good with soups. You really don't want to skip the melted butter. This recipe comes from The Perfect Mix by Diane Phillips, so is written as a Gift in a Jar - but of course, you could just mix it up and bake it for yourself, too! :) If you don't have self rising flour (like me!), here's a substitute: Recipe #5247. Time is for baking the bread.

Number Of Ingredients 5

3 cups self-rising flour
3 tablespoons sugar
2 tablespoons dried dill
12 ounces beer (or 12 oz. unflavored seltzer)
1/2 cup butter, melted

Steps:

  • To make mix: Combine first 3 ingredients and place in an airtight container.
  • To bake: Preheat oven to 375 degrees F. In a large mixing bowl, combine mix with beer (or seltzer) with a wooden spoon. The batter will be lumpy, don't overmix.
  • Place batter in a greased loaf pan. Pour 1/3 of the melted butter over the dough.
  • Bake for 40 minutes, then pour another 1/3 of the butter over the top of the bread. Continue baking for 10 minutes more.
  • Pour the last 1/3 of the butter over the top of the bread and bake 10 more minutes. Remove from the oven and allow to cool for 30-40 minutes.

Number Of Ingredients 9

2 cups milk
1/3 cup sour cream
1/4 cup minced fresh dill
3 tablespoons unsalted butter, plus more for the pan
2 tablespoons sugar
One 1/4-ounce package active dry yeast
5 cups all-purpose flour
1 tablespoon fine salt
Vegetable oil, as needed

Steps:

  • In a small saucepan, combine the milk, sour cream, dill, butter, and sugar. Place over medium-high heat and cook, stirring, until the butter melts. Remove from the heat and cool to about 110 degrees F. Sprinkle the yeast over the surface of the milk. Set aside until foamy, about 10 minutes.
  • Meanwhile, in large bowl, whisk together the flour and salt. Set aside.
  • Pour the yeast mixture into the bowl of flour and mix until a soft, ragged mixture is formed.
  • Transfer the flour mixture to a well-floured work surface and knead by hand until an elastic dough is formed, about 10 minutes. Transfer the dough to a lightly oiled bowl, cover with a kitchen towel and place in the warm spot, until doubled in size, about 2 hours.
  • Place a rack in the center of the oven and preheat to 400 degrees F. Transfer the dough to the work surface and, using your hands, gently flatten into a 10-inch-long oval shape. Fold the dough into thirds lengthwise, overlapping the sides in the center. Press down on the overlapping sides to seal and make a seam. Place seam side-down in a buttered 9 by 5-inch loaf pan, cover with a kitchen towel, and return to the warm spot until the dough has risen about 1 1/2 inches over the top of the pan, about 1 1/2 to 2 hours.
  • Brush the top of the dough lightly with warm water and, using a sharp knife, make 1/4-inch-deep slit down the center. Bake until golden brown, about 30 minutes.
  • Remove the loaf from the pan and place in the center of the rack. Continue baking until the loaf sounds hollow when rapt lightly with your knuckles on the bottom and top, and an instant-read thermometer inserted in the center registers about 190 degrees F., about 15 minutes.
  • Transfer the bread loaf to a cooling rack and let cool for 2 hours before using.

2/3 cup grated parmesan cheese
1/2 teaspoon crushed red pepper flakes
4 teaspoons dried onion flakes
1 (12 ounce) bottle beer
melted butter

Steps:

  • Stir together flour, cornmeal, baking powder, salt and baking soda.
  • Place with remaining ingredients in jar, layering if bottle is clear.
  • GIFT TAG DIRECTIONS: Place jar contents in a medium mixing bowl.
  • Stir in one 12-oz.
  • can or bottle of beer just until combined.
  • Pour into a greased 8x4x2 inch loaf pan.
  • Bake in a 375 degree oven for 35-40 minutes or until a toothpick inserted near the center comes out clean.
  • Cover with foil during the last 10 minutes of baking if necessary to prevent overbrowning.
  • Remove from oven and brush with butter, if desired.
  • Cool in pan for 10 minutes; remove from pan.
  • Serve warm or cool completely on a wire rack.
