MEATLOAF SANDWICHES

Nonstick cooking spray
1 tablespoon olive oil
1/2 medium yellow onion, diced (about 3/4 cup)
1 bay leaf
1 clove garlic, minced
1 medium red bell pepper, finely diced (about 1 cup)
2 tablespoons chopped fresh flat-leaf parsley
2 teaspoons chopped fresh thyme
2 pounds lean ground beef
2 large eggs, lightly beaten
3/4 cup dry breadcrumbs
1 tablespoon Worcestershire sauce
1 cup ketchup
Kosher salt and freshly ground black pepper
1/4 cup mayonnaise
1 loaf thick-sliced white bread

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper, then spray lightly with cooking spray.
  • Heat the oil in a medium skillet over medium heat. Cook the onions, stirring, until translucent, 7 to 8 minutes. Add the bay leaf, garlic, bell pepper, parsley and thyme and cook, stirring, until softened, about 5 minutes. Remove the skillet from the heat and let the onion mixture cool, then discard the bay leaf.
  • In a large bowl, combine the beef, eggs, breadcrumbs, Worcestershire sauce, 1/2 cup of the ketchup, the cooled vegetables, 2 teaspoons salt and 1 teaspoon black pepper. Use your hands to mix everything together. Transfer the mixture to the center of the prepared baking sheet and form into a loaf. Coat the meatloaf with the remaining 1/2 cup ketchup.?Bake until the meat loaf is firm, 1 to 1 1/2 hours. Let set for about 5 minutes before slicing. Slice into 8 pieces for thicker slices, 10 pieces for thinner slices.
  • Spread mayonnaise on 16 to 20 slices of bread and make sandwiches with the meatloaf slices.

1 tablespoon mayonnaise
1 tablespoon Dijon mustard
1 tablespoon ketchup
1 tablespoon Heinz 57 steak sauce
1 teaspoon Heinz 57 steak sauce
1 tablespoon A.1. Original Sauce
1/4 teaspoon salt
1/8 teaspoon ground black pepper
16 slices bread
8 tablespoons sweet butter, softened
1 sweet onion, sliced thin
3 tomatoes, sliced
1/2 head iceberg lettuce, shredded

Steps:

  • In a medium bowl mix the sauce ingredients (mayonnaise through pepper) together with a spoon. Set aside.
  • Cut the meatloaf into 8 thick slices.
  • Spread softened butter on both sides of each slice of bread.
  • In a large frying pan "grill" each slice of bread on both sides until golden brown.
  • Then "grill" each meatloaf slice on both sides, in the same frying pan until browned nicely. (You may have to do this a few slices at a time.).
  • Top one side of grilled slice of bread with some of the sauce. Place one slice of meatloaf on top of the sauce. Place sliced tomato, onion and lettuce on top. Top with more sauce, then another slice of grilled bread and serve.

This recipe was published in a 1999 issue of Wine Enthusiast magazine. I find myself making meatloaf just so I can make these sandwiches. I hope you like them, too! Sometimes I use mozzarella cheese instead of Jack. These taste great with potato chips or french fries & a dill pickle on the side. Yum!

1 slice meatloaf, cut 3/4-inch thick (your favorite recipe)
2 teaspoons olive oil, divided
2 slices sourdough bread or 2 slices white bread
1 teaspoon grainy mustard, to taste
1 teaspoon ketchup, to taste
1 slice monterey jack cheese

Steps:

  • Spread 1 slice of bread with mustard.
  • Spread the other slice of bread with ketchup.
  • Brown meat loaf slice on both sides in 1 teaspoon of olive oil in skillet or on griddle until heated through.
  • Put browned meatloaf slice on the mustard-smeared bread.
  • Put a slice of cheese on top of the meat loaf.
  • Cover with the ketchup-smeared bread.
  • Heat remaining 1 teaspoon olive oil in skillet or on griddle.
  • Grill the sandwich over medium heat on both sides, until golden.

2 slices whole grain bread

  • Place meat loaf slice between 2 slices of cheese and 2 slices of bread.

2 eggs, beaten
2/3 cup seasoned dry bread crumb
1 large onion, finely chopped (1 cup)
2 medium tomatoes, seeded and chopped (1-1/3 cups)
1/4 cup raisins (optional)
1/2 teaspoon salt
1/2 teaspoon ground cloves
1/4 teaspoon ground chili powder
1/8 teaspoon ground black pepper
1 1/2 lbs lean ground beef (or 12 ounces lean ground beef and 12 ounces ground lean pork)
1/3 cup ketchup
3 tablespoons packed brown sugar (optional)
1/3 cup mayonnaise or 1/3 cup salad dressing
2 teaspoons prepared horseradish
12 slices good quality bread

Steps:

  • Preheat oven to 350°F.
  • In medium bowl combine eggs, bread crumbs, onion, tomatoes, raisins, salt, cloves, and pepper.
  • Add meat; mix well.
  • Lightly pat meat mixture into 9x5x3-inch loaf pan.
  • Bake 1 to 1-1/4 hours or until internal temperature registers 160°F.
  • Spoon off fat.
  • In bowl combine ketchup and brown sugar; spread over meat.
  • Bake 5 minutes more.
  • Let stand 15 minutes.
  • Using two spatulas, lift meatloaf from pan to cutting board.
  • Cut into 12 slices.
  • Stir together mayonnaise and horseradish. Spread mayonnaise mixture on bread.
  • Top bread with 2 meatloaf slices.

I developed this recipe to use some leftover meatloaf because my son does not appreciate the cold meatloaf sandwich with all the fixings that the rest of the family enjoys. There always has to be one person who doesn't conform; it is a little known, unwritten rule. But as long as every family has one, I don't feel bad. This one's for you Adam, love you! By the way, he thought this sandwich was great! (Amounts are estimated, just wing it as you go and use what you have. Zaar won't accept leftover meatloaf so had to call it meatloaf mixture.)

1/2 lb meatloaf mix (cooked leftovers)
1 1/2 cups spaghetti sauce
2 teaspoons olive oil
1/2 green pepper, sliced thinly
1/2 onion, sliced thinly
1/2-1 teaspoon italian seasoning
4 submarine rolls (12-inch)
1 -2 tablespoon olive oil
garlic salt
celery salt
1 1/2 cups mozzarella cheese, shredded

Steps:

  • Preheat oven to 300 degrees Fahrenheit.
  • Slice leftover (cold) meatloaf into 1/4" slices and layer in glass baking dish beginning with sauce, then meat, topping each layer with spaghetti sauce.
  • Cover with foil and heat for 25 minutes or until heated through.
  • Meanwhile, in a non-stick skillet, heat the 2 teaspoons olive oil; add the green peppers and onions, saute until lightly browned; add Italian seasoning and set aside to keep warm.
  • Slice submarine rolls and open out flat; using a pastry brush, lightly oil both sides of the open roll; sprinkle with garlic salt and celery salt to taste.
  • Place in preheated broiler and lightly toast the rolls.
  • Layer the meatloaf, sauce, peppers, onions and mozzarella cheese onto each roll and place back under broiler to melt the cheese.
