Steps:
- Prepare but do not bake pie shell.
- Combine milk, sugar replacement, butter, eggs, cornstarch and salt in heavy saucepan.
- Cook and stir over medium-low heat til well blended and slightly thickened.
- Remove from heat.
- Stir in pecans and vanilla, and allow filling to rest 10 minutes.
- Sprinkle raisins on bottom of unbaked pie shell and pour pecan mixture on top.
- Bake 375F 45-50 mins or til knife inserted in centre comes out clean.

Steps:
- To make Crust:.
- Soften the margarine.
- Blend cookie crumbs, pecans, and margarine in a bowl to make the crust.
- Press the pie crust into a 9 inch pie plate.
- Chill for 30 minutes.
- To make Filling:.
- In a saucepan, heat all filling ingredients, except margarine, to a boil over medium heat, whisking until smooth (about 10 minutes). Reduce heat and simmer for 1 minute. Scrape into a bowl.
- Whisk in remaining 2 tablespoons of margarine until smooth. Cover with plastic wrap and cool to room temperature. Slice the bananas.
- In prepared pie plate, arrange sliced bananas in 1 layer. Whisk cooled filling and pour evenly over bananas.
- To Make Topping:.
- Mix remaining cookie crumbs and pecans together and sprinkle over the filling. Chill the Banana Pecan Cream Pie for 1 hour before serving.

- Make fruit sweetener: mix together 1/2 cup frozen apple juice concentrate (thawed) PLUS 1/2 cup granulated fructose or diabetic sugar.).
- Prepare pastry and place in 9-inch pie pan. In large bowl, combine fruit sweetener, gelatin and apple sauce. Beat with electric mixer.
- In small bowl, blend water and cornstarch until smooth. Add cornstarch to fruit sweetener mixture and blend. Beat in eggs, one at a time. Stir in vanilla and coffee. Pour mixture into pie shell. Decorate top with pecan halves. Bake 30-40 minutes (until custard is set) at 375°F Cool slightly before cutting.

it is in the oven as i type this...ok i admit i cheated.... i used rolled pie crust from the dairy but the rest is mine...... with splenda and no sugar stuff...... wish i knew how to figure jus how many carbs this pie had...if anyone does please share and ty

Steps:
- 1. start with the apples as you peal,core,slice them right into bowl of spiced water
- 2. next mix flour,splenda,salt,cinnomon in lg zip bag... drain apples add to flour mix tose to coat apples well set aside
- 3. next unroll one pie crust place it evenly in pie plate nuke carmel sauce so it pours easily put about 1/2 on bottle pir crust... next layers pecans
- 4. next add apples... next take rest of carmell topping and drizzle over top of pie
- 5. next put top crust on.. pinch all the way round pie to seal take sharp knifw and poke several holes in top crust
- 6. bake in 350 oven for 45-65 min check at 45 and shield with foil if getting to brown
- 7. refridgerate overnight... to sevve slice and add cool whip or ice cream to this..... yummo!!!!

- In saucepan, melt butter, add pecans and bring to a boil. Cool.
- Add Splenda. Pour into crust.
- Combine pudding mix and milk. When thickened, add whipped topping. Spoon over pecan layer.
- Chill at least 2 hours or overnight.

ANGELINE'S PECAN PIE (DIABETIC VERSION)
This recipe came from a friend, Angeline, which is a diabetic. She says it is not real sweet, therefore she can eat a small slice. My husband and I both love this pie even though we aren't diabetic. It's sweet enough but not too sweet. Yummers!

- 1. Preheat oven to 350. Combine well the eggs, sugar, milk, vanilla, flour, syrup and salt. Fold in pecans. Note: *1/2 tsp of flour works just as well.
- 2. Pour into crust and bake until set and brown (approximately 30 minutes).
