The results, to our surprise, were amazingly good! Southern Living Magazine, June 2006. It is a no cook recipe but there is a chill time of 1 hr. Tastes wonderful!

1 1/2 ounces fat-free sugar-free instant chocolate pudding mix
2 cups 1% low-fat milk
1/2 cup light sour cream
8 ounces frozen fat-free whipped topping, thawed and divided
3/4 cup chocolate graham cracker crumbs (4 cracker sheets)
1 tablespoon freshly grated chocolate

Steps:

  • Whisk together first 3 ingredients in a bowl until blended and smooth.
  • Fold in 1 1/2 cups whipped topping.
  • Spoon 1 tablespoons crumbs into each of 6 (4-oz.) glasses, and top with 1/3 cup pudding mixture.
  • Repeat layers with remaining crumbs and pudding mixture.
  • Top each parfait evenly with remaining whipped topping and grated chocolate.
  • Cover and chill at least 1 hour.

I" do not make many desserts that are diabetic friendly but I am going to give this recipe for all of you. May you enjoy.!!!!!!!!!!!

1 pkg sugar free instant chocolate pudding
1 c reduced calorie whipped topping, thawed
1 large banana, thinly sliced
1 Tbsp sliced almonds

Steps:

  • 1. Prepare pudding mix according to package directions, using skim milk. To assemble , divide half of the pudding between 6 parfait glasses or stemed goblets. Using half of the whipped topping, make a thin layer of topping in each glass. Top with a few banana slices. Repeat layers, using remaining pudding, whipped topping and bananas. Sprinkle almonds over each serving. Cover with plastic wrap and refrigerate until ready to use.
  • 2. Per serving; 76 cals, 1g of protein, 2g fat, 14g carbs Diabetic exchange; 1 carbohydrate [1/2 starch, 1/2 fruit]

Make-Ahead Tip: Prepare as directed through step 2. Cover and chill parfaits for up to 24 hours. Serve as directed in step 3. This is 1 of Brenda's diabetic recipes.

1 package(s) 4-serving-size of fat-free, sugar-free, reduced calorie chocolate or chocolate fudge instant pudding mix
2 cup(s) fat-free milk
1/2 cup(s) frozen light whipped dessert topping, thawed
1/4 cup(s) unsalted peanuts, coarsely chopped
1/4 cup(s) marshmallows, mini
OPTIONAL INGREDIENTS
- chocolate curls

Steps:

  • Prepare pudding mix according to package directions using the fat-free milk. Remove 3/4 cup of the pudding and place in a small bowl; fold in whipped topping until combined.
  • Divide remaining plain chocolate pudding amoung four 6-ounce glasses or dessert dishes. Top with dessert topping mixture. Let stand for 5 to 10 minutes or until set.
  • Sprinkle with peanuts and marshmallows just before serving. If desired, garnish with chocolate curls.
