2 large soft avocados (approx 1-2 pounds of avocado)
1/2 cup hot coffee
2 tablespoons raw cacao powder (get the pure, fancy stuff)
1 dash agave nectar
stevia (to taste)

Steps:

  • Peel and pit the avocados. Dump avocados, coffee, cacao powder and agave nectar into a bowl and mix till smooth (use a hand mixer?). Add the stevia slowly to taste. Put in pretty serving bowls and chill. Really, it's that simple.

3 tablespoons cold water
1/4 cup unsweetened cocoa powder
1 teaspoon vanilla
1 cup whipping cream
14 teaspoons artificial sweetener

Steps:

  • In small saucepan, soften gelatin in water.
  • Stir over low heat til gelatin dissolves completely.
  • In mixing bowl, beat cocoa, vanilla and cream til stiff peaks form.
  • Add artificial sweetener and liquid gelatin and beat til well blended.
  • chill thoroughly before serving.

6 ounces chocolate sandwich cookies
3 tablespoons butter
1 packages chocolate pudding
1 cups milk
1 pints heavy whipping cream
1 units whipped topping
1 units cocoa powder

Steps:

  • Crush sandwich cookies. Mix with melted butter to make moist crumb mixture. Press cookie crumb mixture into bottom of glass pan. Make edges of crumb mixture slope up the sides of the pan slightly.
  • Thoroughly combine milk and pudding mix. Do not refrigerate. Whip the heavy cream until stiff peaks form. Slowly mix the pudding into the heavy whipping cream. Mix thoroughly.
  • Spread pudding mixture over crust in 8" x 8" glass pan. Chill until firm. Spread whipped topping over pudding mixture. Dust lightly with unsweetened cocoa powder immediately before serving, if desired.
