I make these stuffed eggs once a month for a fellowship meal at church-and I've yet to bring one back home! Different from typical versions, these hard-cooked eggs get a subtle crunch from chopped veggies, and deviled ham adds zing.

- In 4-quart saucepan or Dutch oven, place eggs in single layer; add enough cold water to cover eggs by 1 inch. Cover and heat to boiling; turn off heat. If necessary, remove pan from heat to prevent further boiling. Cover and let stand 20 minutes. Immediately run cold water over eggs or place them in ice water until completely cooled.

- With a slotted spoon, gently drop eggs into a medium saucepan of boiling water; reduce heat to medium-high and cook 10 minutes. Using the spoon, transfer eggs to an ice bath until cool. Return the saucepan to a boil, season the water with 1 tablespoon salt, and blanch peas until bright green and tender, about 2 minutes. Drain and rinse under cold water until cool.
- Peel and halve eggs lengthwise; remove yolks and transfer to the bowl of a food processor with peas, mayonnaise, mustard, 1 tablespoon water and a pinch of salt; puree until smooth. Spoon mixture into whites. Garnish with pancetta, pea shoots, and black pepper.

- In a medium saucepan place eggs in a single layer. Adding enough water to cover eggs by one inch bring water to a boil. As soon as water is boiling remove from heat, cover saucepan, and let stand 15 minutes. Drain, rinse eggs with cold water and place in a bowl of ice water. Let eggs stand for 10 minutes than drain.
- Remove eggs from water and peel. Cut lengthwise in half and remove the yolks placing them in a medium bowl. Mash yolks until smooth and add mayonnaise and mustard, blend well. - 1. Split the eggs in half like you would normally for deviled eggs. Take out the yolks and mash them up in a bowl and set aside.
- 2. Stir in the remaining ingredients and then fill the egg halfs.
- 3. You can sprinkle with parsley or paprika then serve.
FRIED HAM DEVILED EGGS
Steps:
- Place the eggs in a large wide pot and cover with cold water by 1 inch. Bring to a boil, then reduce the heat to medium low and simmer 10 minutes. Drain and run under cold water until cool.
- Meanwhile, melt the butter in a large skillet over medium-high heat. Working in batches, add the ham and fry until browned on both sides, 3 to 4 minutes. Remove to a paper towel¿lined plate, then finely chop.
- Peel and halve the eggs. Carefully scoop out the yolks into a medium bowl and place the whites on a plate. Add the mayonnaise, relish and Sriracha to the bowl with the yolks; season with salt and pepper and mix and mash until smooth (or use a food processor to speed up this process). Stir in about three-quarters of the fried ham.
- Transfer the yolk mixture to a piping bag and pipe into the egg whites. Top with the roasted red peppers and the remaining fried ham. Garnish with microgreens.
SARASOTA'S HEALTHIER DEVILED EGGS W/HAM AND CAPERS
Yes, this is deviled eggs ... and yes, it is a bit healthier. Less mayo, more veggies and flavor, and a crunchy parmesan crust make these really unique. A quality baked ham, celery, capers, and scallions make the filling full of flavor and topped with fresh bread crumbs and parmesan make these eggs really different. Even though the bread crumb and parmesan crust is browned, these can easily still be served at room temperature or even chilled. And there is a bit more chopping and a bit more work, but so worth it. These are always a great appetizer and there is never one left. Now, you probably will have some of the filling or the yolks left over, but don't worry ... spread on a toasted bagettes or as a dip with crackers. Or just save 4 of the yolks to add to a salad with dinner.

- Eggs -- Now, there are many recipes to make hard boiled eggs. A few tricks. Don't use "TOO" fresh eggs. I buy mine and over the next few days let them set in the fridge. Rotate, I know this sounds funny, but stand the carton on end, flip it over and flip again. Do this every day. It makes the yolks center perfectly. NOT kidding, it is a chefs trick. Not necessary, but it really works. So, add the eggs (room temp, NOT cold) to a pot of cold water, don't over crowd the eggs, bring to a boil, cook 1 minute, remove and cover. Let set 11-12 minutes for 8 eggs. Drain and cool with cold water immediately. Once cool to the touch, begin to peel.
- Cut in half and scoop out 4 of the yolks and keep the remaining for later. Add the 4 yolks to a small bowl.
- NOTE: You can keep the other 4 yolks for a garnish on a week night salad or; you can double the other ingredients (except the bread crumbs) and make double the amount of filling. This makes a great dip for crackers or spread on a toasted baguette as a wonderful appetizer. You can also add the yolks to tuna salad as well. So don't toss them out.
- Filling -- To the bowl with the eggs, add the ham, scallions, celery, capers, mayo, mustard, parsley, thyme, salt and pepper. But remember, go easy on the salt; the ham and capers are already pretty salty. Mix well to combine. If you like more mayo, feel free to add some. I like this because it isn't as "mayo" as some, but that is up to you.
- Bread Crumbs -- I process mine in my mini food processor to get nice size crumbs. Now if you don't have a food processor, just chop finely. Add to a DRY pan on medium high heat. As the crumbs toast they will get lightly golden brown and break up. Remove and set to the side to cool. Add in the parmesan cheese and mix well.
- Eggs -- Stuff the eggs with the filling and top with a spoon of the toasted bread crumb and parmesan mixture. Spray with non stick spray and place under the broiler (second shelf down) for just 1 minute until the cheese and bread crumbs are golden brown. Remove and let cool. Keep an eye on them, they don't take long.
- Serve -- ENJOY! These can be warm on top (right out of the broiler), room temp or even chilled. A nice twist on the classic deviled egg. And don't forget the leftover eggs. Either make it into a spread or use it on your salad one night.

- PLACE eggs in a large saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.

This is a twist on a recipe from a 1961 cookbook and I tailored it to just the deviled eggs, and these are tasty! I will be using Andy's Devilish Ham Spread recipe (on this site) for this here in Thailand, as Andy's is superior to the canned variety.

- Cut eggs in half lengthwise, place whites on a plate, and place the yolks in a bowl.
- To the yolks, add the mayo, onion, mustard, Worcestershire sauce. Mix together. Taste and season with salt and pepper as desired. Mix in ½ of the canned deviled ham. (I am going to use Andy's Devilish Ham Spread, so will add 2 oz / 56 g)
- From the ham still in the can, spoon a little into the bottom of each egg white, using about ½ of the ham that is remaining in the can, (about 1 oz / 28 g if using your own deviled ham)
- Spoon the yolk mixture into the whites using all of the mixture. Make a small depression on the top of the filling in each egg with the tip of a spoon.
- Now use the remaining ham in the can and place a small amount on top of each egg. (1 oz / 28 g is using your own deviled ham.) Sprinkle with paprika for garnish. Cover and place in the fridge for about 1-2 hours to chill before serving.
- Serve and enjoy.
