A brilliant steak sauce that really brings out the flavor of any type of grilled steak. It's best with eye fillet or Scotch steaks. Raspberry jam is the wildly inventive twist that really makes this sauce unique.

2 tablespoons raspberry jam
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
2 tablespoons tomato sauce
2 tablespoons malt vinegar
5 drops hot pepper sauce
salt and freshly ground black pepper to taste

Steps:

  • In a saucepan over high heat, blend raspberry jam, brown sugar, Worcestershire sauce, tomato sauce, malt vinegar, hot pepper sauce, salt, and pepper. Bring to a boil over high heat, reduce heat to low, and simmer 10 minutes, or until thickened.

Fra Diavolo...the "sauce of the devil". I find spicey sauces work really well with shellfish, this sauce is sure put a little fire in your bite and maybe even a little fire elsewhere!! Enjoy!

Number Of Ingredients 12

4 -5 tablespoons olive oil, divided
8 garlic cloves, minced
2 shallots, minced
8 ounces tomatoes, diced (can use canned or fresh)
8 ounces tomato sauce
2 teaspoons crushed red pepper flakes (or to taste)
1/2 teaspoon salt
1 cup white wine (something Dry)
1 1/2 lbs scallops
2 tablespoons fresh parsley (chopped, to taste)
2 tablespoons fresh basil (chopped, to taste)
salt & pepper, to taste

Steps:

  • In a large saucepan, heat 2 tablespoons of the olive oil with 7 cloves garlic and shallots over medium heat.
  • DO NOT BURN THE GARLIC -- If you do, Start Again.
  • When the garlic starts to sizzle, pour in the tomatoes and tomato sauce.
  • Season with salt and red pepper.
  • Bring to a boil.
  • Lower the heat, add the white wine and simmer for 30 minutes, stirring occasionally.
  • Add in the Basil at the 15 minute mark!
  • Meanwhile -- have a glass of wine and continune on --
  • In a large skillet, heat the remaining 2 tablespoons of olive oil over high heat.
  • Add the scallops, and 1 clove of garlic. Season with Salt & pepper.
  • Cook for about 4 minutes. 2 minutes per side should be good. You want the Scallop to still have a spring to it when you press on it. Try not to over cook the suckers -- It will ruin your meal. A nice pearly white and a spring to it is an Excellently Cook Scallop
  • Add the perfectly cooked Scallops to the tomato mixture, and stir in the parsley.
  • Cook for 3 to 4 minutes, or until the sauce just begins to bubble.
  • You can serve this sauce over pasta, rice or just eat it plain it's just that good.

1 tablespoon curry
1 tablespoon mustard (powdered, if you have it, wet mustard, you might need more)
1 tablespoon paprika
1 (16 ounce) bottle mayonnaise
1/4 cup pickle juice
1/2 cup finely chopped dill pickle (NOT sweet relish, yeck!)
1/2 teaspoon pepper
1/2 teaspoon celery seed
1 tablespoon chives

  • Mix everything into a bowl and put in fridge overnight.
  • For Chicken Salad:.
  • Add 1 package of Purdue's Chicken "Short Cuts" chicken chunks into a bowl with 2 heaping tablespoons of this magic sauce and BINGO! Chicken Salad is done!
  • For Macaroni Salad:.
  • Drain elbow pasta, run it under cold water and make sure ALL the water has drained. Put in a bowl and add 2 heaping tablespoons of this magic sauce and BINGO! You've got pasta salad!
  • For Potato Salad:.
  • Make your potatos as usual, but only use this sauce and BINGO - potato salad is done!
  • For Devil Eggs:.
  • Slice 12 eggs in half. Put the yolks into a plastic bag. Add 2 heaping tablespoons of this Magic sauce and moosh everything in the bag together until the yolk and sauce are well blended. Cut off a corner of the bag, and use it as a pastry squeezer. gently squeeze contents of bag into the hallow eggs white. Sprinkle with paprika and BINGO! You've got Devil Egg.
  • Egg Salad:.
  • I forgot - you can make egg salad with this too: Just chop up 12 hard boiled eggs and mix with 2 heaping tablespoons of this and BINGO! You've got Egg Salad!

5 -6 lbs beef ribs
1/3 cup kosher salt
1/3 cup brown sugar
2 tablespoons course ground black pepper
1 tablespoon grated lemon zest
2 teaspoons Tabasco sauce
1 cup beef broth
1/2 cup Worcestershire sauce
1/3 cup cider vinegar
1/3 cup vegetable oil
1 teaspoon dry mustard

  • mix first 6 marinde ingredients.remove tough skin from back of ribs.rub marinade.
  • over both sides of ribs.cover and marinate over night.

  • bring ribs to room temp.place in smoker and cook @ 225f for about 45 min per lb of meat.mop with sauce each time you add wood.

You know those recipes printed on index cards you sometimes see at the grocery? Well, this one is so old it came from a fishmarket. (Remember when grocery stores didn't even have seafood departments, and buying a pound of shrimp was a major project??) This sauce is so quick and easy and versatile. It can be doubled, tripled or cut in half with no problem. If you don't like things quite as zippy, use a little more ketchup and a little less chili sauce instead of the suggested 50/50 ratio. If you adore heat, keep adding horseradish until the beads of sweat pop out. :) If you like a squeeze of fresh lemon juice in your sauce, go for it. It's a great base that you can fiddle with until you think it's just perfect!
