Steps:
- Cream brown sugar, margarine and beaten egg. Add vanilla, sift together flour and soda and add alternately with buttermilk and blend well. Fold in rhubarb. Pour into greased and floured 9x13 cake pan. Sprinkle cinnamon topping mixture over top of cake batter. Bake in 350 degree oven about 45 minutes.

- 1. Sift flour, baking soda,cinnamon, and salt, set aside.
- 2. Cream butter, sugar, egg and vanilla, add the dry ingredience alternately with the sour milk mixing well.
- 3. Add rhubarb mixture to batter, pour into a greased 13x9 pan bake in a 350 oven for 50-55 minutes. cool
- 4. Cream together cream cheese and butter, add brown sugar, powdered sugar and vanilla mix well frost cake.
RHUBARB DUMPCAKE
This is a creamy pudding like dessert that is good with whipping cream, a little heavy cream or icecream. I made some changes to my grandma's Rhubarb Torte recipe and didn't really think torte fit the recipe so changed it to a dumpcake.

- In a bowl combine rhubarb, sugar, water, and vanilla.
- Sprinkle jello over this
- Put mixture in the bottom of a 9x13 inch pan.
- Sprinkle cake Mix on top of fruit mixture.
- Scatter butter pieces over cake mix.
- Sprinkle with mixture of sugar, cinnamon, and nutmeg.
- Bake at 350 degrees for 45-60 minutes.
RHUBARB CAKE
I got this great recipe from my mother-in-law who's been making it for years! It doesn't have a strong rhubarb taste. It's sweet and moist. I hope you enjoy making it as much as I do. I always try to use fresh rhubarb, never frozen and then thawed because it doesn't work well.

- 1. First, mix milk with vinegar and set aside.
- 2. Next, blend brown sugar, butter and egg.
- 3. Add and stir baking soda into the milk/vinegar mixture.
- 4. Pour milk mixture into the brown sugar, butter and egg mix and blend.
- 5. Next, add flour and vanilla and mix well.
- 6. Then add the Rhubarb chunks.
- 7. Pour batter into well-greased 9x13 pan.

GRANNY'S RHUBARB CAKE
Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Spread rhubarb out into the bottom of a cake pan; sprinkle 1/4 cup white sugar over the top.
- Beat brown sugar, sour cream, butter, egg, and vanilla extract together in a bowl with an electric mixer until smooth and creamy. Add flour and baking soda; mix until batter is just combined. Pour batter over rhubarb; top with 1 tablespoon white sugar and nutmeg.
- Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 1 hour.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking dish.
- In a large bowl, stir together 1 1/4 cups sugar, baking soda, salt and 2 cups flour. Stir in the eggs and sour cream until smooth, then fold in the rhubarb. Pour into the prepared dish and spread evenly. In a smaller bowl, stir together the remaining 1 cup sugar and butter until smooth. Stir in 1/4 cup flour until the mixture is crumbly.
