1/4 c chopped green pepper
2 Tbsp chopped onion
1/2 c liquid fat-free egg subsitute
1 oz fat free ham, about 2 slices, chopped
2 Tbsp fat free shredded cheddar cheese

Steps:

  • 1. Spray a large microwave safe coffee mug with non-stick cooking spray.
  • 2. Add vegetables and microwave 1 to 2 minutes until softened.
  • 3. Blot excess liquid from vegetables, return to cup. Add egg substitute, stir and microwave for 1 minute.
  • 4. Add ham and cheese and lightly stir. Microwave an additional 45 to 60 seconds until scramble is just set. Let cool and enjoy!

3 large eggs
1 tablespoon butter
¼ cup diced smoked ham
2 tablespoons diced onion
2 tablespoons diced green bell pepper
salt and freshly ground black pepper to taste
⅓ cup shredded Cheddar cheese
1 pinch cayenne pepper

Steps:

  • Beat eggs until just combined; do not over-beat.
  • Melt butter in a skillet over high heat. Add ham, onion, and bell pepper. Sprinkle in a nice pinch of salt and a touch of pepper. Cook and stir over medium-high heat until onions start to soften and ham begins to caramelize, about 5 minutes.
  • Reduce heat to medium-low and pour in the eggs. Mix briefly with a spatula while shaking the pan to ensure ingredients are evenly distributed. Quickly run the spatula along the edges of the omelet.
  • Sprinkle Cheddar cheese and cayenne pepper over the omelet. Cook, shaking the pan occasionally, until the top is still wet but not runny, about 5 minutes. Fold omelet in half with your spatula and transfer to a plate.

Steps:

  • Spray a large microwave-safe mug with nonstick spray. Add green pepper and onion and microwave until softened, 1 to 2 minutes.
  • Blot any excess liquid from the vegetables. Add egg substitute and microwave for 1 minute.

2 large eggs
1 tablespoon milk
1 tablespoon grated cheddar cheese
1 tablespoon finely chopped red bell pepper
1 teaspoon finely chopped chives or green onion greens

Pinch of black pepper

Steps:

  • Spray the inside of a large, microwave-safe mug lightly with cooking oil spray: or coat the inside of the mug with olive oil.
  • Crack 2 eggs into the mug, add 1 tablespoon of milk, and beat with a fork.
  • Add grated cheese and other extras: such as chopped red bell pepper or chives. Add a sprinkle of salt and pepper. Stir with a fork until well mixed.
  • Microwave and stir in 20 to 30 second increments: Microwave for 30 second on high. Remove from microwave and stir with a fork. Return to the microwave and cook for another 20 to 30 seconds. (Whether it's 20 or 30 depends on the power of your microwave, you may need to experiment to see what times work best for your situtation.) 1 tsp salted butter
1 tsp shallot
2 eggs
1 tbsp parsley, finely chopped
1 tbsp sweet red pointed pepper, finely diced
1 tbsp chives, chopped
1 tbsp mature cheddar, grated

Steps:

  • Put the butter and chopped shallot into a microwavable mug. Cook for 30 seconds, remove from the microwave and stir. Let the mug cool down a little, then swish the butter and shallot around the mug to coat the sides lightly.
  • In a bowl or jug, beat the eggs with a fork, then add the parsley, peppers, chives, cheese and a small pinch each of salt and black pepper.
  • Pour the egg mixture into the mug and return it to the microwave, cook for 20 seconds. Next, open the microwave and stir the egg, repeat the cooking for 20 seconds and stir again. Finally, cook for another 20 seconds, during which time the egg will start to set.
  • Remove the mug from the microwave and let it stand for 1 min. If the omelette is not set enough for you, put it back in on 50% power for no more than 20 seconds.
